Extra Easy Hummus

Fast, Easy & Delicious! I made a few modifications based on some of the reviews: 1T sesame oil in place of the olive oil, more garlic, less cumin. I added juice of half a lemon, a healthy shake of cayenne pepper, 2 T roasted red pepper and about 1/4 cup of the reserved liquid.

French Bread Rolls to Die For

These are terrific! I made them in my bread machine on the dough cycle and used one cup of ww flour along with 3 cups bread flour. Other than that, no substitutions.

Slow Cooker Pork Cacciatore

I made this recipe exactly as written, except I substituted parmesan cheese for the mozzarella. It was delicious. It does make a lot of sauce. I put the extra in the freezer for another use...probably w/ more pork chops in another installment of this recipe. My picky ten year old declared "really good, I'd like to have this again".

Apple Cider Beef Stew

Zing! We loved the flavors of this delish stew. I have an abundance of apples and cider from a recent trip to a pick-your-own orchard. I also just bought a whole beef tenderloin for a dinner party. The butcher trimmed the end and packaged separately for stew. I made the recipe as written, and well, it's just about the best stew we've ever tasted. Thanks for sharing!

Country Apple Dumplings

Everyone loved this! I had small Jonathan apples (about the size of a clementine). I peeled, cored and halved them. I used a half for each crescent triangle. I used a can of Ginger Ale since that's what I had on hand. Otherwise, I followed the recipe to the letter. Outstanding. Hubby said, "put this in the rotation AND don't forget to serve it at Thanksgiving"!

Cinnamon Raisin Bread I

Absolutely Delicious! Hubby says better than the pick-two bread restaurant up the street (you know the one)! I made this recipe as written BUT with a couple of minor changes: I used Bread Flour AND I split the ingredients in half and used my bread machine for the mixing, kneading and first rising. For the first half batch, I made two loaves in my oven. For the second half, I rolled the dough out into a longer rectangle and sliced into 24 rolls. Those are three pans of eight each--breakfast for my family, and am sending the other two pans home with my children's friends. Oh, yes--30 minutes was plenty of time in both of my ovens. Delicious! I used 2 cans of backfin crabmeat (8 oz total), 3 eggs and omitted the crust. Served with a big green salad. I'm adding this to my rotation of family favorites!

Puerto Rican Pork Roast

UMMMM! This is delish! I used an 8+ lb. pork picnic. I added 1 T white vinegar. I used jarred garlic and dried oregano since that was what I had on hand. I baked at 425 for 2 hrs, fat side down, turned it, and continued baking for another 2 hrs, fat side up. I used my enameled cast iron covered dutch oven which really retains heat and moisture. Suberb! Thank you for sharing this recipe!

Glazed Lemon Supreme Pound Cake

Delicious! I didn't have apricot nectar so I substituted orange juice. I also used instant lemon pudding instead of lemon gelatin. A big hit with the entire family!
