Kale, Swiss Chard, Chicken, and Feta Salad

Really delicious! I added some cherry tomatoes I had on hand and used about 4 ounces of feta. Perfect!

Collard Greens with White Beans

This was a good way to eat collards. I sauteed my onions and garlic in olive oil rather than water, and I only used 1/2 a cup of water after that. It was plenty. I also left out the bouillon.

Quinoa with Salmon and Swiss Chard

Well this is just fabulous! I did grill my salmon with a little olive oil, salt, and pepper. Otherwise made as written and it is so, so good!

Picnic Potato Salad with No Mayonnaise

I enjoyed the flavors in this, but it seemed kind of boring. Feels like it needed more ingredients. I used feta instead of blue cheese and that was nice.

Kale and Cucumber Salad with Lemon Tahini Dressing

Really nice salad, although I didn't have cucumbers so I used carrots, broccoli, and avocado instead. I also used dried cranberries instead of the raisins, and threw in some collards that I needed to use up. I loved the dressing, and it's always nice to have a new way to use tahini. I left the sugar out of the dressing and used olive oil. Yummy!

Green Monster Smoothie

This is a yummy little smoothie! I did not have a banana so I used an apple. Worked great. Also added 1 Tbsp of ground flax seed and used unsweetened almond milk. I used plain greek yogurt, which I eat all the time. If you use vanilla yogurt, keep in mind that you're adding a lot of sugar.

Roasted Vegetable and Couscous Salad

This is great! I did use quinoa instead of couscous. I also added a beet because I needed to use it, and I used olive oil rather than vegetable oil. Absolutely delicious. One of the best salads I've made!

This is just wonderful! I used kale and beets that I got from our CSA. Our bunch of kale was rather small, so I added some spinach as well. Absolutely delicious!

Springtime Strawberry Bars

This is a great bar recipe! Like others, I cut the sugar down to 1 cup and I did not put the almonds in the crust but rather on top. I also used 17oz of strawberry jam. Really delicious and not overly sweet.

Turkey Spaghetti Pie

This is quite good! I made it for 6 rather than 2, and although I didn't have enough tomato sauce or sour cream, it was still delicious! I did add basil and parsley, but otherwise made as written. Nice and easy!

Slow Cooker Vegetarian Minestrone

This isn't bad, it just lacks a lot of flavor. There was too much liquid. I'd cut it down to 4 cups and then add another 1/4 to 1/2 cup of pasta also. The spinach is a really nice touch, but it needs a lot more seasoning.

Chicken with Quinoa and Veggies

This is quite good! I added a can of diced tomato because there just isn't enough tomato if you only use 1. This also made more of a "sauce". I diced my chicken as well, and used 2 cloves of minced garlic. You if you use the diced tomato, you can probably use more basil as well. Very nice, healthy recipe!

Cranberry Pecan Brown Rice Stuffing

My family really liked this. I sauteed my veggies in grapeseed oil rather than margarine. It was a tad on the bland side, but that may be because I used dried parsley rather than fresh. Very versatile as far as other spices that could be added.

Quinoa with Chicken, Asparagus and Red Peppers

This was simply and quick. Like others, I added basil and oregano. I used asparagus, zucchini, celery and tomato. That's what I had and you can really throw anything into this. I also added 2 Tbsp soy sauce, 1 Tbsp sesame oil, and 1 Tbsp rice vinegar because I like a "sauce". It was very good this way.

Fantastic Black Bean Chili

This was indeed fantastic! It gets 4 stars because we did add a little to it. First, I left out 1 can of beans because it seemed it would be really "beany" but I think I'll add them back next time. I added salt, pepper, a small amount of Tabasco, and some liquid smoke. Absolutely awesome that way!

Black Bean Breakfast Bowl

We really enjoyed this! I added fresh cilantro to the eggs since I had some, we used about 2/3 of the can of beans and I split half an avocado between the two bowls. I also didn't use the olive oil to cook the eggs, just sprayed the pan with cooking spray. Quick, easy, healthy...what more can you ask?!

Roasted Asparagus and Garlic

This was a good recipe. I just used 1 bunch of asparagus, and I don't think it was 3 cups. I minced up 4 cloves of garlic, which was plenty. I also cut the wine down to 2 Tbsp and added salt. I put this all in one pouch.

Perfect Ten Baked Cod
