Blueberry Cream Muffins

We absolutely loved these muffins! I did add just a little cinnamon to the batter. I made some adding the streusel topping recipe from To Die For Blueberry Muffins off this site as suggested by another reviewer and some without. I preferred them as the recipe stated, but, my husband liked the streusel topped. I think they would also be great with a some lemon zest added to the batter.

Peanut Butter and Maple Oatmeal

I love oatmeal and I am always looking for a different way to prepare it. I really liked the peanut butter flavor in the oatmeal, but, I was not a big fan of the maple syrup. I would try it again, but, probably add a little milk to make it creamier and experiment with different sweeteners like honey or agave.

Au Gratin Potatoes on the Grill

I thought these potatoes were good, but, honestly nothing special. I like the idea of cooking them on the grill beside some grilled chicken because it prevented me from heating up the oven. My husband did the grilling, but, if I was preparing it as a novice griller it would have helped if the recipe had instructed me whether to cook direct or indirect heat and what temperature range to grill. My husband grilled on indirect heat on medium high and it was done in about 30 minutes. He did have to move it to direct heat after 20 minutes because the potatoes were still very firm. I think these would be good if they had a little more seasoning and maybe some olive oil added.

Burgers with Grilled Onions

Good classic hamburger, but, kicked up a notch with the grilled onions. Easy to just add the onions right along side the burgers on the grill. True flavor of the beef comes through by just adding a little salt & pepper to the meat.

Del Rio's Mexican Rice

I was torn on how to rate this recipe. Personally, I didn't care for this recipe. I thought it had some "heat" from the jalapeno, but, I didn't think it had much flavor. I think it needed some spices added like cumin or chili powder. I did use rotel instead of just peeled tomatoes and I do think that helped. My husband thought it was pretty good though and tasted more like rice you would get in a Mexican restaurant. The problem I did have though was that the liquid was absorbed into the rice in the 20 minute cooking time, but, even after sitting the additional 5 minutes the rice still had a slight crunch to it. I don't plan on making this again.

Andre's Easy Fruit Dip

I have made this fruit dip for years using just cream cheese and fluff, but, never added the sour cream before. It was very good and not overly sweet. I added almond extract instead of vanilla. This is also good using soft strawberry cream cheese in the tub.

Sarah's Feta Rice Pilaf

Very tasty! The recipe was very easy to get together and had a nice balance of flavors. It was a great accompaniment to my grilled chicken. The only change I made was to use Greek feta because I could not find the Bulgarian feta the recipe stated.

Greek-Seasoned T-Bone Steaks with Cucumber and Tomato Salad

What can I say, but, fabulous! Based on the suggestion of mauigirl I used the greek seasoning recipe from this site with the addition of fresh garlic. I rubbed the steak lightly in olive oil and massaged the dry rub into the steak. It was the perfect balance of herbs with a light citrus taste. I wasn't sure if I would like the salad without any oil added, but, it was very good and had a refreshing lemon taste. Very yummy!

Festive Wild Rice

I took the suggestion of other reviewers and used half white rice and half wild rice. I cooked in chicken broth for extra flavor and added about 4 chopped green onions at the end. Very flavorful and nice texture between the chewy dried cranberries and fresh crunch of the green onions I added.

Tortellini Primavera

I am the submitter of this recipe. In the instructions AR left out to be sure and rinse the tortellini in cold water and drain. If the pasta is not cool, it will melt the cheese.

Mediterranean Beef Meatball Kabob

I thought this was a tasty basic meatball, but, the addition of the toppings are what made this dish. Based on the suggestion from other reviewers - I added some Greek seasoning to the meat mixture. Mine baked in exactly 18 minutes and resulted in a tender juicy meatball. I topped mine with cucumber, tomato, fresh parsley, green onions, feta cheese, and a simple tzatziki sauce made with fresh dill and lemon juice.

Zucchini Raisin Muffins

This was a very moist muffin with a nice crunchy top from the sugar in the batter. I added about 1/2 tsp of vanilla to the batter. Just for personal taste - I would prefer using cinnamon over the nutmeg in the recipe next time. I also was able to make 8 nice size muffins like a previous reviewer. Thanks for the recipe!

Oven Roasted Red Potatoes

Very easy to prepare and flavorful. I took the hint from other reviewers and marinated the potatoes for about an hour. I didn't use as much olive oil as the recipe stated. I just added until it looked very moist.

I thought this was a very easy, light, and fluffy fruit dip. I added just a sprinkle of powdered sugar to it to make it slightly sweeter and it was perfect with my sliced apples.

Mushroom Smothered Steak

Boy, I hated to give this such a low rating because I had high hopes for this product. I love the ease of using the pre-sliced mushrooms, but, we did not care for the texture at all. The mushrooms had a "rubbery" texture in my opinion. Neither my husband or I cared for the flavor either. I used balsamic vinegar and the flavor just didn't work for us. It needed something else in my opinion. If I had added some beef broth and a little red wine I think we would have liked it so much better. We scraped the mushroom mixture off the steak and unfortunately ended up throwing it out. If the texture of a frozen mushroom doesn't bother you - I say give it a try, but, probably add a liquid of some sort to dilute the vinegar taste.

Oven-Grilled Chicken and Vegetables

I think the ease of this dish is great because it came together in minutes and was very quick to cook. Personally though - we prefer a crisper vegetable, so, we weren't big fans of this product. The vegetables were much to soft for us. Based on the other reviews I did add some Italian seasoning to the mix before broiling. I think without some extra flavor it would be very bland.

JELL-O Patriotic Mini Fruit Tarts

This was a such a quick dessert to put together and very good! I used a graham cracker shell because my family is not a fan of pie crust. The filling was thick and creamy and a nice light summer dessert. I will definitely make this again, but, probably just layer like a parfait with fresh fruit and no crust at all.
