Sweet and Tangy Broccoli Salad

I have made variations of this broccoli salad for years. I used craisins instead of raisins and added about 3/4 cup of grated cheddar cheese. I made the sauce as is and thought it was a little sweet for our taste. I added a little more mayo and vinegar and it was perfect. If you like it really sweet - I would make as is. If you prefer a tangier sauce I would start with 1/4 cup of sugar and adjust according to your taste. Thanks for the recipe, Dina!

Broccoli-Cheese Corn Bread

This recipe had mixed reviews in my house. I made it exactly as the recipe stated, except, preparing as a muffin instead of in a pan. I thought the flavor was good, but, it was really dense and heavy. My husband didn't care for it at all. In his words "it has too much going on". Most reviewers seemed to really like it - so, I think I must be in the minority. Just a little too heavy for us.

Baked Mexican Rice (Adapted from Caitlin's Mexican Rice)

I made this recipe as is the first time and thought it was good, but, was bland for our taste. I think if you like things without a lot of spice or seasoning you would like this as is. Based on this recipe I would give it a 3. With it as a starting point - I made it a second time cooking the rice in chicken broth and adding cumin and chili powder while cooking. After it was cooked instead of layering I mixed the sour cream, green chilies, monterey jack, olives, 1 can mexicorn, and 3 green onions. Topped with the cheddar and baked according to directions. I think it is a great starting point. Try it as is and then adjust to your taste. Thanks, Kristina!

Caitlin's Mexican Rice

Red, White, and Blueberry Fruit Salad

Simple to make, but, delicious! The lemon juice really brightened and enhanced the flavor of the fruit. I did use splenda instead of sugar to cut back on some of the calories.

Lisa's Favorite Carne Asada Marinade

We loved this! I made exactly as the recipe stated except I used traditional flap steak instead. I also didn't marinade the entire 24 hours since flap steak is so thin. It was so flavorful! I will definitely be making agin. Thanks, Lisa!

Refried Beans Without the Refry

These were so good! Really easy to put together and cooked perfectly in 8 hours. I made exactly as the recipe stated, but, I used 5 cups low sodium chicken broth and 4 cups water. Much fresher tasting than what you get out of a can.

Amy's Cilantro Cream Sauce

I made this exactly as is except I left out the celery salt. It was creamy and tangy and we really liked it. I served with carne asada, but, I think it would also be really good with chicken or fish tacos.

Spicy BBQ Chicken

We really enjoyed this. I prefer my barbeque sauce tangy and this fit the bill. It was tangy and had a little bit of heat. We did cook the chicken on indirect heat instead of high heat. I think if it was cooked on high heat it would have burned before the chicken was done. Crank it up to high to heat the grill and then turn down (about 375 on our grill thermometer).

If I could give this a 3-1/2 I would. I think it had good flavor, but, was a little sweet for our taste. I will try it again, but, next time use a little less sugar and add some red pepper flakes.

Sloppy Joes II

I was really surprised how much we liked this! It was quick to make and very flavorful. I did find I didn't have enough sauce, so, I made another half batch of the sauce. Next time I will use a little less brown sugar because it was very sweet. Definitely would be one I make again though.

Mom's Baked Egg Muffins

This was really easy to put together and a cute way to present breakfast. I thought it was good as is, but, next time I will definitely kick it up a notch by adding some onion and peppers. I had the same problem as some others seemed to have though. I used a standard muffin tin and there was no way I was going to fit an entire egg into the cup. I had to scramble the eggs and pour into the muffin cups.

Braised Balsamic Chicken

We really enjoyed this! I used Italian style diced tomatoes so I reduced the herbs to 1/4 tsp. I also added a chopped clove of garlic. I pounded out my chicken breasts so they were of even thickness to braise. Once cooked I removed the chicken breasts and reduced the sauce to a thick glaze. It was so good - almost a chutney consistency. We will definitely be making this again!

Bones of the Dead

I followed the recipe to the letter and unfortunately we didn't care for these at all. They were very easy to make, but, a lot of wait time for the end result. I like the taste of cloves and thought the flavor profile of cloves and almond would be good together. The clove taste seemed overwhelming for our palate and left a lingering aftertaste. Would not make again.

Chocolate Peanut Butter Milkshake

The measurements seemed to be off on this for us. Based on other reviews I started with 3/4 of a cup of peanut butter instead of a cup. This balanced out the peanut butter and chocolate flavor perfectly. It was still way to thick for us though, so, I added another 1/4 cup of milk and then a splash or two more. I would definitely recommend using crushed ice if you want it to blend. The flavor was good though and did taste like a milkshake without using ice cream!

Creamy Vegetable Sandwich Spread

Yum! I made using light cream cheese and left out the garlic salt. It was really good - tasted just like a vegetable cream cheese you get at a bagel shop. I served with crackers and veggie strips.

al fresco Roasted Pepper and Asiago Chicken Sausage Frittata

I made exactly as the recipe was stated. We really enjoy the al fresco sausage, but, this was not one of our favorite flavors. Both my husband and I also thought the ratio of sausage to eggs was off. For our taste - there was way too much sausage. It was a good basic frattata, but, nothing special for us. 4/14/12 Just a comment on this. Although, we didn't think this wasn't one of our favorite dishes last night, this morning I heated it in the microwave and broke up a piece in a warmed wheat tortilla with a little hot sauce. It was really good and made a nice portable breakfast wrap for my husband. I have cut a few slices and froze them. Hopefully once they defrost they will taste good. If so, This would be a great to make the frittata, cut it into 6 individual pieces and freeze. Pull a piece it out the night before and you'll have a quick weekday breakfast wrap.

Grilled Mediterranean Greek Pizza with Sundried Tomato Chicken Sausage

I was pleasantly surprised how much we enjoyed this sausage! The pizza was so simple to put together and was really flavorful. Definitely will make again. I think it would be really good with some sauteed mushrooms added also. Al Fresco - you have some new fans!
