Tofu Chocolate Cake
I'm sorry, I just did not like this cake. The inside was too soft and runny, even after it sat overnight in the refrigerator. The taste was not palatable either (at least to us).

Spinach and Artichoke Au Gratin
Very yummy - Did great with VEGAN substitutes (Tofutti "cream cheese," soy milk, Earth Balance margarine and Rice "parmesan"). As others, I did not use marinated artichokes (didn't have). Use 1 can water packed (lightly chopped). Added cajun spice & garlic for extra seasoning.

Pina Colada III
Easy, easy! I had left over coconut milk from another recipe, so I used that - I didn't measure but it had to be more then a cup. Others suggested using pineapple tidbit, I didn't have that - but pineapple chunks, so I tossed the whole can in. I also used splenda, a little less than called for. We enjoyed it. This could be a make ahead recipe. Blend without the ice and store in the fridge. When ready to serve blend desired amount with ice.
