Turkey and Quinoa Meatloaf

Where do I start? Um, WOW... This recipe has totally restored my faith in healthy food. The only thing I changed was omitting the brown sugar as I am on a low-no sugar diet. This was my first time using quinoa and I loved it. I almost felt a little naughty eating it...this meatloaf will be a go-to recipe for a long time!

Ninety Minute Cinnamon Rolls

This recipe was my first baking with yeast adventure. Although it probably took more than 90 minutes to make, the recipe was easy to follow and not as time consuming as I thought it would be. I liked the idea of baking in muffin tins for nicely shaped and controllable cinnamon rolls but the importance of putting a baking sheet underneath the muffin tin was not mentioned. The butter brown sugar mixture overflowed all over my cupcake tin and into the bottom of my oven, at one point starting a small fire, which made for a very smokey kitchen that afternoon. However, the end result were delicious, fluffy and satisfying cinnamon rolls that I will make again, probably in a 9x13 but for goodness sake, put a sheet tray under your muffin tin when you make this recipe!

Apple Half Moons

I followed the recipe exactly as written but did not make the lemon glaze. I found the same as the first reviewer, the dough needs more flour. While rolling it out I probably used between 1/3-1/2 C. of extra flour because it was very sticky. The filling was easy to make and really yummy. This is basically an apple empanada recipe that is more like apple pie. I've used cream cheese but not sour cream in empanadas before, they have similar results. I had to bake mine about 20 minutes to get a nice golden brown on the crust. The end product was very yummy and I think I will make these again and experiment with fillings!

David's Yellow Cake

I found this a little on the dry side, but still pretty good. Followed the batter exactly to recipe, and added some macerated strawberries underneath while baking for a strawberry upside down cake. The cake is pretty tasty.

Shredded Beef for Tacos

This was very, very good and super easy. I piled mine on fried corn tortillas and topped with salsa fresca, cheddar cheese and sour cream. A great meal!

Cream of Mango Soup

This is very good. I subbed 2 containers lowfat plain yogurt for the half and half to make it a little healthier. The lemon I used was very large and combined with the sourness of the yogurt I had to use extra sugar, about 1/3 C. Very good I will make this again when I have extra mangoes around.

Pretty good. I used american instead of swiss and left out the tomato. It's a good starting point for a sandwich that can be easily customized.

Best Steak Marinade in Existence

I used this marinade for two big juicy ribeye steaks. Neither me nor my fiance cared for it that much. With all the soy sace, lemon juice and worchestershire it made the meat very sour and almost made it taste rancid. I was a little disappointed in how many ingredients I wasted to make it. I think maybe if the measurements were right, with a little tweaking, this could be a good recipe. Maybe using fresh herbs instead of dried would be better as well. Overall, it needs some work.

Ginger Glazed Mahi Mahi

My fiance and I both loved this recipe. I used ground ginger because it was on hand but I think fresh ginger would be even better next time. I pan-fried mine in sunflower oil. It turned out perfectly and I will keep this in rotation.

Kathleen! Thanks so much for sharing this recipe. I made them tonight, I split the batter between two 11x7 pans and they still came out nice and thick, moist and delicious! The frosting is to die for...quite possibly the best cream cheese frosting I've made yet. This recipe is a keeper!

Spicy Beef Vegetable Stew

A very good, easy stew! I made a few changes based on what was on hand: I used frozen carrots and corn and fresh green beans for the veggies, and I did not have a can of tomatoes with green chiles so I substituted 10 oz. diced tomatoes I had frozen and added some chopped jalapenos and a pinch of cayenne powder for spice. Very yummy, I'm taking it for lunch next week!

Juicy Peach Crisp

This was good, but it was overly oily. I used oat flour in place of white. The taste is good but I think if I make it again I will cut down on butter or use more flour. It would also be okay to cut back on the white sugar.

Blueberry Sour Cream Pound Cake

Now this is it!! Very yummy, easy to put together. It is buttery and full of flavor. I used 1 tsp lemon extract in place of the butter extract because I did not have any on hand. I topped mine with a lemon glaze icing. Perfect.

Omg Cindy you are a rockstar!! This is SO good I could hardly put my spoon down! Yum! I only made a couple changes: added 1/4 of an onion and 2 cloves garlic with the veggies. Wow this is good!
