Egg-Free Low-Fat Oatmeal Cookies

pretty great for a low fat free cookie...I also made my own apple sauce. just chopped a couple apples, popped them in the microwave with a little water and cooked them a little before blending them. (just have to let it cool a bit before adding it to the mix) I also added a splash of rape seed oil. Though the cookies didn't 'flatten out' they were moist and soft. This recipe is a keeper!

Coffee Shortbread

very very good! making the second batch now -I also had to chill the dough for an hour before I was able to work with it. But all in all it's a great recipe! Adding chocolate really makes the flavors come out..loved it!

Singapore Noodles

super delicious, full of flavor no doubt about it! I added more soy sauce because I love it and took out the sprouts because my husband hates it. But even he said how awesome this dish was and he is hard to please with anything involving curry. Awesome! :D

Asian Orange Chicken

This recipe was great and not so difficult to make at all. It was quite tasty and was a total hit with my dinner guests. Even my husband loved it and he isn't a fan of Asian food. By the end of the evening it was ALL gone!! The only thing I can say is that I did eyeball the ingredients as I'm not the type to measure everything exactly. You have to experiment with what you like and don't like. Also if you are doubling the recipe make sure to fry the chicken in small batches as if you put it all in at once it will get muddled together and the pieces won't be as crispy. I recommend a deep fryer for this as the chicken would get more evenly browned. But overall it was delicious and I can't wait to make it again! :-)

Black Chocolate Cake

This cake is absolutely wonderful. I did take a few other's suggestions on using coffee instead of plain water though. I have never received more compliments on a cake before. I'm making two this week alone for two celebrations. I don't think it will be enough!

Easy Curry Couscous

Wonderful! If you are a fan of couscous and curry this is your meal. I only changed two things. I ran out of curry powder and was quite low on olive oil so I used red curry paste and a little butter. Worked great and the taste is fantastic. This is a meal I will be making more often. Quick and delicious!

Simply wonderful! Was a little afraid of the lumpy batter at first but I think it makes all the difference. Hubby loved them too and he doesn't normally eat breakfast stuff. Thanks for the recipe!

Irish Stew

Wonderful! I made this for tonights dinner and paired it with some home made Irish brown bread and it was sooooo good! It's now two hours later and I'm still stuffed :-) I only made a couple of small changes.. I used beef broth instead of plain water and I followed someone else's advice about adding the parsnips with the potatoes. I'm a fan of parsnips now! Thanks for the recipe!
