Mexican Sour Cream Rice

Barbacoa Meat

FAN FLIPPIN TASTIC! ! I used the oven, low n slow-300 degrees for 4-5 hrs. 2 bottles of beer n some bay leaves, left this beef incredibly tender! The meat is very versatile, use it for casseroles, tamales, tequitos, even shredded beef burgers. As far as the salt issue, I just sprinkled the beef liberally with salt n pepper, not nearly 1/4 cup and it was perfectly fine. I did not marinate this at all. We ate this for dinner of course and can't wait to make Machaca in the morning with it!!

Jim's Mild Spicy Catfish

My family is catfish K RAZY!! THIS just adds to their love for this muddy buddy! The only thing this dish needs is salt n pepper. Perfect otherwise.

Irish Potato Nachos

I will definitely be making these again!! OH Man are they good! I had some gorgeous, ripe avocados and left over skirt steak to eat up. I went looking for a recipe & this is the one I picked!! I cooked off some bacon added the steak, onions along with chopped Hatch chilies. I fried the potato planks in the bacon fat. Stacked everything up, drizzled ranch dressing over the whole shabang & topped it all off with slices of California avocados!! Dinner is DONE::)) THANK YOU DaDD

Charley's Slow Cooker Mexican Style Meat

Delicious! Full of flavor and YES it is SPICY! With a cup and a half of chilies, I hope to kiss a Wild Goose it IS!! PEOPLE, that's the Point! You wouldn't blindly jump off a cliff w/o Knowing what's down there, don't do it with food! THINK BEFORE you make it and ask yourself, do you Want REALLY hot food! THEN jump or stay on solid, boring ground;)) You can always add more chilies or hot sauce later but once its too HOT, hard to unwind that clock. BTW, my family n I love jumping into a pot of this meat! Sour cream/ guacamole is a good way to bring that heat under control.

My Favorite Mexican Rice

This rice is a staple in my house. My DS LOVES Spanish rice and this one is always 2 thumbs up with him! I use chicken bullion and skip the extra salt. But I would add those spices/onions after I fried the rice, JUST BEFORE you add the broth, simply to give those spices a minutes to Bloom and become fragrant, THEN add the liquid.

Flavorful Tater Tot® Casserole

It just so happened to be National Dog Day, SO I added hotdogs to this, I found chopped collard greens n corn in the freezer, some baby tomatoes n jalapeños all went in the pool. Topped the whole thing off with leftover tots and blanketed in shredded cheese. The kids n I liked it well enough.

Potatoes and Onions

The is a wonderful recipe to clean out the fridge with! I like adding chopped yellow chilies to my potatoes. And I don't add the onions too soon so they still retain their crunch. NOTE:: With regards to BLAND potatoes, the TRICK is to add salt n pepper right after you add the potatoes to the pan. It's also the reason you add salt to pasta water, gives them flavor As they COOK and not just on the outside of food.I have learned this the hard way. TRUST ME your days of bland potatoes is Over;)

Roast Beef Dip

Delicious & Super fast! I added 2 tsp. of horseradish sauce since I Love it with beef. I served it with the raisin rosemary crackers I get from Trader Joe's. The sweet n salty is terrific with this dip! Thank you Joyce, this is one to remember;;)

Carne Asada Sandwich

This sandwich was Very good! I decided to make guacamole and spread it on the other half of the French bread my kids so generously brought home. Skirt steak, which is thin, fried up just fine! My hubby declared this YUMMY, nuff said for me! Thank you Allrecipes for making dinner extra tasty ;;))

WOW, I am such a dodo bird! Lol I gave this Sammie a face but forgot to tell you how Terrific it was!! Lol I obviously made a regular sandwich. Pistachio and Pecan Salad

This of COURSE was A W E S O M E !!!! I had walnuts in the freezer so I beat then up with a hammer and tossed them in the pudding pool. I was out of milk so I used about 1/4 of vanilla creamer. To be honest with you,1 cup of milk would have made this too soupy. JMO;) I liked the addition of cream cheese, it gave the salad a creamier texture, a little something special! Thank you SusieQ, this is a keeper that I'll be making again!;

White Cake Frosting II

This is Very close to Wiltons 'secret' frosting, but they add meringue powder. You Must start this frosting off by whipping the shortening, water, flavoring/coloring till it has the consistency of lotion, THEN add the sugar. If you don't NEEDED white frosting, you could use butter. Almond flavoring is a nice change as well.I love this frosting!

Chili Colorado

I am giving this 4 stars only for the fact that I don't use the tomato sauce. Instead I add red chili sauce along with chipotle powder, oregano, a couple bay leaves. This is the recipe my DH has been searching for! My MIL used to add potatoes so that's what I do as well! I serve the whole thing over rice. 10 stars!! Thank you Ron, please forgive me for taking liberties with your recipe! It was so very close to mine, you might as well benefit since you got something published! ;)(

Wild Rice Casserole

I had some wild rice I had cooked up last week. I can not Imagine why this recipe doe not have a face after 62 reviews! Well, I'm 63 with a Face for it! This was good, I dug through the fridge and completed this dish in 15 minutes flat! I by passed the cream of mushroom soup and just added flour to my sausage, onion & Fresh mushroom saute along with a bit of water, add the rice, heated it up and dinner was Done!
