Corn On The Cob (Easy Cleaning and Shucking)

I am a believer! It was so easy to make this and worked like a charm. The corn was perfectly cooked crisp tender and slid out of the husk without any silks. I cooked four ears for 6 minutes on one side - flipped and cooked an additional 6 minutes. So easy!

Creamy Italian Dressing I

This dressing received mixed reviews in my house. I thought the flavor was good, although it did have a strong onion flavor. I did only use about 1/2 cup of onion as suggested by the recipe author in her review. The only thing I didn't like was that it was very thin and didn't cling to the salad. It was just slightly thicker than milk. I used a good quality mayonnaise, so, I don't know if my onion had quite a bit of juice in it, but, it definitely needed to be thicker for my taste. My husband didn't like the dressing at all. He thought it had too strong of a onion flavor, was too sweet, & didn't taste like a creamy Italian dressing at all. I might try again, but, use less onion and sugar.

Kay's Spaghetti and Lasagna Sauce

The sauce was watery and lacked flavor. I ended up adding another pound of ground beef & quite a bit of additional seasoning. Even after all the "doctoring" it still seemed to be lacking in flavor. The biggest problem for us was the sauce did not cling to the spaghetti at all. I saved the sauce and plan on adding some tomato paste to the leftovers in order to give the sauce some substance and depth of flavor.

Top Ramen® Salad

Simple salad to put together, but, very flavorful. The topping of ramen noodles, sesame seeds, & almonds gave it a nice crunch. The only thing I didn't like was that it was slightly oily. Other than that a very tasty salad.

Grilled Asian Chicken

I liked that the chicken did not need to marinade all day, so, I thought I would give this recipe a try. It was ok, but, nothing special. It seemed slightly bitter and salty to me. It didn't seemed to have a great balance of flavor for us. There are so many really good Asian marinade recipes out there that I don't think I will be making this again.

Deluxe Waffles

I am on the hunt for the perfect waffle recipe and I thought I would give this a try. I made exactly as the recipe stated, but, I added 1 tsp. of vanilla. I think the addition of the folded egg whites made for a light waffle which I liked very much. I also think the flavor was very good. The only problem I had was the waffle was not crispy. I think to be a great waffle you have to have a crispy outside. Good, but, not great. Probably won't make again...guess I am still on the hunt for the elusive perfect waffle.

Chicken Cheddar and Guacamole Burgers

This is the first time I have used ground chicken in a burger without the addition of another protein added to it. We LOVED these! They were juicy & all the flavors worked perfectly together! I made them as sliders instead of full sized hamburgers and cooked them in a heavy skillet, but, other than that made exactly as the recipe stated. Huge hit with my family and I will be making these again.

Guacamole

Absolutely loved it! Perfect meld of flavors! I added just a sprinkle of salt to taste instead of 1 tsp and left out the optional cayenne, but, other than that made exactly as is. It would also be great with some fresh jalapeno added.

Berry Cheesecake Trifle

It was a very lovely dessert to look at, but, once tasted it wasn't anything special. It was a light dessert that was enhanced by the fresh fruit, but, it basically just tasted like a layered pudding parfait. I also prefer pound cake to the angel food cake used in this recipe only because it became a little soggy from the pudding.

Whole Grain Spaghetti with Cherry Tomatoes, Marinated Chicken Breast and Pesto

The chicken was not overly seasoned, but, was juicy and had a nice flavor. It seemed bland and a little dry, so, I added a little more pesto. The additional pesto did add some more flavor, but, the dish still seemed a little dry.

Thick Spaghetti with Marinara Sauce, Arugula and Parmigiano Cheese

I was pleasantly surprised how much I liked this recipe! It was very easy to put together and would be perfect for a quick night meal by itself or as an accompaniment with grilled chicken. The sauce had a nice depth of flavor and didn't taste like you would expect a jarred sauce to taste. The arugula was a flavorful addition to the dish. It did seem a little dry to me.

Roasted Asparagus with Bacon and Feta Cheese

Nice addition to regular roasted asparagus! I only needed one tablespoon of oil since I had a smaller thin bunch of asparagus. Great idea tossing it in a bag because I usually just drizzle the olive oil on my asparagus in the pan and end up with more oil than I would like. I particularly like the feta that once heated was warm, creamy and perfect with asparagus.

Cranberry Apple Stuffed Pork Loin

Absolutely fabulous! The flavors worked so well together and the slow cooking made for a tender, juicy inside with a flavorful crisp top layer. I took a suggestion from Baking Nana and sauteed the onions, apples, & cranberries in a little light butter. I also added some celery for additional flavor and used low sodium chicken broth instead of water. Definitely will be making this again!

Lemon Basil Grilled Chicken

This was an easy marinade using items I typically have in my kitchen. I marinated about 6 hours. The chicken was tender and juicy and we thought it was good, but, not great. The only element we could taste was the lemon juice. It was very tart and seemed to be missing something. I wish it had a stronger basil flavor. There are so many really good chicken marinades that I probably won't make this again.

Lemon Crumb Muffins Recipe

I think there were aspects of this muffin that I really liked, but, it would need a little tweaking to the recipe to work for me. I prepared exactly as the recipe stated, except I added a little extra lemon juice because it did not seem lemony enough. I also thought the crumble was a little powdery. I think it needs a touch more butter to make it more of a crumble. The batter is unbelievably thick, so, don't think you did anything wrong once you make it. Based on other reviews I made a simple syrup with 1/3 cup lemon juice and 1/2 cup sugar and drizzled over some of the muffins while they were hot. The ones that had the drizzle were definitely better than the ones that did not. They were slightly dry and they were definitely not overcooked. The texture is heavier than a typical muffin, but, still good. I would make these again, but, drizzle a little extra of the simple syrup I made on them next time and that may help with the dryness. I think it would be better with a little extra lemon zest added also.

Corn Salad with Lime Vinaigrette

We loved this recipe! I made exactly as the recipe stated with the exception of using a shallot instead of white onion. The flavors worked well together and was perfect for a light summer meal along with the Margarita Grilled Shrimp recipe from this site. This would be even better with fresh corn.

Grilled Masala Chicken with Vegetables

My family is not a fan of the garam masala seasoning, but, I really like the cooking method because it is perfect for summer. No heating up my kitchen and no mess! I tried one packet with the garam masala seasoning and the other packets using a marinade of whole grain mustard, olive oil, brown sugar, lemon juice, & fresh garlic. We did not like the packet with the garam masala. We don't like the flavor and thought it was bland. We did like the packets with the mustard marinade. I did not care for the vegetables because I don't think steamed vegetables have a lot of flavor and I think the texture gets a little mushy. However, my husband did like the vegetables. We both thought the chicken was very moist. I would use this cooking method again, but, switch around the flavors and ingredients in the packet.

Grilled Salmon Greek Pitas

I wasn't sure what to expect from this recipe, but, I was pleasantly surprised! It was light, flavorful, & so easy to prepare! Cooking the salmon in the foil packets left me with no mess in the kitchen or on the grill and was nice on a 95 degree day not to heat up my kitchen! I made exactly as the recipe stated, but, I did doctor up the yogurt sauce. I left out the basil and added cucumber, lemon juice, & fresh garlic to taste more like a tzatziki sauce.
