I'm Liz, wife, mother of four (including my two step-sons), corporate recruiter, and my family's private chef. =) I absolutely love to cook. It's my favorite time of day and has become a relaxing a rewarding experience. I can slip into the kitchen and let my husband take over with the kids. We've changed our diets to more all natural and organic foods. I avoid highly processed foods, high fructose corn syrup, hydrogenated oils, and nitrites/nitrates. It's not always easy, but it's gets easier every day. We are also cutting back on red meat. My weaknesses are my darling children and anything that's sweet and homemade - from apple pie to zucchini bread, I love it all!
My favorite things to cook
I love most meatless recipe subs. I'm not so into tofu (still). Tasty Lentil Tacos is my favorite AR recipe right now. Chicken that has been seasoned and thrown on the Foreman grill, sliced, and wrapped in a whole wheat wrap with some yummy fixings are a favorite for our quick meal nights. We LOVE garlic roasted asparagus and sweet potato fries. Potato soup is one of my best friends and a nice, big pot of it usually lasts us two days. One of my favorite things to do is turn not-so-healthy recipes into healthy recipes that I'm proud to serve my husband and children.
My favorite family cooking traditions
Chocolate gravy on Christmas morning!! I LOVE teaching my kids which foods are healthiest for them and why, and I try to bring them into the kitchen with me as much as possible. I really enjoy giving them a behind-the-scenes look at why the food they love is so good for them.
My cooking triumphs
My chili recipe that won 1st place at the Martin Hall 4th Annual Chili Cookoff, and my Buffalo Bill Chili that won 4th place at last year! Lately, it's been just about everything I make. AR has helped be go from a beginning cook to an intermediate cook ... I'm looking forward to learning more and more.
My cooking tragedies
For our first anniversary I wanted to show off my cooking skills and make something really special for my husband. I bought a couple of pounds of not-so-inexpensive jumbo shrimp and went about making a toasted coconut and curried shrimp dish (my husband is a huge coconut fan). It didn't turn out so well, and, actually, it was pretty disgusting. I really don't know where I went wrong, but we ended up wishing we had steamed the shrimp and dipped it in garlic butter - our usual (quick and easy) favorite.

Clone of a Cinnabon
This is one of the most deserving 5-star recipes on this site. I would pay good money for these in an upscale bakery... heck, I would pay good money for these in ANY bakery.

Basic Corn Muffins
At first, I didn't care for these muffins... then, they cooled down a bit and the edges became crispy and crunchy and the sweetness really came through. Yum! I am so pleased they turned out better than what I thought they had!!

Slow Cooker Chicken Taco Soup
Very good! I can't believe I haven't rated this. We have this almost religiously. The beans are easy to substitute with anything you have on hand. It's also easy to cook on the stove in a dutch oven... It never needs to be cooked as long as it says... or it can be cooked longer! Very versatile. Yuengling Light has been my beer of choice lately, but I've used Heineken and Dos Equis with good results -- I think I've used Miller Lite at times, too. With this last batch, I doubled all the canned ingredients (added an extra can of cream corn), the beer, and tripled Bill Echols' Taco Seasoning I -- it was awesome but too spicy for the kids. So, the next day (today), I added two more cans of corn, a can of light red kidney beans, two cans of vegetarian beans packed in tomato sauce and another batch of Bill Echols' seasoning (minus the pepper flakes) -- YUM! The kids really enjoyed the less spicy version, and I'm enjoying a super cheap meal that has fed us multiple times. As I said, it is VERY versatile. =]
