Poblano Chile Enchiladas a la Gringa

What do you do with leftover turkey? Make this, Obviously; ) I grabbed the bag of tortilla chips and layered the whole shabang. Cream cheese, hatch chilies, gr.onion & cilantro went in the blender. Salt n pepper and Lots of cheese brought this to an Excellent result! Love these !! Thank you Olga.

Bake Sale Lemon Bars

1st of all, when life or friends hand me lemons, what do I do?? Make lemon bars of Course! 2nd of all these were FAB U LOUS! !! I made no changes food wise other then doubling the filling, adding the zest of three Meyer lemons and juicing them. I read to drop the temp to 350, I really think this was the Right call, if you cook those eggs too fast, you might get a rubbery texture and that was something I was Loathe to have hapoen. I did add some salt, just a pinch, to the crust n lemon. Also, not sure why all the fuss about the crust. I made it exactly and just pressed it in the pan. It wasn't sticky either, just crumbled fine. My pan was an aluminum one that was about 9-11 maybe, perfect bar size. So GLAD I doubled that filling too cuz there would have been basically more crust then filling, that would NOT have been good eats! I took the time to line that pan with foil and sprayed it with grapeseed oil. The bars slid right off the foil, no trouble. My hubby n DS really loved them too. Heck even the Dog liked em! Lol These are a keeper for sure! Thank Elaine!!

Carol's Baked Ziti Casserole

THIS ROCKED! ! I added Hot Italian link sausage, that I broke up a bit to act like little meatballs. I used cottage cheese instead of the ricotta, along with a tablespoon of Herb de Provance. The shredded smoked Gouda sprinkled throughout sent this to Heaven! Thank you Carol;)

Jalapeno Corn Bread

This is 20 star worthy but I am a professed tweeker. I used Jiffy cornbread mix, only 1 egg,1 tsp. of sugar, sour cream in place of the buttermilk and added 1/2 cup of French Fried Onions in and on the top of the bread. WOW!!! Most excellent! Thank you Shelia this is a keeper;)

Garlic Brussels Sprouts with Crispy Bacon

If you love bs, you will love this! I did use chicken boullion and skipped the water as well as the extra salt. The steam alone was enough to add moisture but not drowned the sprouts. EXCELLENT! !

Soft Mahi Mahi Tacos with Ginger-Lime Dressing

First time ever trying Mahi Mahi, these tacos were REALLY good! But, Hubby hated the dressing! He said it took away from the taste of the fish. I kind of agreed with him. I am not a mango fan, but son is, so I went with it and quite frankly couldn't tell it was in there, Super fresh n Quick!

KISS Salmon

Great title!! I LOVE the taste of salmon, you do not need too much to make it taste FAB, this sauce is all that is required! I only had orange marmalade so that's what I used, along with a few tablespoons of Sriracha sauce. Excellent 10 stars, I served it with cottage fries. Thank you Cookntaste

World's Best Honey Garlic Pork Chops

How do you turn plain ol pork chops into something SPECIAL on a Sunday afternoon? You make THIS!! MY OH MY! I didn't have enough honey so I added a squirt of maple syrup and a few dashes of Chipotle hot sauce and about 5 garlic cloves! Out to the grill I go..... Seasoned the chops with salt n pepper, grill for 4-5 minutes, slather with sauce, turn over, 2-3 more minutes and slather again. Watch them like a Hawk, they will burn in a HOT MINUTE! This sauce CRAZY GOOOD

Fudgy Peanut Butter Buttons

So Rich! WOW! My DD'S LOVES PB cups, so of course I had to make them for her! Super easy peasy! Great way to get the ankle bitters in the kitchen as well:) I did use extra crunchy pb cuz I'm Mom and She loves crunchy !! Lol plus dark chocolate has Loads of antioxidants, they are HEALTHY TOO! HAHA Using Pam, helped them not stick to the pan. Love these too much! PS: Make sure you get a glass of milk ready, YOU'LL NEED IT! Thank you PAM!

PAM® Sopapilla Cheesecake Pie

Made these for our bbq today, the family LOVED Them!! I actually added the cinnamon/sugar to the top of the cheese layer and a little bit to the top. Dinner was o n the sweet side of course with bbq sauce slathered ribs, so I'm glad I used about 1 1/4 cups of sugar. Tasted terrific! Thank you CandelB ::))

Homemade Mac and Cheese

TWEEK TWEEK TWEEK, hence the 4 stars, deserves 10! Who needs butter when you have bacon fat? Lol. I used jalapeño jack & some gruyere instead of cheddar and added a pinch of fresh ground nutmeg! So very yummy! I made this on the stove with some great fun shaped pasta called Lumaconi (large snail shape), lots of places for cheesy goodness to hide in. I served this with bbq pork tacos. Thank you Judy, this is a Keeper ;)

Easy Slow Cooker Swiss Steak

I want to give this 10 stars but I changed it up just a bit. I chopped n dropped in the meat, 2 cans of Rotel, small can of tomato sauce, a couple tbls of flour & 2 pkgs of Lipton onion soup mix. My crock pot was occupodo so in the oven it went, low n slow 300 degrees for 4-5 hrs. I served this over the crock pot baked potatoes,http://allrecipes.com/recipe/slow-cooker-baked-potatoes/detail.aspx. Superb! ! Thank you Lucille, this is comfort food to the neth degree!

Slow Cooker Baked Potatoes

OMGOSHHHHHH, THESE ARE FAB U LOUS!! LOL So easy, of course;) I used red potatoes, good for me, cuz I LOVE the skins on any potato! The potatoes were perfect and tasted GREAT! Low n slow oven Swiss steak over the potatoes. This is comfort food at its Best!! Thank you very much Nurse Ellen!!

Lobster Rolls

This was our first time having lobster rolls. I grilled the lobster on skewers on the bbq, SO FLAVORFUL!! I had grilled some shrimp & asparagus. We ate most of that and I added the rest to this salad. I used too much fresh parsley and I thought it overwhelmed it just a bit, no one else seemed to notice ;;)) Perfect summer time dinner! Barbacoa Meat

FAN FLIPPIN TASTIC! ! I used the oven, low n slow-300 degrees for 4-5 hrs. 2 bottles of beer n some bay leaves, left this beef incredibly tender! The meat is very versatile, use it for casseroles, tamales, tequitos, even shredded beef burgers. As far as the salt issue, I just sprinkled the beef liberally with salt n pepper, not nearly 1/4 cup and it was perfectly fine. I did not marinate this at all. We ate this for dinner of course and can't wait to make Machaca in the morning with it!!
