I work at a home improvement store as a sales coordinator but my life gets much more interesting when I get to come home and cook delicious meals. I am married and my husband and I are trying to conceive our first child. My goal is to cook amazing, delicious sugar-free meals. I eat a low glycemic index diet.

I like to take an old favorite and put a sugar-free or low GI spin on it.
My favorite family cooking traditions
Outdoor grilling in the summer. Also old family recipes like Spaghetti & Meatballs, Meat Loaf, Mashed Potatoes and Potato Salad.

Most of my desserts come out pretty well, but I'm really happy with anything that doesn't burn.

Tons of burnt cookies from the old oven.

Turkey and Quinoa Meatloaf
Where do I start? Um, WOW... This recipe has totally restored my faith in healthy food. The only thing I changed was omitting the brown sugar as I am on a low-no sugar diet. This was my first time using quinoa and I loved it. I almost felt a little naughty eating it...this meatloaf will be a go-to recipe for a long time!

Baked Dijon Salmon
We just tried this tonight and it was fabulous! This will be our new favorite salmon recipe for sure.

Ninety Minute Cinnamon Rolls
This recipe was my first baking with yeast adventure. Although it probably took more than 90 minutes to make, the recipe was easy to follow and not as time consuming as I thought it would be. I liked the idea of baking in muffin tins for nicely shaped and controllable cinnamon rolls but the importance of putting a baking sheet underneath the muffin tin was not mentioned. The butter brown sugar mixture overflowed all over my cupcake tin and into the bottom of my oven, at one point starting a small fire, which made for a very smokey kitchen that afternoon. However, the end result were delicious, fluffy and satisfying cinnamon rolls that I will make again, probably in a 9x13 but for goodness sake, put a sheet tray under your muffin tin when you make this recipe!
