Summertime Tilapia

Reviewed: May 21, 2012
If I could give this a 3-1/2 I would. I think it had good flavor, but, was a little sweet for our taste. I will try it again, but, next time use a little less sugar and add some red pepper flakes.

Sloppy Joes II

Reviewed: May 19, 2012
I was really surprised how much we liked this! It was quick to make and very flavorful. I did find I didn't have enough sauce, so, I made another half batch of the sauce. Next time I will use a little less brown sugar because it was very sweet. Definitely would be one I make again though.

Mom's Baked Egg Muffins

Reviewed: May 6, 2012
This was really easy to put together and a cute way to present breakfast. I thought it was good as is, but, next time I will definitely kick it up a notch by adding some onion and peppers. I had the same problem as some others seemed to have though. I used a standard muffin tin and there was no way I was going to fit an entire egg into the cup. I had to scramble the eggs and pour into the muffin cups.

Braised Balsamic Chicken

Reviewed: Apr. 22, 2012
We really enjoyed this! I used Italian style diced tomatoes so I reduced the herbs to 1/4 tsp. I also added a chopped clove of garlic. I pounded out my chicken breasts so they were of even thickness to braise. Once cooked I removed the chicken breasts and reduced the sauce to a thick glaze. It was so good - almost a chutney consistency. We will definitely be making this again!

Bones of the Dead

Reviewed: Apr. 22, 2012
I followed the recipe to the letter and unfortunately we didn't care for these at all. They were very easy to make, but, a lot of wait time for the end result. I like the taste of cloves and thought the flavor profile of cloves and almond would be good together. The clove taste seemed overwhelming for our palate and left a lingering aftertaste. Would not make again.

Roasted Garlic Chicken Sausage Caesar Salad

Reviewed: Apr. 21, 2012
This was a nice twist on a classic caesar salad. I would never have thought to be chicken sausage on a salad. Really good!

Chocolate Peanut Butter Milkshake

Reviewed: Apr. 21, 2012
The measurements seemed to be off on this for us. Based on other reviews I started with 3/4 of a cup of peanut butter instead of a cup. This balanced out the peanut butter and chocolate flavor perfectly. It was still way to thick for us though, so, I added another 1/4 cup of milk and then a splash or two more. I would definitely recommend using crushed ice if you want it to blend. The flavor was good though and did taste like a milkshake without using ice cream!

Creamy Vegetable Sandwich Spread

Reviewed: Apr. 21, 2012
Yum! I made using light cream cheese and left out the garlic salt. It was really good - tasted just like a vegetable cream cheese you get at a bagel shop. I served with crackers and veggie strips.

Very simple to put together for something a little more festive than just a juice box for the kids.

al fresco Roasted Pepper and Asiago Chicken Sausage Frittata

Reviewed: Apr. 13, 2012
I made exactly as the recipe was stated. We really enjoy the al fresco sausage, but, this was not one of our favorite flavors. Both my husband and I also thought the ratio of sausage to eggs was off. For our taste - there was way too much sausage. It was a good basic frattata, but, nothing special for us. 4/14/12 Just a comment on this. Although, we didn't think this wasn't one of our favorite dishes last night, this morning I heated it in the microwave and broke up a piece in a warmed wheat tortilla with a little hot sauce. It was really good and made a nice portable breakfast wrap for my husband. I have cut a few slices and froze them. Hopefully once they defrost they will taste good. If so, This would be a great to make the frittata, cut it into 6 individual pieces and freeze. Pull a piece it out the night before and you'll have a quick weekday breakfast wrap.

Grilled Mediterranean Greek Pizza with Sundried Tomato Chicken Sausage

Reviewed: Apr. 9, 2012
I was pleasantly surprised how much we enjoyed this sausage! The pizza was so simple to put together and was really flavorful. Definitely will make again. I think it would be really good with some sauteed mushrooms added also. Al Fresco - you have some new fans!

Potato and Shiitake Mushroom Gratin

Reviewed: Mar. 24, 2012
This was a big hit in my house. I made a half recipe. I used milk and half and half instead of cream. I also used all button mushrooms instead of shitake because I had a hard time finding them in my local store. It had so much flavor from the chicken stock infused mushrooms. I will definitely make again.

Secret Cake

Reviewed: Mar. 23, 2012
This is your basic "Texas" sheet cake and overall I think most people would really like. It is usually a hit at office parties or church potlucks. I think the sweetness of the cake is a nice balance to the icing since it is very sweet. For my family we didn't like the texture of the icing. Although the flavor was good, it has a really gritty texture.

Pasta Deli Salad

Reviewed: Mar. 23, 2012
This was a really simple salad to put together since you are using a premade dressing and very flavorful. My husband really liked the addition of the pepperoni and salami. I do think this salad will be a hit or miss depending on the dressing you use. Be sure to use a good italian dressing.

Beer Braised Irish Stew and Colcannon

Reviewed: Mar. 18, 2012
I really wanted to like this by the number of high reviews, but, this didn't work at all for us. I made exactly as the recipe stated using Guinness dark beer. It turned out unbelievably strong and bitter. The colcannon had good flavor, but, we couldn't eat the stew at all. Recipe called for dark beer....maybe the problem was using Guinness, but, this did not work for us.

Yellow Squash Casserole

Reviewed: Mar. 17, 2012
I think we are in the minority in saying this wasn't one of our favorite ways to eat squash. My family thought it seemed a little greasy and bland for our taste. It seemed like most people really seemed to enjoy it though, so, I would give it a try and you may like it.

Fluffy Fruit Dip

Reviewed: Mar. 16, 2012
I made the dip with orange juice instead of the liqueur because that is what I had in the house. It was a nice compliment to the sweet fruit. I personally would have given it a three star rating, but, my husband really liked it and gave it a five.

Sausage Casserole

Reviewed: Mar. 15, 2012
This was different than the usual breakfast casserole I make and we loved it! I used 4 cups of shredded potatoes and 8 jumbo eggs instead of 6. I also used hot style breakfast sausage instead of the sage flavored. We will definitely be making this again. 10/19/13 I have made this many times and I am now using thawed OreIda hashbrowns. They taste the same as using the fresh and save me a lot of time. I also add a little seasoned salt to the potatoes and bake for 20 minutes by themselves. I then add the egg mixture and bake another 40 minutes. Perfect every time.

Luscious Turkey Bacon Refried Beans

Reviewed: Feb. 22, 2012
These refried beans were just like you get in a Mexican restaurant. They had a great depth of flavor and tasted rich and slow cooked. I used regular bacon because that is what I had in the house - it gave the beans a nice smokey flavor. I left out the salt since I used regular bacon and it was fine. I left the other ingredients the same, but, used (2) cans of black beans and ended up using close to 2 cups low sodium chicken stock. I would definitely make again, but, not on a week night. It was worth the wait, but, took a long time to get to the pefect consistency.

Pepperoni Cheese Ravioli

Reviewed: Feb. 20, 2012
Yum! We loved this recipe! Based on other reviewer's suggestions I did make some adjustments in the quantity of ingredients in order to have more sauce. I left the quantity of the pasta, mushrooms, & onion the same, but, doubled the other ingredients. I finely diced the onion instead of using large wedges. I also used a block of pepperoni instead of slices so I could do small cubes of pepperoni instead of small cuts from the slices. Really good! I will definitely make again.
