I haven't done much cooking the last week.  I've made so much, we had to catch up on leftovers.  I still have a few things on my menu from last week, to make, which I hope to get done, tomorrow; some breads, Rice Krispie Treats, and a few other goodies I can slice up and freeze.  MORE

Corn Chip Salad
We enjoyed this salad (but I used Catalina dressing and Fritos). Light and filling at the same time. I've made it with meat and without. It's great either way. You'd never think Catalina would go well with the different flavors but it goes great.

Swedish Meatballs (Svenska Kottbullar)
I doubled this recipe for Christmas dinner and kids and adults, enjoyed it alike. I varied from the recipe only slightly, choosing not to add nutmeg or brown sugar and added only a dash of ginger. The flavor from the spices is so slight, you would never know it was in there, if you hadn't read the recipe. Maybe adding all the spices along with the brown sugar makes for the odd sweetness other reviewers have posted about? If you're concerned with those flavors, leave them out all together or go conservative. I don't think it would take away from the dish. In the description of this recipe, the author mentions putting this in the crock pot but gives no further instructions. So, I winged it. I prepared as above, placed meatballs in the crock pot, covered with gravy, and placed in the refrigerator overnight. Christmas morning, I put it on low for 4 hours. I didn't add the sour cream until about 15 minutes before serving just because I forgot to add it... and I served it over egg noodles.

Bacon Cheddar Patty Cakes
I did a search for recipes with bacon and cheddar and this recipe came up. I needed something I could alter to my low carb diet and so I decided to give this one a try. I replaced the mashed potatoes with steamed cauliflower but left everything else the same. They were good but there wasn't much flavor for our tastes. Next time, I'd add garlic, onions, maybe some parmesan cheese. These were good and easy to make.
