Tilapia Pitas

This was very good. I used way more lemon pepper and red pepper and left out the anchovies. It makes a lot of sauce. 3 tilapia fillets weigh over 1 pound, so it's not a lot of fish for all the sauce. I think I might half that next time. I used balsamic instead of Italian because it's what I had.

Mexican Pasta

This was a fine, quick dinner especially if you are short on time and have no meat available! I only used 1/2 an onion, left out the corn and used chili powder, cumin and oregano in place of the taco seasoning. Also added cheese.

Mom's Smoked Salmon Fried Rice

We enjoyed this a lot but I did change it a bit. I used brown rice rather than white (enough for 4 servings). I used red bell pepper in place of the onions because I had no onions. I also added 2 Tbsp of soy sauce and 1 Tbsp of rice vinegar. I felt it needed some kind of "sauce". Loved the flavor of the salmon. Great, fast dinner.

Peach Pecan Sweet Potatoes

Absolutely delicious! I added 1 tsp of cinnamon and didn't have any coffee liqueur, but I did have about 1 tsp of grand marnier, which I put over the top. Maybe the best sweet potatoes I've ever made!

Corn, Sausage and Pepper Chowder

Really delicious! I used a can of evaporated milk in place of the milk and heavy cream. For the corn, I used 2 cans and pureed one can. I also added celery and an extra cup of water because 2 cups of broth did not cover all the poatoes. Great comfort food!

These are quite good. I did use tilapia because we don't have the best fish selection here in Colorado! I added some cumin to the fish but otherwise made as written and it was very enjoyable.

Polenta and Vegetable Casserole

This was OK. My son wouldn't eat it. I probably should have baked the polenta a bit first because it was pretty soggy. I used zucchini instead of eggplant. Really enjoyed the olives on top. Overall not something I'd make again though.

Chocolate Cupcakes with Bailey's Creme Frosting

I made this as a cake in a 9x13 pan and it was very good! The frosting was a big hit, although I did half it since I was just frosting a sheet cake. Great chocolate flavor and a nice denseness.

Eggless Tofu Spinach Quiche

This was not good. Way, way, way too much spinach. I increased the tofu to 12oz per other reviews. There was no mistaking the tofu for eggs. Maybe I did something wrong here, but we couldn't eat it.
