Women's Club Sloppy Joes

This was very easy to get together and perfect for a quick meal. It was tangier and had more of a zing than the typical sloppy joe by using chili sauce since it is made with horseradish. I did add a few sprinkles of brown sugar to cut down on the acidity of the tomato sauce. We did not like it with the suggestion of dill pickles, tomato, & lettuce, but, it was very good with coleslaw.

Easy Baked Doughnuts

I think this recipe had several flaws in the directions. First, it was almost impossible to whisk together the batter. It was thick like a biscuit dough and was terribly stuck in the prongs. You would be better stirring with a wooden spoon. Second, the recipe submitter does not state what size cutter you should use. I don't have a doughnut cutter, so, I used a 2-1/2" cookie cutter and a large frosting tip to cut the whole out of the center. It was the perfect size and the doughnut whole did not close up. My yield was nine doughnuts. The recipe also did not state if the baking sheet should be greased or ungreased. I decided to lightly butter the baking pan, but, leave one doughnut on an ungreased section. The entire bottom of that doughnut stuck to the bottom of the pan, so, definitely grease your baking pan. As far as taste goes, if you are looking for a baked doughnut texture this is not the recipe for you. The texture and taste is more like a sweetened biscuit instead of a doughnut. I was expecting that though since it is made with baking mix. The doughnut was very moist. I made some rolled in sugar as the recipe stated and some in cinnamon sugar. We preferred the cinnamon sugar dusting. Personally, we thought the doughnuts were too sugary. If you dipped them in a glaze instead they would taste very similar to cinnamon biscuits you get at Hardees or Carl's Junior.

Chef John's Baked Mushroom Risotto

Absolutely fabulous! This recipe was so much easier than the standard method of making risotto. Cooking it in the oven for part of time freed me up for doing other things to finish preparing my meal. The rice was perfectly tender and creamy and had great flavor. I used arborio rice instead because it is what I had in my pantry. I also used my dutch oven because I didn't have an pan that was oven proof to 400 degrees. Thanks for the wonderful recipe!

Fresh Green Bean and Mushroom Casserole

I am not a fan of the typical "holiday" green bean casserole because I don't like using the canned soup and I think it is very heavy. I was intrigued by this recipe using fresh ingredients and skim milk for a lighter sauce. I was very pleased with the end result! The green beans were not mushy and I loved using fresh vegetables in the casserole. The use of the ranch dressing mix was also a nice addition of flavor and gave you the salt you needed without using excess sodium. I loved the onions and garlic in the panko, but, I do think I would add some more seasonings to the crumbs or even used seasoned panko instead. I will definitely be making this again. Slow-Roasted Beef for Sandwiches

Absolutely 100% fail-proof and FABULOUS! I have made this twice and both times were perfect. I do not have a meat slicer, but, even sliced a little thicker by cutting with a knife the beef is tender and melt in your mouth. Thank you so much for the wonderful recipe! You are a hero in my house!

Insalata Caprese I

I thought the flavors to the salad were great, but, I still think I prefer the layered caprese better than having it mixed together. The cheese soaked in the balsamic giving it an unappealing dark brown color. I also think the balsamic flavor overwhelmed the fresh basil. I totally forgot the red onion, but, I am sure it would be great in the salad. Thanks for the recipe, but, I will stick with the simplicity of a traditional Caprese salad next time.

Grandma's Chicken Chardon

This was an easy recipe to get together and had a lot of flavor! The only thing I did different was to use Italian seasoned bread crumbs and add a little onion powder to the crumbs. We really loved the flavor, but, the chicken was definitely overcooked. I started checking mine at 35 minutes and should have checked it sooner. The chicken breasts I had were larger, so, I thought 35 minutes would be a good starting point. I would start checking yours about 25 minutes and go from there. 45 minutes would have been much too long for boneless breasts.

Vegetable Salad

This was a perfect accompaniment to grilled chicken and a light summer salad. The flavor profile reminded me of a three bean salad. I thought it was good, but, I did miss the different textures you get from a three bean salad. I would make it again because I really liked the corn in the salad, but, I would add either a can of kidney beans or garbanzo beans. Thanks for the recipe!

