Easy 'Charro' Beans
I almost followed the recipe! Hard for a chef to follow one completely, right? Instead of chipotle peppers I used seeded jalapeno. I used fresh beans instead of canned and boiled a ham on a bone I had left over from Christmas. I added about a teaspoon of cumin and two teaspoons of powder. I must say it was wonderful. I then cooked it in a 250 degree oven along with the pork shoulder for about 4 to 5 hours until fork tender. This is going to be wonderful as a burrito from the left overs for this evening.

Sweet Potato Pie VII
Very good recipe for left over sweet potatoes or yams. I used yams and added ground cloves, fresh ground nutmeg, and a little allspice. The buttermilk gave it a nice tartness and I used less butter than stated for no other reason than to cut the fat in it. I too added Splenda vs. sugar.

Janet's Rich Banana Bread
Great recipe, however, I couldn't resist changing it up a bit. Instead of white sugar I threw in Splenda and added some spices. Banana bread to me needs spices. Also, just to slim it down just a bit I added Fage Greek Yogurt. So I can't wait for it to come out the oven. Already smells divine!
