Bacon-Balsamic Deviled Eggs

This is now my go to deviled egg recipe but then it's hard to go wrong with bacon and balsamic! I use bacon bits and dried minced onion and substitute a smoked bacon salt for the celery salt. This also makes a great egg salad.

Peppy's Pita Bread

I have to say that as a general rule I stay away from anything that requires the use of a rolling pin, but am very glad I made an exception in this case. It was so good that I had to make another batch the next day! Used it to make gyros and it was perfect. I have also made it with a mixture of whole wheat flour and whole wheat white flour and while not quite as good (for me) it was still excellent. For me the amount of salt was perfect. I will never buy pita bread again.

Pork Tenderloin with Mustard Sauce

5 Stars for the pork, 0 for the sauce. The first time I tasted the sauce I thought my ingredients must be bad so I threw it out and started over only to find it was just as bad the second time. It's just not even spicy, just unbearably hot; you can't taste the mustard at all. On the brighter side the pork is incredible and has become one of my dad's favorite and most requested dishes. Instead of the 1/3 cup of red wine I just use a berry flavored wine cooler and sometimes add a little garlic. I love that it's so quick and easy!

Vanilla Bavarian Cream Pie

This was fabulous, right up until I folded in the whipped cream which killed the flavor. It ended up tasting the same as if you'd just taken a swig of cream right out of the carton. I notice that most of the other reviewers added something to it, guess I should have tried that because I can see how it might make a nice base.

Chicken Tortilla Soup V

It's a good thing that I decided to double this because my mom said it was the best soup she'd ever had! I doubled the cumin to match the amount of chili powder. Since I'm not a big fan of chunks of peppers I pureed the salsa before adding it and I think it really helped distribute the flavors more evenly. Rather than browning the chicken I brought the broth, onion, garlic and spices to a boil and then added the chicken and let it simmer for a bit before adding everything else. This was so good I had to make another batch for company the next day!

Irish Shepherd's Pie

Was really excited to try this, but ended up being very disapointed. Made exactly as recipe stated but when I tasted it before adding the potatoes it had no real flavor. Ended up adding more ketchup, worcestershire, balsamic vinegar and spices to achieve a satisfying result. I also felt that the cream cheese made the potatoes a little rubbery in texture. Guess it's not bad as a starting point.

Quinoa Chili

Yum! I had never cooked with quinoa before and this was super easy and my whole family loved it. It was really quick to throw together after a long day at work, though I do have to admit I skipped the peppers and zucchini but added some green taco sauce to make up the flavor.

Bread Machine Focaccia

I've made a lot of homemade bread but my mom declared this her favorite! I add extra garlic and sometimes switch out some of the rosemary (not a big fan) for basil. My only tip would be wait to start pre-heating the oven until the bread is in the pan so that it has time to rise before baking. Also as others have recommended a sprinkle of kosher/sea salt on top really adds to it.

Corn and Black Bean Salad

I'd give this 10 stars if I could!! This has become my favorite side dish of all time. It goes with everything (at least when I'm cooking) but I love to serve it with tacos as it makes a great topper. All of the ingredients are things I have in hand and it's so quick to throw together. Not being a big fan of spicy I was a little leery of chili powder and cumin but they give just enough zest without being overpoweringly hot. I do often add some dried minced onion and garlic, and I skip the cilantro. My dad's only complaint is that every time I make this he eats too much of it.
