Chef John's Beans and Greens

Hands down one of my favorite meals. I don't know what escarole is and can't get it at my regular grocery store, so I just use arugula. The kid get's her serving before the greens are added and she loves it too. Only problem. . .there is never enough!

Excellent, rave reviews. Everyone asked for seconds which I didn't have because I only made one recipe-worth. I used half a can of coconut milk and half a can of coconut cream in place of the entire can of coconut cream. I would say it was still a little too sweet. I would probably just use the coconut milk next time and add sugar or simple syrup as needed. I would imagine the brand of coconut cream makes a difference. Mine was sweetened with corn syrup, a sweetener that all too easily comes across over-sweet.

Breakfast Quesadilla

This recipe has plenty of potential, but following it by the book ended in a rather bland meal with more fat than should be necessary for the flavor offered. This poor opinion may stem from the fact that we kinda take our mexican food seriously and like to pull flavor from spices, care in preparation of meats, etc as opposed to cheeses, sour cream, canned salsa and prepared guacamole. Oh wow, now I feel like a snob. Sorry. All that to say, recipe is a good basic starting point but feels lacking in depth of flavors. If you are into american/mexican flavor, this is going to be right up your alley.

Good choice for big party. Wouldn't be good for health to consume on regular basis, but fits as a good pallet clearer and filler with more expensive main dish.

Grilled Tarragon Mustard Chicken

Used about 4 T of fresh tarragon from the garden, and it turned out awesome. Did leave marinating at room temp about 30 min. This is my new go-to last minute grilled chicken recipe.

Beef Medallions with Caramelized Pan Sauce

This is definitely a special occasion meal. Having to buy a specialty bottle of wine to make the sauce is worth it, but hard on the budget for a weekday meal. I increased the recipe to 6 and had to use two pans, a bummer. This also seemed to increase the "carmelization" time of everything. The recipe took much longer than expected, but it came out perfect. Next time I will invest in higher end cuts of meat (I did not use tenderloin) and the texture will be perfect too!

Salad Nicoise

Though we liked the flavor of this salad, I decided to give it 3 stars dut to the amount of prep (boil potatoes, eggs, blanch beans), as well as the specialty ingredients (olives/anchovies) remainders of which would sit in my fridge unusued - as these are not staples in other recipes we use. However, I do like the style of salad and will likely continue tweaking this recipe until I can fit it into our budget/time frames.
