Broiled Tilapia Parmesan

We enjoyed this immensely. We aren't big fish eaters, coming from a ranch, but this is going to be my go to recipe from here on out. I didn't change anything the first time I made this and it was very good. The second time I dusted the fish with old bay, and substituted dill for the basil. We liked the dill flavor better than the basil, but that's just personal preference.

Easiest, Amazing Guacamole

Perfect. I didn't change anything about the recipe and was delighted with the outcome. I served this with a side of pico, and thick tortilla chips and washed it down with a good tequilla. Excellent! The idea of rating a recipe is to rate it as is. If you make changes, create a recipe of your own and rate that recipe.

Amish White Bread

I have made this recipe at least once a week for nearly a year. It turns out every time, and is always a winner. We don't buy store bought bread. This is a thick, dense bread, so it creates a thick, hearty bread for sandwiches, SOS, and it makes a fantastic bread pudding. If you are expecting home made bread to be like commercial bread, then you will be disappointed. I will sometimes use less sugar than listed, or substitute the sugar for pure honey from my husbands Uncle's bees.

Sauteed Green Beans

I did not follow the recipe exactly, but I did follow the basics. I cooked the bacon, and removed it, leaving the drippings. I then sauted onions in the bacon drippings. I added the slivered onions at this time. Once the onions were cooked and the almonds lightly browned I added the beans and about 2 tablespoons of water. I covered and let the beans steam a little in the water and drippings. I removed the cover and cooked on low heat until the water was absorbed/steamed off. Then I added the bacon, cooked on low for a couple more minutes. I transferred to a serving bowl and garnished with a pat of butter. These were tasty, and the beans weren't mushy. Great use of frozen beans. They were flavorful, and my husband who shy's away from eating anything green, loved them. I'm hoping that by cutting down on the butter and adding water, these were slightly less fattening.

Cream Cheese Frosting I

Love this version. I've tried cream cheese frosting with and without the cream and I love the texture and consistency of the added cream version. I don't change a thing about this recipe and get perfect results every time. I do, however, sometimes sprinkle a little nutmeg, cinnamon, clove or pumpkin pie spice over this frosting, just for a garnish and an added kick of flavor depending on what I'm frosting.

Plum Blueberry Upside Down Cake

I've been making this cake for a hunting lodge this fall and have had nothing but rave reviews. I leave out the blueberries as I can't get them in the small town I live in. I also add a bit of nutmeg and cinnamon to the flour mixture. I also serve warm and drizzle a little half and half over the cake just for that extra touch of "home", but this cake is fantastic alone!

Asian Noodle and Pasta Salad

This is a flavorful pasta salad that is great for pot lucks, and when you want something light and quick. I added some sesame seed oil to the recipe the second time I made this and I loved the addition. I also used small shell pasta, and fresh peas, so this recipe is very versatile.
