Apple Crisp II

Reviewed: Sep. 8, 2014
Holy cow, this was sweet!! I halved the sugar (used 1/2 cup of brown sugar in the topping, and 1/2 in the apples). There was also too much flour in the topping, as it was kind of pasty in our mouths. Would not repeat. :(

Buttermilk Pound Cake II

Reviewed: Apr. 1, 2013
I wasn't impressed with the texture of this cake at all. Seemed TOO dense, but also had a strange crumb. The only thing I changed was to add lemon zest to the batter.

Funnel Cakes III

Reviewed: Mar. 26, 2013
Funnel cakes didn't stick together so it was like individual strands. Had to add a LOT of extra milk to even make it flow-able. Seemed too dense, and salty. There are much better recipes.

Elegant Pork Loin Roast

Reviewed: Sep. 12, 2011
Reduced the liquids, reduced the sugar, added marjoram, cracked pepper, little salt, and onions cut in 1/8's. Threw everything except cornstarch together in a crockpot on low. Oh, for the apricots and prunes, I subbed the dried fruit that I had and needed to use up. Ended up with dried peaches, cranberries, and cherries.

Braised Balsamic Chicken

Reviewed: Aug. 23, 2011
It was ok... I ended up with a LOT of very thin sauce. The rosemary really overpowered the dish. I won't make this again.

Fresh Strawberry Upside Down Cake

Reviewed: Apr. 24, 2011
This seemed like kind of a crazy recipe, with the marshmallows, jello, etc. I enjoyed it, and would consider making it again, although it was not a pretty-looking cake at ALL. Still, it was moist and pretty tasty.

Strawberry Bread

Reviewed: Apr. 24, 2011
While it is moist, this bread is much more a cinnamon bread with some chunks of strawberries than a strawberry bread, it seems. The berries I used were VERY fresh and juicy, having just been picked. I even added 2 additional cups of pureed berries.

Honey Dijon Balsamic Vinaigrette

Reviewed: Feb. 11, 2011
Good as written. I added a little crushed garlic, and some chopped frozen parsley and basil. Also, I used 1/2 balsamic, and 1/2 white balsamic.

The Best Thai Coconut Soup

Really, really fabulous recipe. I wouldn't change a thing, and that is saying something since I ALWAYS mess with recipes, lol.

Fluffy Pancakes

Reviewed: Dec. 12, 2010
Best pancakes EVER! I have never been able to achieve a nice FLUFFY pancake, but here it is! I just added a little bit of vanilla to the batter, but it would be great even without that.

One Bowl Brownies

Reviewed: Oct. 13, 2010
WOW! These are really, really good. I am always the one who loves to eat the edge of the brownies because they're all chewy and dense. This whole recipe turns out like that! I subbed 1/2 cup brown sugar for 1/2 cup of the white sugar, and I might have added a little bit more vanilla, since I wasn't measuring, but otherwise used the ingredients as listed. Mine only needed 30 min. to bake, so watch it after 30. 35 would have made them hard and dry.

Sweet Dinner Rolls

Reviewed: Oct. 12, 2010
Flavor was good, but as written there is WAY too little flour. I added just enough to get it to hold together, but the texture when baked was just not right. The flavor was a little too sweet, and I really like sweet dinner rolls.

Aunt Carol's Apple Pie

Reviewed: Sep. 22, 2010
This rating is for the filling only. It was fine, but definitely not the "10" I am looking for. Seemed awfully pasty and a little flat. It's GOOD, don't get me wrong, but not FABULOUS, and that's what I am looking for.

J.P.'s Big Daddy Biscuits

Reviewed: Sep. 16, 2010
Extremely sticky as written. I added more flour, and the texture turned out pretty well, but it tasted strongly of baking powder. There's a better one out there somewhere.

Banana Cream Pie V

Reviewed: Feb. 16, 2010
I didn't make the meringue, only the banana cream part, but it was SO GOOD!!! I sliced 2 bananas into the bottom of the crust, so it was completely covered.
