About this Cook
I am a busy mommy of 3 amazing kids! Madelynn is 11, Samuel is 10 and Meg-Ann is 7! WHEW! I am a stay-at-homeschooling mom (thanks to my fantastically supportive loving husband!)and I love doing anything that is family oriented (except laundry!)
My favorite things to cook
I love cooking really rich and flavorful foods. I enjoy trying out new things and combining different elements from recipes to come up with my own version. Example - I have mastered the perfect banana bread recipe (for my family) and everyone loves it! Guess I should post it, huh?
My favorite family cooking traditions
I love cooking those recipes my Mom made when I was a kid. Holiday traditions are important to me and I am really enjoying establishing new traditions with my kids!
My cooking triumphs
I have learned to taste the specific flavors that make something unappealing and eliminate or replace them to suit our tastes. Example - corriander - not fond of, but cilantro(since they are so closely related) makes a great fresh, often less pungent substitution in most of our recipes. Things like that make cooking and trying out new recipes fun!
My cooking tragedies
I am a horrible yeast bread baker. Quick breads - I have the knack, but give me a recipe containing yeast and some how a brick is all that comes out of the oven. Someday...someday...

Ice Cream Sandwich Desserts
I have been making this recipe for years. It is so fun to see the reactions of those who try it and are told it is made with ice cream sandwiches. I rate and review recipes according to the EXACT recipe. This one is 5 stars! I have made a few variations that are fantastic as well. I have used caramel in place of the hot fudge. For another occasion, I used strawberry ice cream topping in place of the hot fudge, sliced bananas and put them on top of the top layer of ice cream sandwiches - just under the whipped cream. When I served it, I drizzled it with chocolate sauce and VOILA! Banana split dessert! You can also find vanilla cookie ice cream sandwiches that are great for layering with peanut butter and bananas... the possibilities are endless! One thing is certain - no one had EVER guessed that this begins with ice cream sandwiches. Thanks for the great kick start to a million possibilities!

Taco Seasoning I
The balance here is fantastic. I recommend omitting the red pepper flakes if it is too spicy since they are easy for each individual to use at the table to spice things up if needed. I like my taco meat sort of saucy, so for each recipe (I always make a giant batch - so multiply accordingly!) I add 1 tsp of cornstarch to the mixture. This thickens whatever liquid you use when simmering and doesn't take away from the fabulous flavor!

Tina's Best BBQ Lime Chicken
I have been making this recipe for years - yet have failed to mention how amazing it was to the allrecipes world! Thank you for sharing a perfect marinade! Instead of whole chicken pieces, I use boneless skinless thighs or breast tenders and it is perfect every time! Tina - this is the BEST!
