Beth's Spicy Oatmeal Raisin Cookies

These are my favorite oatmeal raisin cookies. From time to time I leave the raisins out or add milk chocolate chips. All variations are received very well.

I LOVE this recipe. I made it last year and I am making it again this year, but I will be making a few changes to soften it up a bit and make it a little chewier. I will be adding an extra egg yolk and subbing bread flour for half of the flour total. I am subbing brown sugar for all of the white sugar and using an extra quarter cup of shortening. The shortening will make up for the extra moisture/fat that the bread flour will need and will make for a little more cake-like cookie. The extra yolk and bread flour will amp up the protein making a chewier cookie.

Mini OREO Surprise Cupcakes

These are my friend's new favorite cupcakes. I make them with the one bowl chocolate cake II recipe and they come out great but the Oreos kind of melt in the process. Oh well. Use an Oreo or cookies and cream butter cream and they taste great.

Exquisite Pizza Sauce

This is amazing. Do not cut out the anchovy paste. I've tried it with and without and it is soooo much better with. I am not an anchovy lover, but there is something about that flavor you can't easily replicate. Give it enough time to meld before putting it to use for full flavor but I'd be lying if I said I haven't used immediately from time to time with satisfactory results.

Creamy Peanut Butter Fudge

Made this recipe as stated last night for work today. It turned out really nice considering it was my first attempt at fudge. I will state, however, that it is a tad sweet for my taste and I would probably cut back on the sugar a quarter cup in the future. Not sure what I would need to do to make up for that. Also, I think this might be very nice with a little sea salt sprinkled on top.

This is one of my most loved recipes. I now have it memorized. I add about a quarter tsp of crushed red pepper and use olive oil mayonnaise. Delicious. My mouth is watering just thinking about it.

Jay's Signature Pizza Crust

When I am wanting a somewhat whole-wheat crust (which is often) this is the recipe I reach for. I sub 2 cups of whole wheat flour for the same of the AP and voila. I tried subbing out all of the AP, but the resulting texture was not quite as palatable.

This is my standby chocolate cake for many occasions. It's very versatile. I make it with a patron citronge marmalade filling or orange infused chocolate buttercream and it's a hit.

Grandma Ople's Apple Pie

This is a lovely recipe for what it is, but people must take into account that this is a traditional apple pie, hence the omission of cinnamon. I will rate it 5 stars for the traditional recipe that it is. That being said, I would add 3/4 to 1 tbsp of cinnamon and 1/2 tsp of nutmeg to the apples for my taste. Don't add it to the sugar/butter if you want a pie with a perfect non-muddy brown appearance. This turned out amazing and was a real crowd pleaser. If you are going to make homemade apple pie, don't scrimp on the crust. Go homemade! You can do it!!
