I made these as written and fried them in the skillet. They were just Great! My kids and their friend really liked them. I also liked the little bit of sweetness from the br.sugar. Nice touch. I used 80-20 ground beef and had no problem with them falling part.YUMMO!! I will make these again! Thanks Jessica!

Vegan-Friendly Caramel Buttercream

Reviewed: Nov. 16, 2013
I needed a frosting and as luck would have it, found one in need of a face. Only 4 stars, I used Real butter! The flavor was YUMMY!! The texture was a bit wonky, so I added a little more milk and that smoothed it right out! I used this to top Pumpkin Ginger cupcakes, but made a sheet cake instead. Thank you LenoreR.

Tarred Roof Cake

Reviewed: Nov. 2, 2013
I felt bad for this one, I took the other review to heart and added a block of cream cheese, lemon extract & the zest of a lemon. This cake was Dense and not in a good way. 9x13 pan, Really?? No, it would have been way too thin. I used a 3qt casserole dish. Not sure why this recipe doesn't work. Sorry.

Pumpkin Pancakes

Reviewed: Oct. 27, 2013
Yesterday I thought, "Oh,I want pancakes for breakfast"! I had everything on hand, except I forgot to add the vinegar, never even missed it! These were light and fluffy, my cast iron griddle did a bang up job! Instead of all the separate spices, I just added a couple teaspoons of pumpkin pie spice and an extra dash of cinnamon and vanilla extract. Thank you Ruth, Keeper!

These are really good! I used fresh sweet potatoes that I didn't quite mash up all the way, left a few chunks, nice texture, just a bit dry but with a nice dollop of whipped cream , all is well! Perfect for your next holiday dessert or quick snack!

Apple Pancake

Reviewed: Oct. 4, 2013
Outstanding! I used my cast iron skillet to sauté the apples, butter, dark br. sugar, cinnamon, and a healthy grating of nutmeg. I didn't peel the apples and it gave them a bit extra crunch. I made this after supper and served it to my DD's friend who LOVED it even without the vanilla ice cream I gave her.:) Thank You Starmaster. Keeper

I am sorry Erin, I would give this all 5 stars but could not find Haddock, I used a nice white fish called Hake, firm, pleasant fish I found @ Smart N Final. Hubby Loved this dish! A+ I didn't bother sautéing the mushrooms, I just let the heat from the oven do the work, added a sprinkle of oil and Sriracha hot sauce. Delish:):) Thank You Erin.

This was Amazing!! I am only giving it 4'stars b/c I used tortellini instead of linguine and used veggies I had on hand. I filled my Biggest cast iron skillet with sauted garlic, onions, mushrooms, sliced peppers and veggies, veggies and the biggest shrimp I could afford! I found an Italian spice mix and added a good amount of butter along with a little Grapeseed oil. Heated it all up, made some Fab garlic bread and dinner was in the Bag! The family devoted it!!

German Roasted Nuts

Reviewed: Sep. 15, 2013
I thought these were just Fine! I know that sweet things need a little salt, so in went a tiny bit with the honey mixture. Since I am aware of Splenda being sweeter then regular sugar, I took the liberty to add a sprinkle of Kosher salt to the top of the nuts. I used Splenda along with the cinnamon for the final topping. Good little snack!
