Cod with Italian Crumb Topping

My biggest advice on this recipe is to use 3oz fillets. Mine were much larger and the topping just wasn't enough for the larger fillets. I did take the advice of others and used 2 Tbsp mayo mixed with 1 tsp lemon juice in place of the egg. I liked the flavor of the topping well enough.

Soft Christmas Cookies

Really delicious - really soft - really easy! I took the advice of others and cut the flour down to 3 cups, baked at 350 for 8 minutes, and they are perfect! Don't roll them out too thin; 1/4 inch is great.

Eggnog Quick Bread

Fabulous! Love this bread. Added 1/2 a cup of eggnog but otherwise made as written. I would suggest creaming the butter and sugar before you add the rest of the wet ingredients.

Pumpkin Breakfast Casserole

Sour Cream Apple Pie Deluxe

This was a good pie, but nothing spectacular. I did take the advice of others and served cold. I used 4 apples. I felt like the crumble topping wasn't crumbly enough. Probably needed more flour and sugar.

Chicken Chimi in the Oven

We enjoyed these. I cut the chili powder in half and left out the cinnamon. Also didn't puree the salsa mixture. I had really small tortillas, so I got 8 out of this and they were hard to flip so I just baked for 10 minutes and that was great.

All-in-One Casserole

I loved this! Left out the mushrooms and potatoes because I didn't have either of those. Did have sweet potatoes and I used yellow squash too. Mine was cooked in about 45 minutes. Really delicious!

Candy Corn Bark

Spectacular! Very sweet but I could not stop eating it. I used craisins instead of raisins. I covered the bottom of my pan with wax paper and then once I had the melted chocolate down (3 bags of white chocolate chips), I put the candy corn on top and pushed them into the chocolate with another piece of wax paper. Stuck it in the freezer to set and it came out great and broke apart really well.

California Chicken Soup

This was very good, but I did add more seasoning and used less water. I used two 14oz cans of chicken broth and 2 soup cans of water. Probably needed a bit more liquid. I boiled for 20 minutes, added frozen broccoli, boiled another 7 minutes or so and added refrigerated tortellini. That only needed about 5 minutes and it was done. I added 1 tsp pepper, 1 tsp dried parsley, and 1 tsp dried thyme. Made this way it was flavorful and we all enjoyed it!

Easy Smoked Salmon Pasta

Yes, this was easy! It gets 4 stars because I doctored it. I only used 6oz of pasta and used penne because that's what I had. I doubled the sauce and used 2oz of cream cheese. I used 4oz of salmon. I also threw a little flour into the sauce to thicken it up. Just personal preference. Topped it with pepper. Made this way I'd give it 5 stars!

Good-Morning Banana Nut Cereal

My family enjoyed this, even my 9 year old son, which is great. My "pinch" of salt was too big, so it was too salty. I think I'll just leave that out next time. I used ground flax for oat bran.

Ratatouille Bake

We enjoyed this dish, although it could have used 12oz of pasta. I used zucchini and yellow squash since that's what I had on hand. Also fresh tomato rather than canned. Loved the flavors and it was a nice, light meal.

Maple Glazed Chicken with Sweet Potatoes

Wow this is delicious! I added a little butter to the sweet potatoes but that's all they need. The syrup makes them plenty sweet. I used olive oil instead of vegetable oil and left out the onions because I didn't have any.
