Kalua Pig in a Slow Cooker

Slow Cooker Spicy Black-Eyed Peas

Wow! I grew up on Black Eyed Peas as my mom is from Arkansas. I was never really fond of that dirt kind of taste. This is with out a doubt the best recipe I have ever tried. I did add some collard greens in the last hour, only took 5 hours on low in my slow cooker and as I do in all veggies because of my southern roots, added just a touch of sugar! Incredible!!!

Saucy Chicken and Asparagus

This was perfect and really nice comfort food type casserole. The only suggestion I would make is DO NOT cook the asparagus first and DO NOT used canned. It was delicious!

3BC (Best Baked Bean Casserole)

Very good, but too sweet. Next time will leave the brown sugar out of the beans and just sprinkle on top of the beans and crumbled bacon. Other than that its a really good recipe with nice subtle flavors. Nothing is overpowering, but all blend well for a sweet savory smokey flavor. Comfort food!

Toad In a Hole

Make these all the time, however it is not a Toad in the Hole. We call them Egg in a Basket, Toad in a Hole is Sausage in Yorkshire Pudding. Either way, its a great way to have your eggs and bread. The cheese is a nice addition I had not tried before.

Slow Cooker Fruit, Nuts, and Spice Oatmeal

I didn't have any apples but used a fruit and nut mix I had gotten at the healthfood store. Cooked overnight on warm because I knew low would be too high. Turned on low for one hour when I got up. Added a little milk and brown sugar and it was pretty good.

Breakfast Sausage Casserole

We love the sweet and savory flavors so we use Hawaiian Sweet bread and maple sausage. We then use extra sharp cheddar for the bite. I also add just a couple grinds of nutmeg. Serve with Vermont Real Maple Syrup. Unbelievable!

Barbeque Beef Casserole

I used 1 cup of BBQ sauce, added a can of kidney beans and put a layer of sharp cheddar cheese between the meat layer and the cornbread.I also only used two boxes of Jiffy Corn Muffin mix. I think it would be good with creamed corn in the cornbread to make it a little more moist and we love corn! The only negative review was from someone that doubled the sauce and halved the meat. Go figure! This recipe is so easy and delicious! Great leftovers for lunch too.

Carrot Cake III

This is without a doubt the best carrot cake ever. We've tried several variations and we think the best is definitely with the pecans in the cake but not in the frosting. If you want to put them in the frosting, be sure to chop them up fairly small. Blue Ribbon cake for sure!
