Zucchini Raisin Muffins

This was a very moist muffin with a nice crunchy top from the sugar in the batter. I added about 1/2 tsp of vanilla to the batter. Just for personal taste - I would prefer using cinnamon over the nutmeg in the recipe next time. I also was able to make 8 nice size muffins like a previous reviewer. Thanks for the recipe!

Oven Roasted Red Potatoes

Very easy to prepare and flavorful. I took the hint from other reviewers and marinated the potatoes for about an hour. I didn't use as much olive oil as the recipe stated. I just added until it looked very moist.

Peanut Butter Yogurt Dip

I thought this was a very easy, light, and fluffy fruit dip. I added just a sprinkle of powdered sugar to it to make it slightly sweeter and it was perfect with my sliced apples.

Mushroom Smothered Steak

Boy, I hated to give this such a low rating because I had high hopes for this product. I love the ease of using the pre-sliced mushrooms, but, we did not care for the texture at all. The mushrooms had a "rubbery" texture in my opinion. Neither my husband or I cared for the flavor either. I used balsamic vinegar and the flavor just didn't work for us. It needed something else in my opinion. If I had added some beef broth and a little red wine I think we would have liked it so much better. We scraped the mushroom mixture off the steak and unfortunately ended up throwing it out. If the texture of a frozen mushroom doesn't bother you - I say give it a try, but, probably add a liquid of some sort to dilute the vinegar taste.

Oven-Grilled Chicken and Vegetables

I think the ease of this dish is great because it came together in minutes and was very quick to cook. Personally though - we prefer a crisper vegetable, so, we weren't big fans of this product. The vegetables were much to soft for us. Based on the other reviews I did add some Italian seasoning to the mix before broiling. I think without some extra flavor it would be very bland.

JELL-O Patriotic Mini Fruit Tarts

This was a such a quick dessert to put together and very good! I used a graham cracker shell because my family is not a fan of pie crust. The filling was thick and creamy and a nice light summer dessert. I will definitely make this again, but, probably just layer like a parfait with fresh fruit and no crust at all.

HERDEZ® Three Pepper Cheesy Stuffed Jalapenos

Yumm-o! These peppers had such good flavor and the filling was so easy to put together. I had a difficult time finding large jalapenos, so, I should have watched my cooking time a little better because my peppers were a little soft. I will try again and just watch my cooking time, but, give this recipe a try - really good!

HERDEZ® Turkey and Zucchini Enchiladas with Tomatillo Verde Sauce

I didn't really know what to expect from a ground turkey and zucchini enchilada, but, oh my goodness - we loved this recipe! It was so flavorful and easy to put together. The tomatillo sauce was spicy, but, perfect for us. I used taco size flour tortillas and cut a little bit off the top and bottom before rolling to fit perfectly in my baking dish. Give this recipe a try!

HERDEZ® Drowned Beef Sandwich with Chipotle Sauce (Torta Ahogada)

I am not a huge fan of smoky chipotle flavor, so, I used my husband as the judge for this recipe. He LOVED it! He thought the spicy twist as a French dip was wonderful. It had great flavor and the sautéed onions were a perfect accompaniment. Using good deli roast beef made it a quick week night dinner.

Unbelievable Chicken

I didn't know exactly what to expect from this recipe because it looked like a very simple marinade. I was pleasantly surprised because the flavor was very good! We had the leftovers for grilled chicken sandwiches the next day for lunch and it was even better! FYI....I checked google and one lemon is typically 3 tbsp. of juice and 1 lime is typically 2 tbsp. of juice.

Pineapple Grilled Pork Chops

This marinade was so quick to get together and the chops had a lot of flavor. I added some sriracha to the marinade because I was afraid it would be too sweet for our taste. They were very good and we liked the addition of the grilled pineapple.

This was just ok for us. I loved grilled zucchini, but, this wasn't our favorite way to prepare it. I think I would like it better using a balsamic vinaigrette.

Grilled Parmesan Asparagus

Very easy to prepare and great flavor. I also really appreciate using the grill as much as possible in the summer to avoid heating up my house by using the stove. I didn't use quite as much olive oil as the recipe stated - just enough of a drizzle to lightly coat the asparagus.

Marinated Grilled Shrimp

These were fantastic! I took the suggestion of some of the reviewers and used sweet chili sauce (Frank's sweet chili) instead of the tomato sauce and also used it for dipping. Very flavorful!

Kickin' Turkey Burger with Caramelized Onions and Spicy Sweet Mayo

Fabulous! I am always looking for a new way to prepare turkey burgers and we loved this one. I left out the liquid smoke(only because we don't like the flavor). I prepared everything else as the recipe stated and it was so yummy! The caramelized onions and sauce took this burger over the top! I will definitely be adding this to the rotation. Thanks for the recipe!

Savory Sea Scallops and Angel Hair Pasta

I made this recipe according to the directions, but, using half scallops and half shrimp. It was good and had a very light flavor profile. For our pallet we prefer just a little more flavor though, so, after tasting the original sauce I added some white wine, a touch of Dijon, and a few shakes of red pepper flakes. That upped the flavor enough for our taste. Very easy to prepare and the cooking time in the recipe for the seafood was perfect.

Mrs. Patti's Mexican Cornbread

This was your basic Mexican cornbread with the flavors you expect. I thought the flavor was pretty good, but, the texture was very soft. It fell apart when we picked it up, so, we just ate it with a fork. I do think 2 cups of cheese on top seemed a little too much. The cheese got brown and crusty on top which we loved, but, it was very difficult to cut through. If you like Mexican cornbread - this would fit the bill. I would suggest just adding the cheese to the cornbread mix though instead of on top. Probably would reduce the amount from 3 cups also to 1-1/2 - 2 cups.

Crispy Chipotle Lime Tilapia with Cool Avocado Sauce

I think I might be in the minority, but, we didn't care for this fish recipe. I crushed the chips and coated the tilapia. After cooking, the crust was chewy and not crunchy. For those of you that want to make it - I would recommend pulverizing the tortilla chips in a blender or food processor. That would probably prevent the "chewy" texture and enable the crust to get crunchy. I also found it very difficult to flip the fish half way. Tilapia is a very delicate fish and it is easy to break apart. The crust was also falling off in places. I had average size tilapia pieces and 25 - 30 minutes would have been way too long to cook the fish. The general rule for well done fish is 10 minutes baking time per inch of fish.. We only needed to cook about 15 minutes total. I did think the avocado sauce was good, but, it seemed like it was missing something. I think cilantro would have brightened up the sauce and gave it that taste I was missing.

Traditional Creamy Coleslaw

This was definitely a zippier coleslaw than we are used to, but, very tasty! We really liked the slight "heat" you get from the horseradish. It was a tad too tart for our taste. I will make again, but, add a little more sugar next time.

Sweet and Sour Pork Tenderloin

This was a nice healthier alternative to fried sweet and sour pork. We really liked the flavor, but, it didn't get quite thick enough to make a sticky glaze on the pork. I added a small cornstarch slurry and it thickened up perfectly. I will make again, but, next time try with chicken. I am sure it will be wonderful too!
