Ultimate Spiced Oatmeal Cookies

Reviewed: Jan. 28, 2012
These are officially my favorite cookies! LOVE this recipe! I never have shortening in the house, so I just use all butter. Bake them on parchment paper for 9 - 10 minutes. They look undone in the middle when I take them out of the oven, but they always end up perfectly crispy on the edges and chewy in the middle. I use Craisins instead of raisins, and also add chocolate chips, white chocolate chips, walnuts, and chopped candied ginger pieces. Ultimate YUMness!!! Thanks, Beth!

Good, but a little bland. Would be better with some spinach and extra seasoning.

Jamaican Beef Patties

Reviewed: Feb. 22, 2007
I've made Jamaican beef patties a couple of times and like this recipe the best so far. I used butter instead of margerine and I didn't have any bread crumbs, so I substituted crushed saltine crackers and used just a tad less salt in the recipe. I didn't experience the dryness some reviewers mentioned. They were quite moist and yummy. Maybe because of the crackers instead of bread? I also added about an 1/8 tsp. of cayenne, because we like a little spice. Perfect!
