I'm a busy working mom. My husband and I are both very active and enjoy lots of different sports. I love volleyball and have been playing for 19 years, but also enjoy frisbee golf, hiking, playing with my family outdoors, building LEGO creations with my son, and encouraging my family to try as many new things as possible.
My favorite things to cook
Well, being so busy, I need to find quick, healthy meals that my family will enjoy. I cook pasta a lot, so I guess it's my favorite because it's so versitile and easy. But, task me with making dessert, and I'm happy as can be!
My favorite family cooking traditions
My mom always makes her apple sausage stuffing for Thanksgiving and Christmas. It's so delicious, I eat more of it than anything else! We are still a young family, so we don't really have any cooking traditions of our own, yet!
My cooking triumphs
I grew my own basil this summer and made several batches of pesto for the first time. I finally feel like I know enough about cooking and how foods go together that I don't need to follow recipes all the time.
My cooking tragedies
There are so many! I once tried to make spinach pesto, which turned out so terrible and soupy that I threw it all out. I also over-tweaked a muffin recipe to try to make it healthier but the muffins were so bland, dry, and crumbly that nobody wanted to eat them!

Purple Plum Pie
Delicious!! I made this just as the recipe called for, except I used 3 cups of fresh yellow plums and 1 cup of fresh blueberries (that's what I had on hand). I also used brown sugar in the crumb topping instead of regular sugar. It was so delicious! The flavors mixed very well, and my family gobbled up almost the entire pie in one night. We served it warm with vanilla ice cream, but it was also good cold with a dollop of whipped cream the next day. Great recipe, this will definitely be a regular!

Michelle's Blonde Chicken Chili
This is a very good base recipe, and I'm giving it 4 stars for that. I am giving 5 stars to the recipe I made, based on other reviewers' advice. I didn't want to make quite so much so I used about 1-1/2 lbs of chicken breast, 4 cups of chicken broth to start, 1 can of chopped green chilies, and 3 cans of great northern beans (drained). I took the advice of some and mashed one can of the northern beans before cooking, then cooked everything together for about 8 hours on low heat in the slow cooker. Afterwards, I took out the chicken and shredded it, then mixed it back in the chili. We were planning to eat the chili that night, but got invited out to dinner instead, so I stuck it in the fridge until the next day. In the morning, I put the chili back on the crockpot for about 10 hours on low. By dinnertime it was really ready! The flavors had really mixed together by then, and everything was so delicious! I had it topped with sour cream and a side of cornbread. I will definitely be making this again!

Chicken Arroz Caldo (Chicken Rice Porridge)
This is so tasty! I didn't have fresh ginger on hand, so I used powdered ginger. I also used brown rice instead of white rice, which was still very yummy, I just had to let it simmer for much longer. VERY good! Thank you!
