Sweet Pork for Burritos

This was amazing! I did use half the sugar and skipped the chilies as it had enough spice for us already. I always puree salsa in recipes like this (personal preference) and that helped blend everything together. I blended some of the juices from the meat into re-fried beans which also went into the burritos, that I then froze and have been enjoying ever since.

Cola Easter Ham

Made this for Easter and it was a huge hit. I ended up with about a 4lb ham in order to fit it into my smaller slow cooker (3.5 qt) so halved all the other ingredients. Served it with homemade scalloped potatoes which I expected to be the hit and that was a mistake, I should have made more of the ham! I scored the ham and packed it with brown sugar the night before then cooked it on low for 2 hours before adding the sauce ingredients and cooking for another 3 hours. My family has already requested that I make it again (and again).

Slow Cooker Scalloped Potatoes with Ham

My dad is from Idaho and he always says he's never met a potato he didn't like but he didn't like these and asked me not to make them again. I think for us the Cream of Mushroom soup clashed with the cheese. I did add extra cheese (more than double) to try and save them but it didn't help. They did cook through with 2 hours on high and 3 on low.

The greasy breadcrumbs did nothing for the green beans and while we ate them, it was the unanimous verdict that the leftovers be rinsed off in an attempt to salvage them.

Lemon Chicken Soup II

Yum! This just became one of my top two favorite soups! I used two Lemon Pepper Rotisserie Chickens for the meat so they already had some lemon flavor. Not being a fan I skipped the spinach in favor of an extra carrot. Like others I used orzo pasta instead of rice. I also added dried minced garlic and onion (because I add them to almost everything) as well as some parsley and a little rosemary and thyme. It was amazingly good and really easy.

Homemade Chewy Granola Bars

These were really good, but not at all what I was expecting. To me 'granola' sounds healthy and this was anything but. We just enjoyed it for what it was: a yummy peanut butter and oatmeal bar. I made these for a car trip (substituting mini M&Ms for the chocolate chips to save on mess) and they held up well.

Butterscotch Bread Pudding

You can taste the calories in this (and it's worth every bite). If it wasn't so terribly unhealthy I'd make it every week. It's the perfect desert for a cold dreary day!

Broccoli Squares

These are a great appetizer! I like to leave the tomatoes on the side so they don't make the crust soggy and I add carrots and black olives. Occasionally I've been able to find the crescent rolls in a sheet (instead of individual triangles) and that works great. I usually don't use a full packet of ranch because many people find that a bit too strong. I've also used a cup of sour cream in place of the mayo.

Wild Rice Chicken Salad

Personally I prefer the Chicken and Snap Pea Wild Rice Salad also on this site but this one is pretty good too. I'm really not crazy about the grapes, especially as they get soggy in the leftover salad.

Barbecued Olive Bread

Not bad, not great either. It tastes like exactly what it is: baking mix. Mine burned on the bottom (it's really not that easy to lift it up and check) so I would not place the pan directly on the grill again.

Asian Coconut Rice

This is now my mom's favorite rice and she requests it all the time. Leftovers (if there are any) make an easy desert with a little milk or cream and some cinnamon sugar. I have had trouble with it scorching so I do usually stir it periodically.

Basic Microwave Risotto

I love this recipe! Even when I'm tired and don't feel like cooking I can usually muster up the energy to throw this together. To make it extra easy I use dried minced onion, often add garlic, and apple juice instead of wine.

Luscious Slush Punch

I made this for a bridal shower and it got rave reviews, so much that I was asked to make it for the reception as well. The only problem I had was that it definitely didn't thaw in the time frame given! The second time I made it I froze it in smaller containers (about 3 cups each), let it thaw in the fridge overnight and then threw it in my food processor and it came out perfect! Based on other reviews I also halved the sugar both times.
