Irresistible Irish Soda Bread

I don't like Irish Soda Bread, I just "don't get it" although I keep trying it from time to time to see if I "do". THIS ONE though is totally different, not boring as the others I've tried have been. My husband likes all bread toasted the best and it toasts up great, too.

Baked Pork Chops I

Great comfort food! Hubby's favorite is pork chops, he could eat them every night of the week and he loved these! Only had regular breadcrumbs so added 1 T. oregano and 1 t. basil to them. I might start with half or so of the breadcrumbs and add more if needed next time. Thanks for a really great recipe!

Polish Pound Cake

Absolutely wonderful pound cake! We don't like maraschino cherries so I used 1 c. dried cranberries. I should've tossed them in the flour with the nuts so they would be distrubted more thoroughly throughout. I went with 2 hrs. baking time. The toothpick came out clean. Nothing worse than a dry cake so I went with that. Had a little bit of trouble getting it out of a well-greased/floured pan but that might be because the cranberries mostly fell to the bottom (top) without being tossed with the nuts in flour. Great raves and requests for this recipe at a potluck last night!

Split Pea Soup

This was SO tasty...just perfect!!! My new favorite Split Pea Soup recipe. I was a tad more generous with the marjoram, about an 1/8-1/4 t. I'm thinking that is what "makes" this recipe. I didn't add the potato because the consistency was perfect without it. GREAT recipe, thank you for sharing!

Dilled Cucumber, Tomato and Celery Salad

This was absolutely wonderful. I halved it for just the two of us. Did keep the 1/3 c. water, though, and just really kept checking the dill seed carefully. Only had cider vinegar but that was the only change. Very, very nice taste. Husband always makes a cucumber salad that is quick and easy with just bottled raspberry lite vinaigrette which is great, too. Was just looking for a little change and this did not disappoint. Thank you!

Naan

This turned out perfect on the grill and looked so nice but it was way too much for just two of us. I kept the remaining dough in the fridge for several days (actually, I forgot about it), covered with Seran Wrap. I then baked it as a loaf in the oven at 350. I was sorry that I didn't check the time, I'm thinking about a half hour. Just check when it sounds "hollow" when you tap on the center.

Roasted Carrot Salad

This was a very different, interesting recipe. Lots of taste and texture. I did run the carrots through the food processor with the 1 mm blade (smallest). I only had shredded Parmesan and it needed a stronger cheese, like the blue that it called for. Used torn up romaine lettuce as we don't care for arugula. This makes quite a bit. If there's only two eating it, you'll be eating it for a week. I'll cut it in half for us next time. Oh, and it is very attractive, too! Thanks for sharing.

Creamy Au Gratin Potatoes

I have lots of potato/cheese recipes that are great but this is the only one that I would call "Au Gratin Potatoes". It has the right flavor. I used Gold Rush brand sharp cheddar. It has a stronger taste than others, I think (which we like). I mixed 2 T. parsley flakes in the sauce for color (might try chives, also). Been looking for a long time for an au gratin recipe for potatoes. Thanks!

Six Egg Pound Cake

I haven't been baking for a few years and am just getting back into it. It was great to start with a wonderful success! This cake turned out just perfectly. Nice and moist, not too sweet. Had 4 oz. of cream cheese to use up so whipped that with 1/3 c. confectioner's sugar and 1/4 c. o.j. for drizzling over. I'm back in the saddle again!

Spaghetti with Garlic and Basil

This had lots of flavor! Nice and garlicy. We wanted our carb fix last night but with butter and garlic and this was it. I accidentally poured in 1/2 c. olive oil but still kept to the 1/4 c. butter. Without sauteing, I added 1/2 an onion that I needed to use up and 1 t. each of dried basil, marjoram and red pepper flakes, 1/2 t. each of salt and pepper. We love cheese so doubled it to 1 c. grating a good quality Parmesan and also mixing it in with the hot noodles. Nice change from tomato or creamy sauces. Will definitely make again. Thank you!

Salsa Chicken

So simple and very tasty. I used boneless thighs (our preference) and the Taco Seasoning I recipe from this site except I used 1 T. cayenne instead of 1 t. Very easy with few ingredients.

Salmon Fillets with Creamy Dill

This was absolutely wonderful!!! Salmon has a strong taste but if you want to "mild it down", this is the recipe. I had a nice chunk but it was only .86 ounces, about 1 1/2" tapering down to 1/16". I scaled the whole recipe down to "one serving" to get the quantity of ingredients right (even though the amount of salmon was just right for two). I used dried herbs for everything but the same quantity and added pepper, the same quantity. I added 1 t. garlic powder and then didn't measure, just sprinkled the dill over it to finish. I did go to the 40 minutes for baking. It was PERFECT from end to end! It was moist and flaky. Soooo easy yet could be part of an elegant meal. Thanks for a terrific recipe!

Chicken Salad Pitas

I omitted the carrot and doubled everything else, shredding rather than cubing the Mozzarella. Used just enough Zesty Italian dressing to moisten. This was nice and crunchy and so tasty. A real keeper!

Burmese Chicken Curry

We live where you would never find garam masala so I got a recipe off of about.com Even with that, I couldn't get the black cardamon that is used in it. If you follow that recipe you will have a lot left over so be in the mood for Indian food for awhile. I just left the boneless thighs whole and they fell apart in chunks by themselves after cooking. This was a really good recipe but I will add about double the curry for our tastes next time. Thank you!
