New Mexico Green Chile Breakfast Burritos

EDIT --- I'm putting this at the top, because it's pretty important.. When simmering the chile, make sure to not let the peppers simmer for too long, they can begin to lose their flavor as they're already roasted/cooked beforehand. Also, if you can find it - use the FROZEN hatch green chile. Okay. So I'm kind of nervous to say this, as there may be several New Mexicans lurking about... BUT - I do hate green chile. Yes, I am a resident of New Mexico. Born and raised. This was the first time I've EVER liked green chile. I used mild because I don't like my chile to overwhelm the taste of the dish, but I still want a little "kick." I could walk across the street and pay $5 for this burrito at a taco truck, but it tasted 200x better while relaxing in my pj's and chowing down on this baby. THANK YOU "applejedi1," for this outstanding recipe. Now, if only I could eat one everyday without increasing my chances of that heart attack ;)

Herbed Cottage Cheese

Mmmmm!!! Sooo good. I've been making this for several months now and have no clue why I haven't left a review. I have two tubs sitting in my fridge right now. My boyfriend LOVES it and he HATES cottage cheese. This is a great treat if you're health conscious or dieting. Also, BE SURE TO LET THIS SIT IN THE FRIDGE OVERNIGHT BEFORE SERVING. The flavor isn't half as intense as it will be the following day, and when I don't have chives, I just sub green onions. Just as good, the onions may be "spicier," but delish!

Sweet Vanilla Cupcakes

Definitely double the vanilla!! These were good! SOOO simple, everybody loved them. I think they may have been a little dry, so I may make adjustments next time. But for simplicity and taste? This deserves 5 stars. I loved how they kind of "carmelized" on top. After baking, I filled these with a mixture of french vanilla pudding, whipped cream and a splash of milk. I then topped them with white chocolate buttercream and a chocolate dipped strawberry for Valentines and brought them to work. Yummy! Thanks, Marianne!

Luscious Slush Punch

Mmmm! I took some reviewers suggestions and cut the sugar.. I honestly wouldn't have minded the extra sugar, though. I did use sugar-free jello and I only found .3 ounce packages, so I wonder if the 3 ounce is a mistake?? Hm. It came out great either way. I didn't miss the extra sugar, but it was yummy with only 1 cup. If you do end up with a solid block of punch, you can easily scrape some of the ice if you just add a little bit of Sprite at a time. Thank you, Valerie! This is a great recipe and the whole family loved it :)

Clone of a Cinnabon

Yummy :) The cinnamon-sugar mixture did end up running a little, I tried the whole turning over thing and that did help a tiny bit, but then all of the brown sugar glazed over the top of the buns and kind of made them look messy. I easily scooped up the excess mixture with a spoons and placed it on top of the rolls making sure to get most of it on the inside. Everybody loved these and said they were better than the ones at Cinnabon. Makes plenty of frosting, so don't be greedy ;) Thank you, Marsha for this recipe. These are awesome.

Rocky Road Ice Cream

I've made this multiple times and it's delicious every single time! Our family loves this recipe and if it didn't disappear so quickly, I'd make it more often.. Sadly, I just can't keep up with how fast this is eaten. I don't change a thing! Although, if I can't find light cream.. I will sometimes sub half and half. It does it's job just fine :)

Garlic Prime Rib

I was SO nervous to make this because it's NOT cheap and I've never cooked a roast like this before. But this was sooo easy, it would be difficult to not get it right. This came out very moist and tender, be sure to get some of that delicious garlicky crust on your steak. I was going to take the roast out when the meat thermometer said 130 degrees, but I checked it too late and it was already at 145.. But whaddya know? It was perfect!! Pinkish on the inside and so tender. Oh, Chef Mike.. Thank you. You helped me impress my boyfriends family and make my first big feast for Easter Dinner.

Tomato and Mozzarella Bites

My boyfriend made these for a little BBQ we attended. Everybody liked them. I think they should marinate in the oil just a bit, or possibly use the tiniest tomatoes as possible so that they don't steal the spotlight. As another user suggested, I used TJ's marinated mozzarella balls, then poured the leftover oil over each skewer bite. Our friends said they tasted like, "fresh pizza!" Never had caprese, I'll assume :)

Cheesy Creamed Spinach

Mmmmm :) I wish I made more of this! It was SOOOO good. I didn't exactly measure my parmesan, and just threw in a 6 oz package of provolone (8 slices). I like a little nutmeg in my Creamed Spinach so I put a little touch of that. Yum yum. I could eat this stuff all day. Serve with some bread to soak up all of that cream.

Artichoke Spinach Lasagna

Wait. I've never reviewed this before?! I could have sworn.. Anyway, shame on me for not giving this 5 stars sooner. This is my absolute FAVORITE lasagna! I took suggestions that it was too watery and cut back on the vegetable broth the first time (only left about an ounce or two in the can) and threw in the whole jar of artichoke hearts with the marinade and everything. That was when I personally liked it best, but I noticed a lot of people saying it was too "vinegary." I made it with a coworker this past Friday and her and her mother RAVED. I added ricotta/egg/nutmeg mixture to the mozzarella cheese layer, used and entire package of no-boil noodles (I like my lasagna noodles rolled flat), a whole can of broth and just a little (ounce or so) of the artichoke marinade. I'll definitely use the ricotta again next time. I think the measurements would be perfectly fine, not too watery if you used an entire package of lasagna noodles to soak it all up.

