This is one of my new favorite meals! I served it over rice. I didn't have any green peppers but it still tasted amazing! My husband is a picky eater so I thought he might not like the idea of raisins and olives in this dish (he doesn't really like either one), but to my amazement he really liked this dish. I served fried plaintains on the side. This is a keeper!

Fish Tacos with Honey-Cumin Cilantro Slaw and Chipotle Mayo

My husband loved this and he is not a big fish eater. The downside was that I seemed to use every bowl in my kitchen for all the various mixing of ingredients. It was delicious though!

Red Beans and Rice

I like to use chicken broth instead of water to give this a richer taste, and sometimes add some diced ham as well. Wonderful recipe!!

I served this at my reception last weekend and everyone loved it! I may have cooked the asparagus too long initially, because I wanted it to be crisper, but it was still really good!

Best Tuna Casserole

my husband loved this and it was so super easy and quick. I used cheddar cheese soup in place of the cream of chicken but that was the only change I made. It was all gone before the night was over.

These are good, but not too terribly exciting. I'm thinking of trying to add different seasoning to the chicken. The sauce is really good if you make fish tacos.

Marinade for Chicken

Have used this marinade several times and the chicken always comes out tender and full of flavor. I sometimes add fresh garlic. I cook mine on an indoor grill pan. Delicious!
