Light and Fluffy Coconut Macaroons

SUPER yummy. I had to add an extra egg white to make it stick together enough to bake, and I left them in the oven till they were lightly browned, bc I love them chewy. I will definitely make them again.

Apple Crisp II

Holy cow, this was sweet!! I halved the sugar (used 1/2 cup of brown sugar in the topping, and 1/2 in the apples). There was also too much flour in the topping, as it was kind of pasty in our mouths. Would not repeat. :(

Buttermilk Pound Cake II

I wasn't impressed with the texture of this cake at all. Seemed TOO dense, but also had a strange crumb. The only thing I changed was to add lemon zest to the batter.

Funnel Cakes III

Funnel cakes didn't stick together so it was like individual strands. Had to add a LOT of extra milk to even make it flow-able. Seemed too dense, and salty. There are much better recipes.

Elegant Pork Loin Roast

Reduced the liquids, reduced the sugar, added marjoram, cracked pepper, little salt, and onions cut in 1/8's. Threw everything except cornstarch together in a crockpot on low. Oh, for the apricots and prunes, I subbed the dried fruit that I had and needed to use up. Ended up with dried peaches, cranberries, and cherries.

Braised Balsamic Chicken

It was ok... I ended up with a LOT of very thin sauce. The rosemary really overpowered the dish. I won't make this again.
