Jamie's Cranberry Spinach Salad

Lovely, simple salad. I cut the sugar in half and used olive oil rather than vegetable oil. Also left out the onion. Everyone loved it!

Nice marinade, but a bit time consuming. I used white cooking wine rather than sherry because that's what I had. The chicken was nice and juicy and was enjoyed by all!

Cottage Cheese Potato Salad

Hmmm...just OK. Very bland for me. I left out the olives because I didn't have any and maybe that would have given me more flavor. I think what I was missing though was mustard and cheese! Good to try something new though.

Chicken Pasta Salad II

Very nice salad! I did use grilled chicken rather than canned. Used what pasta I had on hand, which ended up being a combo of elbow mac and bow tie! Left out the corn and olives, added cucumber. Just goes to show you can really do what you want with it. Loved the mayo in the dressing!

Beef-Stuffed French Bread

I thought this was great! Very easy and quick to put together too. I added some garlic and onion powder to the burger and also 1/4 cup bbq sauce. Helped give it some zip.

Delicious Raspberry Oatmeal Cookie Bars

Mmmm...they sure are delicious! I love how simple these bars are too! I did not line my pan with foil - just used a generous amount of Crisco. I also added a handful of white chocolate chips over the jam and that added some great flavor. But they'd be yummy without it too!

These are delicious, cinnamon pancakes. We loved them. I'm not sure they're any more fluffy than any other pancake I've made, but they certainly were good!

Peanut Butter-Banana Blammo! Brownies

The peanut butter portion of this is way too salty and not sweet at all. I like my brownies sweet! I might try it again, but next time leave out the salt. I found the texture to be very cake-like even without adding baking powder.

Lasagna Toss

I'm rating this based on my husband's opinion...I would have given it a 3 but I think it's because I don't like Italian sausage that much! So, he said it was great with the sausage. I'd make it with hamburger for myself. Simple and fast, so points for that!

Slow Cooker Lemon Garlic Chicken II

This was an easy enough meal to put together. I took the advice of anothe reviewer and used a can of chicken broth, 1/3 cup of lemon juice, and 1/2 cup of white wine. They provided enough liquid to keep it from getting dry and added some nice flavor. Didn't use the bouillon granules. I agree the sauce needs thickening if you'll serve over noodles or rice.

Creme Brulee French Toast

This was good, although not the best overnight french toast recipe I've tried. I wasn't sure what "6 French bread" meant, so I just used an entire loaf and I did not cut the crusts off. I guess I'm not used to the "topping" being on the bottom of the dish, which left the top rather dry.

Chicken and Sweet Potato Bake

Well this was a fine dinner. I am a huge sweet potato fan and enjoyed the flavor with the chicken. I did saute the potatoes with some celery in olive oil for a bit before adding to the dish. Remember to pound the chicken pretty flat so it will cook faster. Mine took 45 minutes on 375. I added a can of chicken broth so things didn't get too dry. But the chicken really lacked flavor for me. Needs more seasoning.

We enjoyed this very much! I used Old Bay in place of the seasoned salt and just sprinkled on a bunch of pepper. It had a nice kick. I completely forgot to add the almond at the end, but I don't think you need it. Very nice!

Baked Chicken

My husband enjoyed this more than I did. I liked the crunch of the cornflakes but I found the onion soup mix overpowered all the other flavors. If I make it again, I'd leave that out.
