About this Cook
My favorite things to cook
Soups, stews, poultry, pasta, and cakes. Except for the cakes and desserts, I try to cook low fat and high fiber.
My favorite family cooking traditions
My father was born in Sicily so our family cooking traditions are firmly rooted in Italian cuisine. I also enjoy other ethnic cuisines such as Middle Eastern, Far Eastern and Mexican.
My cooking triumphs
My cakes are very well received. And my carbonara is always in demand for holidays.
My cooking tragedies
My biggest cooking tragedies have been homemade frostings/icings. I haven't been very successful with fish, either.

Original Old Bay(R) Coleslaw
This is a very good recipe, and quick and easy to make. I made the sauce exactly as listed, though used light Miracle Whip. The Old Bay Seasoning gives it a little bit of a refreshing bite. I used a bag of shredded slaw cabbage with carrots instead of chopping my own. The recipe made a perfect amount of sauce for one bag of slaw cabbage.

Zesty Quinoa Salad
This is a delicious, easy-to-make salad. I made exactly as described, no substitutions. It was a big hit at the family reunion!

Low-Fat Blueberry Bran Muffins
These muffins were absolutely delicious! I've been looking for a low-fat, high fiber muffin recipe, and this is it. I had to make a couple of substitutions, but I'm sure these would have been equally delicious as written. I couldn't find wheat bran so I used 1 1/2 cups of oat bran. And I substituted 1 cup almond milk (original, 60 calories per cup) for the nonfat milk. Everything else was as written. Thanks for sharing!