Stuffed Zucchini Shells

I made the stuffed zucchini several ways. I tried it the way the recipe stated and although it was good, it was a little bland for our taste. I then made several using the same filling, but, added some sauteed red & yellow bell pepper, a little panko, dried oregano, & basil. The extra seasoning added a lot of flavor. This is a great recipe that you could easily adapt to your taste. I will definitely be making again!

Garlic Onion Chicken Fajitas with Lime

This was a different taste than I would normally expect from fajitas, but, they were very good! The citrus gave the vegetables and chicken a bright, fresh flavor. I used one large fresh clove of garlic and a couple of tablespoons minced fresh cilantro instead of dried. I used a green bell pepper, a red bell pepper, and a red onion. I think I may even try pounding out the whole chicken breast, marinating it, and grilling it before adding to the vegetables next time. I served with lettuce, tomato, cheese, sour cream, & salsa. Very tasty and I will make these again. Thanks for the recipe!

Cuban-Style Roast Pork

We absolutely loved this! The rub and the marinade gave the pork great flavor. I roasted the pork shoulder exactly as stated in the recipe and then refrigerated overnight. The next day I cut the pork into chunks and cooked in a 375 degree oven for 20 minutes to get a nice crust and served as carnitas with homemade black beans and cilantro lime rice. Wonderful recipe!

Mom's Chicken En Cocotte

This was a very simple recipe, but, so tasty! I added some some lemon pepper and rubbed sage to the chicken for additional flavor and used only about 1 cup of liquid. The chicken was moist and flavorful and the veggies were perfectly tender with a lot of flavor. Perfect for our Sunday dinner!

Best Baked French Fries

This recipe was fantastic! I cut the recipe in half since it was just my husband and I, but, prepared the rest of the recipe as is. Mine cooked perfectly browned and crisp in the full 40 minutes. I wanted to take a picture, but, they disappeared too quickly! I will definitely be making again. Thanks for the recipe!

Shrimp Lemon Pepper Linguini

We like our pasta with a little more sauce, so, based on the reviews of others I doubled the sauce except for the pepper. The flavor was fantastic and the pasta and shrimp cooked perfectly. The only downside is the quantity of butter in the dish, so, it wouldn't be something I made every day, but, I would definitely make it again for a special treat.

French Baguettes

This bread was perfect! It was a little sticky, but, after the first rise in the bowl I kneaded it a little with some flour before rolling out into the rectangle and it worked fine. The crust was not ultra crunchy, but, it was slightly crunchy with a chewy interior which is exactly how I expect a French loaf to be. Thanks for the recipe!

NO YOLKS® Chicken Noodle Soup

I believe that minimal and simple ingredients make the best chicken soup and this recipe fits the bill! You get flavorful broth with just a few vegetables and tons of chicken and noodles. I love the No Yolks noodles because they don't get mushy and have a great texture. This was a comforting and hearty soup and perfect on a snowy winter's day.

Lemon Garlic Chicken

Very simple to get together, but, really tasty! Don't be hesitant to use the full amount of garlic powder in the recipe. I was afraid it would be overpowering, but, it turned out just perfect. I highly recommend you pound the chicken out to even thickness about 3/4"- 1" thick. It will cook more evenly and quicker while remaining moist and juicy.

Vegan Peanut Butter Brownies

I liked the idea of these brownies, but, unfortunately the recipe did not work for me. The brownie was very crumbly and grainy from the sugar. It tasted similar to a peanut butter bar and less like a brownie. The taste was ok, but, we just weren't fans of the texture.

Easy Garlic Kale

I love kale, so, this simple recipe was right up my alley! I tasted the kale after sauteing for 7 minutes and it wasn't quite tender, so, I added a little chicken broth and covered so the kale would braise for 4-5 minutes. I let the broth cook off and the kale was perfectly tender for our taste. I always sprinkle a little red wine vinegar on top of my kale at the end and it gives it a bright flavor. Thanks for the recipe!

Healthy Chocolate Mug Cake

This cake was very quick to get together used ingredients I normally have in my pantry. The cake did rise quite a bit, but, after I removed it from the microwave it sunk back into a dense cake. I liked the texture better than most mug cakes I have tried. It was moist and dense and not quite as spongy as some. It did have a strong banana & dark chocolate flavor. I liked the bitterness of the cocoa, but, for my personal taste it needed to be a little bit sweeter. It was a little too bitter for me. Next time I would add a little extra honey or opt to add some chocolate chips as the recipe submitter suggested.