Calabacitas con Elote (Zucchini with Corn)

This was really delicious. I left out the cotija cheese as we're vegan, and added some diced potatoes when I was sauteeing the garlic and onion just for a little heft. I also used some seasoned salt in place of the regular salt for flavor and we ate this as taco filling with seasoned black beans on the side. SOOO good and filling! Didn't miss any meat or cheese. We will make this again and again, I may add another tomato next time. And that's coming from someone who HATES tomatoes. Also, this is a very romantic recipe to cook with someone. I had fun cutting all of the veggies up with my boyfriend :)

Apple Pie by Grandma Ople

Ahhh. Insatiable pregnancy cravings. I woke up in the middle of the night and just HAD to have apple pie and ice cream. So, I made some.. Yes, in the middle of the night. And it was GOOD. I've made this pie before but read a review recommending to double the caramel sauce, mixing some with the apples and then using the rest to pour over. I have to say I much prefer sticking to the recipe. Don't double, you'll end up with way too much buttery goo and it'll be over the top sweet and you can't have that because that's what the ice cream is for. I do add one teaspoon of homemade vanilla, and I think this is crucial. It may just be the fact that I'm pregnant, but I could seriously have eaten a whole bowl of the caramel-butter-goo. It's that good. I recommend using a pastry brush to evenly coat the crust when you're pouring the goo over the pie to ensure you get the outer crust without it spilling over. I still recommend that you line the bottom rack with foil, as this tends to drip just a little. I also saw another review saying "the sauce never thickened up." I'm not sure what happened here, but mine came out perfectly fine. It was runny straight out of the oven (couldn't resist), but thickened up just fine. And this is coming from someone who is not the greatest baker. Try it. You won't be disappointed. Mm, mm. SO GOOD!

Award Winning Soft Chocolate Chip Cookies

Yummy :) I made these while my fiance and I were housesitting for his boss as a "Welcome Home/Congrats" treat after their wedding. They were amazing! And that's coming from someone who isn't the biggest fan of chocolate chip cookies. I loved the addition of the pudding (which of course you use dry in it's powdered form). I believe that's what makes them so soft. The pudding mix also adds a delicious vanilla flavor to the cookies, I doubled my vanilla extract (I use homemade, not as strong) but it was definitely unnecessary.This recipe makes a LOT of cookie dough, so you can freeze some for later. I did find that these cookies were best when made fresh, and weren't as fluffy and soft as when I let the dough sit and freeze for 24 hours. I took my time with these and dropped the balls of dough sans chips and then decorated them with the chips afterwards to get that signature "perfect cookie" look. They looked like something out of a Williams-Sonoma catalog. I was definitely impressed as were the newlyweds. We took some to my future in laws and everybody raved. I will never use another chocolate chip cookie recipe again.

Vegan Bean Taco Filling

This recipe is DELICIOUS! First off, DON'T JUDGE ME! I didn't add the salsa, but not by choice.. Hubs ate all of the salsa without telling me and when I went to make this for his lunch I realized he already beat me to it. This turned out so well, I just know it would be even better with salsa. It was dry without so I had to add some water. Anyway - I had some taco seasoning from Trader Joe's so I subbed that for the spices. Same ingredients. I used this "filling" as a topping for tostadas. I didn't miss the cheese or meat and hubs gave it a 9/10. I'm so happy I made this over the black bean quesadillas. It was perfect and very satisfying. Thank you so much!

Mushroom Artichoke Sandwich

Hubby helped his pregnant wife out tonight and made me this for dinner. He threw in some leftover orange bell pepper and used rosemary sourdough bread. The filling is just awesome. I loved these sandwiches, they are very flavorful and we didn't miss all of the gooey cheese one bit! The parmesan was just perfect. I would highly recommend this recipe as is, or to use up any leftover veggies like we did. Thank you!

Stuffed Strawberries

Served these atop Rocky Road ice cream with a little shaved chocolate on top. I didn't have orange liqueur so I had to sub vanilla extract which was still delicious. Everybody commented how professional these looked when served :) I only messed up one strawberry and that was slightly on purpose ;) it just looked so good.

Cheesy Ranch Potato Bake

My boyfriend and I brought this to a little bbq with some friends of ours and I'm pretty sure this was the favorite dish of all! The girls and I were already picking at it while the guys made the burgers. There were only 6 of us, and there was nothing left to take home! I threw in some bacon bits and topped it off with a little sprinkling of cheese. Thank you for this wonderfully simple recipe Jenny! UPDATE: I made this a second time for my boyfriend and his family, definitely sub the salt with seasoning salt or leave it all out, turned out really salty the second time I made it.

Szechwan Shrimp

Didn't realize that this said cooked shrimp, ended up using raw. I'd highly suggest it that way. Ohh, man! This was absolutely delicious. I can't rave enough. For such a simple recipe, I was shocked. Definitely throwing this into my weekly rotation (or at LEAST once a month) as I have most everything in my pantry. I used ground ginger instead of the reviewers suggestion to use fresh and it was fabulous. I would highly recommend doubling the sauce per Tony's review, as is is not near enough. Awesome recipe. Husband approved.

Mayo-Free Tuna Sandwich Filling

I think I just died and gone to heaven. I almost want to cry tears of happiness because of this recipe. I'm allergic to mayonnaise and don't even like it to begin with, and I've been eating my sandwiches with mustard for years. Don't get me wrong, I LOVE mustard, but the hummus adds that "creamy" consistency a true tuna sandwich should possess. THANK YOU SO MUCH, "A Turtle in the Kitchen!" You have made more than my day.

Bread Pudding II

Very easy, simple recipe. Just a little tip for using up leftover goodies: Just throw 'em in here! Leftover muffins, banana cream pie, apple pie, etc. It's a great way to use up leftovers (if you ever actually happen to have any) and will add an extra YUM!
