King Ranch Chicken Casserole III

I wasn't really sure what to expect from this casserole, but, thought I would give it a try. If you are a fan of King Ranch Chicken I am sure this recipe is wonderful. For us though - we didn't like the texture of the corn tortillas in the recipe and it really had that "canned soup" flavor.

Buttermilk Pancakes II

These are a really good basic buttermilk pancake recipe. Had good flavor and was easy to make. I prefer the "Fluffy Pancakes by Kris" recipe on this site though just because I don't always have buttermilk on hand.

Fluffy Pancakes

Perfect pancake - light and fluffy with a nice crisp around the edges. They have great flavor and uses ingredients that I always have around the house. This is also really good if once you ladle the pancakes onto your pan you top with fresh blueberries (or mostly thawed frozen ones) before you flip to the second side to cook. Yum!

Sweet Potato Casserole II

I have been making this for years and it is soooo good. I used canned sweet potatoes instead of fresh just to save time. At Thanksgiving I usually make the sweet potato filling the night before and the next day just top with the pecan mixture and bake. So easy and yummy.

Clone of a Cinnabon

These were so easy and turned out perfect! I made in the bread machine as stated. Per other reviewers I mixed the cinnamon and sugar together with the butter to form a spreadable paste. After cutting I let rise for about an hour and then covered with buttered plastic wrap and put in the refrigerator until the next morning. I took out about 30 minutes before baking and baked at 350 for 20 minutes. They turned out perfect! Will definitely be making again.

Broiled Tilapia Parmesan

This was very good. The fish stayed moist and the topping was a nice compliment to the tilapia. I made exactly as the recipe states, but, I seasoned the fish with salt and pepper and added some cayenne to the parmesan topping.

Best Marinara Sauce Yet

I was so pleasantly surprised by this recipe! It was so easy, simple, and really good. It had a much fresher taste than a jarred sauce. I served it with chicken parm and angel hair pasta. Next time - I will double the recipe though.

No Bake Peanut Butter Pie

This was really good and very creamy. We used a regular graham shell and I do think a chocolate shell would be much better. I softened hot fudge just enough to be spreadable and spread on the bottom and sides of the pie crust. I then topped the pie with spoonfulls of the hot fudge and swirled through the top before freezing. It was a beautiful presentation. I'll definitely make this again, but, probably experiment with different toppings and maybe add some chopped reese cups to the filling.

Ranch Burgers

Not a big fan of this recipe. The texture was more like a meatloaf instead of a burger. Also - didn't think the flavor was that good and was a little salty for us.

Thanksgiving Flavored Turkey Burgers

We thought these were really good - definitely had a strong"Thanksgiving" flavor! I made exactly as the recipe stated and served on wheat buns. We weren't crazy about the cream cheese though. Next time I will try with a whole berry cranberry aoli.

Rich Chocolate Frosting

I thought this icing was really good with a strong cocoa flavor. I used it on the Black Magic cake from this site. My husband was not such a big fan - a little too strong cocoa taste. I think I will probably stick with a buttercream using melted chocolate next time.

All I can say is YUM!!!! This was so good and very chocolatey! The coffee definitely enhanced the flavor. It was even better the day after I baked it. I frosted with a chocolate buttercream. 100% give this a try!

Cheesy Ranch Potato Bake

This was a really easy & good recipe - although very rich! I made the recipe as is, but, I only used 2 tbsp of butter and used yukon gold potatoes. I will definitely make this again, but, next time I will top with chopped green onions and crispy bacon.

Reuben Sandwich II

Yummmmm! I have always loved this sandwich. Instead of deli corned beef - I used a 3 lb fresh corned beef brisket. I browned it in a cast iron ceramic pot and then poured about 18 oz of beer in the pot with the seasoning pack. Cover with the lid and cook at 325 for about 2-1/2 -3 hours. This was just enough time for it to be tender, but, not completely fall apart. Wrap the brisket in foil and cool until sliceable. Always slice against the grain with corned beef. This will also work in your crockpot for probably 8 hours on low - or just do your traditional boil on the stove. Fresh corned beef makes a world of difference. Just slice thin for your sandwich.

Hot German Potato Salad III

This was really good and a nice accompaniment to a reuban sandwich. I used 6 potatoes instead of 9 and increased the bacon from 6 to 8 pieces. I actually didn't even end up using all the potatoes or there wouldn't have been enough sauce..must have been the size of my potatoes. The taste was really good - but, I actually think I might add a few more spashes of vinegar next time.

Bodacious Broccoli Salad

I have always loved this recipe! I made as is - but, I used about 1 cup of mayonnaise. I also used one of the bags of fresh cut broccoli florets in the produce department because I was short on time - I don't think it was equal to (2) whole heads of broccoli, but, it was the perfect amount for the recipe. I also added about 1/2 cup of raisins.

Greek Pasta Salad I

This was a great side dish for the Spinach and Greek Turkey Burgers on this site. I kept the "dressing" ingredients as the recipe stated and it was perfect for us. The vinegar taste definitely mellowed out after letting it sit for about 8 hours. I did change a few of the vegetables in the pasta to suit our tastes. I left out the mushrooms, black olives, and green onions and added red onion, cucumber, & artichoke hearts. Very tasty!

Baked Teriyaki Chicken

I would easily give this 4-1/2 stars! I followed the recipe with the following changes - I used brown sugar instead of white sugar and 1 tsp fresh grated ginger in place of the ground ginger. Everything else was as stated in the recipe. I did add 1 big squeeze of Sriracha Hot Chili Sauce - we like it spicy! I used boneless skinless chicken thighs and cooked them at 375 for 40 minutes basting every 10-15 minutes. After 40 minutes I basted them one last time and broiled them for 3-4 minutes to get a carmelized top. Yummy! Definitely will be adding this to my recipe box!

Carrots Au Gratin

This recipe was fairly easy to get together and I was excited about trying it after all of the rave reviews. It just didn't work for us though. It seemed like an odd combination between the cheesy sauce and the sweet carrots. I think it would be much better with potatoes. The sauce was good - it just didn't meld with the carrots for us.

Lime Cilantro Rice

This was a simple recipe, but, good. Our local Mexican restaurant serves a cilantro rice that my husband loves and this is very close to their recipe. I generally serve this in soft tacos with shredded roasted pork butt in tomatillo salsa, black beans, & queso cheese.
