Sausage Egg Muffins

I put shredded Monterey Jack on top halfway through. Used one chipotle chili (canned), diced, as that's all I had on hand and sage sausage for the same reason. These look so nice --they look like they're difficult to make but are so simple. I'll scale it down for just the Hub and I but it'd be nice to serve for holiday brunches, etc. Really different. Thanks!

Overnight Blueberry French Toast

I was never a fan of bread pudding, but this makes a fantastic one! I liked it much better cold as a dessert. I had an 8oz. mixed berry whipped cream cheese and a plain 12oz. one to use up. As someone else suggested, I mixed the cream cheese right in with the milk mixture,and used boysenberry syrup rather than maple. I dusted it with powdered sugar for a bit more sweetness, then poured the blueberry sauce straight over the baked casserole and no one even reached for the extra syrup. You might mistake the very moist bread as not being done but if you refrigerate it and serve it cold, you will see that it is perfect. Good either way, but I'm filing it under desserts. Thanks!

Easy Dump Cherry Crisp

I gave it 5 stars because it is what it is...easy and we were camping. Maybe it was that I thought there was too much of the canned pie filling (used blueberry) and that the focus was on that? Or else I was thinking it needed a crust made of the same topping ingredients. It WAS perfect for camping having few ingredients, easeof making and taste, though, so I will make it again for on the road. Thanks!

Asian Coleslaw

This was so tasty and a very nice change! I like using Napa cabbage so I only used that which gave me 9 c. shredded. We were camping, so I just used 1 t. ginger and 1 T. garlic powder. Used one red and one green pepper, no carrots or cilantro. This was very, very good. It does have a tan color to it that might not appear to be too appetizing to some. I also used chunky peanut butter (our taste) and next time, am going to use shelled peanuts for even more crunch and texture.

Honey Baked Chicken II

Read some reviews and halved the butter but I also halved the honey (for the calories). Left the quantities the same on the (coarse Dijon) mustard and the curry. Only used 3/4 t. of salt. It was just PERFECT for our tastes. I put it in a 9x11 dish and the sauce was already more than half way up the sides of the chicken. I did cover it for the first 45 minutes with foil. Very simple and very, very good. Thank you for such a quick and tasty dish. This would be wonderful over brown rice.

Barbequed Pineapple

BBQ'd Pineapple Very nice side. Steve made this for a larger group, so he doubled it. The good thing about this one, you can cheat and halve/quarter the rings on the buffet table at the last minute if you find you have to stretch it!!!. Lots of inquiries on this one. He made it as written, no changes or tweaks. It was both a hit and --GONE!

Balsamic Pea Salad

I didn't bother to chop the almond slices --for looks. Used Miracle Whip since it was Father's Day (next time, Best mayo) and hub prefers that to mayo. Only had some good shredded Parmesan. In spite of the changes, this is an EXCELLENT pea salad, better than the other ones I have used. I'll be sure to use feta next time as we both love it. Thanks for such an easy keeper!

Cowboy Caviar

Very, very tasty! Omitted the cilantro (personal taste). Easy recipe that gets better as it sits. We had some leftover spaghetti noodles that we sliced up a bit and threw in the following day. It was fantastic! I thought I had Zesty or Robusto Italian dressing but didn't. I would've used that instead of straight Italian but it wasn't even missed. It was quite "robusto" enough on its own. Thank you!

Green Chili Casserole

This was a very nice, moist egg dish. I made it in an 8x8" dish. We roasted two Hatch chilis for it as this batch was particularly hot even for our tastes. I used 1/8 t. salt and pepper, 1/2 t. garlic powder, 1/8 c. Hormel real bacon bits and doubled the cheese. I baked it for 30 min. and it was done perfectly to our liking. Thanks!

Pineapple Cheese Casserole Dessert

We had this at a potluck and just LOVED it! I sought out the person who brought it and she gave me the recipe. She lowered the sugar to 3/4 c. It was perfect. I can't rave enough about it. I never would've paired cheddar cheese with pineapple but it is out of this world and so easy!

Graham Cracker Bars

This was SO good...the CRUST!!! I had a quarter of a can of Sweetened Condensed Milk left from another dessert on this site, so I easily quartered this recipe with the calculate tool. We just thought that this was to die for and very simple. Thanks!

Breakfast Treat

I really did a lot of changes on this one but it was delicious. There is only hubby and I and there was still more than half left (only because I'm trying to lose weight!) I made it in an 8 x 8 glass dish, sprayed with Pam. I used 9 cocktail rounds for the bread, which fit pefectly. I doubled the cheese to 2 c. I layered that on top, then half a green pepper chopped, and half an onion, chopped, then sprinkled Bacos on top of that. I eliminated the butter entirely. I mixed the 4 eggs with only 1 c. of milk, adding 1/4 t. salt, 1/4 t. pepper and 1 t. dry mustard. I still baked it for an hour but maybe this was my mistake. The recipe said to cover and refrig overnight. I did not do this but it never said to uncover it to bake, so I left the foil on which made it a little soupy. The taste was all there though. I will try this again definitely but this time leaving it uncovered and see how it goes. With the changes I made, a definite keeper. Thanks Shari for putting me in the direction of getting this great casserole together!

Super Sausage Gravy

The hub who never made or understood white gravy and always thought it was yucky-looking cooked this up. To make it palatable to himself, he turned it brown. He achieved this by adding a 1/4 t. Kitchen Bouquet and a 1 t. Worcestershire Sauce. He then added 2 T. chives and 1/2 t. prepared minced garlic. He baked up Grands biscuits and he is now a convert and forever hooked. He had the Tabasco out at his plate (yuck!) but I noticed he didn't use it. VERY easy recipe and the bonus is, he's showed "ownership" of it so I have some kitchen time off. Thanks for the recipe, Mr. Evan's, but I have to admit it was his own spicy elk sausage that he used, naturally.

Bronco Burger

We made these last night (I put them together/he grilled). They were as great as all the rave reviews said they were. This will be "the" burgers from now on. Had to knock the quantities down as I only had 1 1/2#'s of meat. Next time I'll make the full amount and freeze them all made up and ready to go. Thanks for a burger we will be anxious to serve. Oh, hubby did agree with your flipping method!

Baked Spaghetti Squash Lasagna Style

I added a green pepper to the onion and garlic saute. Had fresh tomatoes to use up so put those in with a jar of Prego garden style. Used beef bouillion and 2 c. of Mozzarella because that seemed like the right amount for us. Everything else, left the same. This was a very tasty and wonderful vegetable side. Will definitely make again. May use pork sausage to saute veggies in if I ever want to make it into a main dish. Hub doesn't even like spaghetti squash and he even loved it. A keeper!
