Mexican Corn on the Cob (Elote)

This is about the Best way to eat corn, IMO. All I do is put the corn in a hot oven. I don't bother shucking it either, in fact, hot corn is Easier to shuck, just pull it all off. Just be careful, Hot you know! I put the mayo on a paper plate and roll the corn in it. Holding it like a taco. Once it is covered, just sprinkle with with the cheese. This corn has enough fat that I don't bother with butter. Just give it a healthy squirt of Sriracha sauce and put on a big bib!! EXCELLENT!

Empanada Pork Filling

This was Delicious! ! I added some chopped jalapeno and onion. I used Grand biscuits that I flattened and used to fill them. Cilantro was also thrown in. I baked them up and served them with creamy avocado and Mexican Creme. The meat was already seasoned and chopped along with a can of beer, so I put it in the oven and went to work out. When I got back, the house smelled Good! They were very mummy if not a bit Hot from peppers. Thanks Lola. Keeper

Schweinebraten Pork Roast

LOVE LOVE using the oven for a slow cooker! I had a jar of rib rub, so I sprinkled it on the pork roast. I threw in 2 heads of garlic and a tablespoon of peppercorns. 3 beers from the fridge went into the hot tub. Turned the oven to 300 degrees, covered with foil and went to work. DD called a couple hours later and said the roast smelled Amazing!! Told her to turn it off and hubby thought this totally Yummy!! Thanks so much Chasing Storms!!

Easy and Quick Halushki

I had made some extra wide noodles last week and had some leftover. This was Delish and went perfect with my pork roast! I cooked the bacon, sliced the onions and threw those in. Once they were wilted, I tossed in 1/2 a head of shredded Napa cabbage and sauteed a few more minutes. I did add some celery seed for a little contrast. Next time I would like to try caraway seed instead. Thank you lburger24.

Dad's Candied Salmon

This salmon was Super easy peasy and Delish!! I prepped it the night before. It made the dish a bit watery. Next time, and ( yes, there will be a next time ) , I will add the seasonings right before I bake it off. I sprinkled some kosher salt and pepper. Limes were cut up and put on the side for those who wanted them. Took it to a potluck and there was nothing left but the sugar pan!! And I used 2 filets. Thanks for sharing Mrs. UnionJack! Another keeper. Mmmmm

Syracuse Salt Potatoes

These were DA BOMB!! Super creamy and perfectly seasoned and great with a sprinkling of green onions. Just made some simple sauced pork chops and hubby ate the Whole thing! Yiippee:):) Thanks so much Kaspmary!! These are a keeper.

BBQ Country Style Ribs

This is a foolproof way to get the kids to eat good! It is also super simple and easy enough to customize for your families taste buds. I just sprinkle liberally with garlic salt and pepper. Bake the ribs for about 2 hrs then add the bbq. Bake and baste another 30-40 mins and dinner is ready. While the ribs are cooking, bake some spuds or a nice rice. Needless to say, I have made this dish numerous times. It is Always a Hit!

Puff Pastry Cinnamon Rolls

Not sure what happened to the editing of this lil recipe but, of Course people did not like it!! Why would you if its supposed to be sweet and it has NO sugar!! People, add white or brown sugar to this and mix it with the cinnamon. I forgot about the cream cheese. I brushed the rolled out dough with butter and sprinkled it with cinny/ sugar. Rolled em up, baked and spread with cream cheese frosting. I had 4 Young adults in the house, they Devored these rolls in record time!! I will make these again for sure Thank you Klutz!! Excellent recipe who needs more attention AND Redo then it is actually getting.

Tartar Sauce I

I was out of tarter sauce of course! Thank You Diane! Saved the fish tacos. Lol I used dried chopped onion and some minced pickled jalapenos. Mmmm A squirt of mustard and I was good to go!

Pistachio Fluff Fruit Salad

Omgosh too funny!! I made this same one last weekend for hubbies birthday bbq. I found sugar free pistachio pudding. SCORE!! This salad is AWESOME!! Add whatever fruit you have or like. I used peaches instead of the mixed fruit cuz that was what I had in the pantry. I have even used banana pudding . Yummo! Thanks so much JB:):) Keeper.

Caribbean-Spiced Pork Side Ribs

Ok, I needed a new rib recipe for my hubbies B Day dinner. These were a HIT! I didn't have any ginger. Added some garlic powder to it and used a whole can of frozen OJ., no water,I had no limes so in went the key lime juice. Roasted the ribs for about 5 hours. I made 2 whole racks. Very flavorful, I reduced the sauce and brushed the ribs for a final coating while the ribs were on low. Thank you so much Michelle!

Breaded Toasted Ravioli

I have had this recipe in my box forever! So sorry I have not made them sooner! Omgosh!! These are TERRIFIC!!! I needed a side to go with pork chops, this was Perfect! I made a dip with crushed tomatoes, sour cream, parmesmean cheese and garlic salt. I used panco crumbs and boy were they Crunchy. Thank you Chef.

Spicy Rapid Roast Chicken

This is a Great way to fix chicken Fast! You can adjust the seasoning to what you have on hand or what you like. Little ones might not like it soo spicy. As long as you are roasting 1 bird off, it's just as easy to roast off 2 ( same temp and add a bout 20 mins more) and then you will have chicken meat for another night when you are rushed for time. You could do this on a Sunday afternoon and freeze the leftovers! Thanks Nancy for helping us get dinner on the table just a bit quicker!:)

Turkey Soup with Dressing Dumplings

I found some smoked turkey legs at the store. It is a rainy, dreary day, this soup intrigued me, I had all the ingreds. I did forget to add the egg whites to the stuffing but I had used an ice cream scoop so they held up well. My family is not a cranberry fan, so I left that out. 2 of my kids are Gobbling it up as I type! Thanksgiving in March!! Thank you for sharing Michelle

Baked Halibut Sitka

I made 2 changes to this fish dish. Other wise I would give it 10 stars. First, picture me, in the market try to remember the ingreds for this dish. Confussed look, creased brow. You get the idea. I snagged a package of tilapia. Somehow thought of most of the nearly everything else. There was a Demo lady who was giving samples of fish, sprikled with Chef Moritos fish seasoning on it. WOW, that is Yummy! Second, got my bottle and headed home. Whipped up a great salsa. Darn! Forgot the dill weed for the fish.! What to use? Cilanrto. Gave a shake of the fish seasoning slathered on the spread and in the oven with tator tots they went. Mmmm, starting to smell good in here! Time to toast the corn tortillas. One of my DD's friends Happened to stop by. Funny how they Just Know huh? OK gang, dinners Ready!! My DS was a bit skeptical, so he only got. Well he ate 2 more for good measure! Hubby was home and before I could get the kids fed, he was RAVING about how good these were!! Keeper. Thanks Jalex.

Tina's Avocado Salsa

Needed a salsa to go on my fish tacos. Mauigirl suggested this one and Man she RIGHT! I was luck enough to find ripe hass avos and had a can of tomates with chilies in the pantry. A quick chop of cilantro and green onion and that was done.i added a sprinkle of garlic salt, pepper and key lime juice, DELICIOUS! Thanks Tina. Keeper!!
