Harvest Pumpkin-Oatmeal Raisin Cookies

Love these cookies. Love how soft they were. I used chopped pecans and golden raisins since that is what I had on hand. I also didn't have quite enough pumpkin (I've been cooking with pumpkin a lot and didn't realize I was so low!) so I had to use about half a cup of applesauce to replace it. They were excellent - however I have a feeling that I will enjoy them even more with all pumpkin!

Gnocchi with Sage-Butter Sauce

What put this over the top for me was I used it on homemade gnocchi. I love sage, garlic and browned butter. The little crispy bits from sauteeing the gnocchi just was fabulous. :) I used fresh sage since I had it on hand.

Maple Basted Roast Turkey with Cranberry Pan Gravy

I couldn't find it in myself to make cranberry gravy. As it was, Grumpy would not eat anymore of the gravy that I did make because the maple syrup made it too sweet. I will stick to a traditional roasted turkey. Turkey itself was delicious, but all the pan drippings are a waste with the sweetness that is in there.

Turkey Bacon Breakfast Burrito

I really liked this. I'm sure with avocado I would have loved it but I didn't have avocado. I love cilantro so that is probably what makes this recipe for me. I added a little homeamade tomatillo salsa instead of regular salsa because I like more kick and I used homemade tortillas.

Roasted Beets 'n' Sweets

LOVED this recipe! I made adjustments to suit my own taste and made this dish over the top for me. My only disappointment was my beets were not "beet red" so the colors didn't pop as much as I wanted them to. I added some dried sage to the garlic, salt, sugar, pepper and oil with the potatoes and onions. I also added about 1/2 teaspoon cayenne pepper for a little heat. Can I say this enough? I LOVED IT!

Linguine Pasta with Shrimp and Tomatoes

I had to adjust some of the ingredients to fit what I had on hand. I used leeks, garlic powder and instead of shrimp, went with chicken. I also subbed 1/2 cup of chicken broth for 1/2 cup of the wine because Grumpy is not a huge fan of wine (but I am!). I loved the sauce! Would make this again for certain :)

Roasted Tomatillo and Garlic Salsa

I deseeded the jalapeno's before roasting them to kill the heat some since I knew Grumpy wouldn't be able to handle it! I had never used tomatillos before but had received them in my weekly field-goods package. I found this recipe and loved the idea of roasting. I had super huge garlic cloves and no cilantro to be found in the grocery-so I used the fresh cilantro "paste" in a tube (about a tablespoon). Turned out really well. Ate this on steak fajitas on homemade tortillas. DELISH!

Mediterranean Chickpea Salad

This was delicious! I don't keep fresh parsley in my fridge, but I always have cilantro, so I subbed that. I also had sharp cheddar instead of mozzarella and used hierloom baby tomatoes. So good! Even Grumpy, who proclaims to hate chickpeas liked this salad and took it in his lunchbox! :)

Stuffed Cabbage Rolls

This was absolutely delicious and I was so proud of my first attempt at making the rolls. Grumpy loved them! I used ground venison and had leftover rice so I just used that (1 cup) as well as increased the onion (1 small) and added a good few shakes of Worcestershire sauce. My mom always baked these in the oven but I really like cooking these on the stovetop. Great method!

Vanilla Ice Cream V

I mixed the sugar, 2% milk (my choice instead of half and half, heavy cream and sugar until the sugar had dissolved. Then I placed in the ice cream maker and made per the instructions of the ice cream maker. I used vanilla paste in place of the extract so I could have the little flecks of vanilla bean. Delicious. My aunt said it was the best ice cream she had ever eaten!

Beef and Broccoli Stir-Fry from Birds Eye®

This was good for a quick weeknight meal. I did make my own white rice and used Soyaki sauce from TJ's. I didn't have beef so used chicken. Taste was not bad at all but I much prefer fresh veggies over frozen in stir fries.

Maple Banana Bread

This is a great recipe and I love there is only maple syrup as sweetener. I've made this before and always have added walnuts, but this time I was out so I didn't. Still love it, even without the walnuts. :) Spread with a thin layer of maple cream for a super delicious and mapley flavor!

Barbequed Potato and Garlic Scape Packets

We had never had garlic scapes before so when I saw them at the Farmer's Market I grabbed them right up! I added a little red pepper and onion to the potatoes (for color and flavor) and we loved them! I also used I can't believe it's not butter spray in place of the oil.

Fast English Muffin Pizzas

I love english muffin pizzas. The only thing I do different is I lightly toast the english muffin first or it is soggy on the bottom. Very yummy, very quick and so simple when you need something fast!

Megan's Granola

I halved this recipe and it still made a LOT of granola. Great if you have a large family you are feeding, but for us I would probably half it again. I ended up making several substitutions as I did not have all ingredients listed in the recipe. I had no wheat germ or oat bran but I had ground flax so I used just that. I had no honey so I used pure maple syrup. I had no sunflower seeds so used what I did have which was filberts and almonds. I also added huge organic coconut flakes and Trader Joe's tropical fruit mix and dates. This is a great base recipe and I was very happy with my results. Definitely will keep this one on file for future use!

Sauza® Southwest Margarita

Very pretty drink! I used Sauza Blue Silver Tequila for the recipe. This was very smooth and tasty. I prefer a little less sweet however and feel that can be controlled by the amount of sugar in the margarita mix (made my own mix of 1/2 cup water, 1/2 cup lime juice and 1/4 cup sugar). I would probably reduce the sugar for my mix the next time.

Easy Sausage Pizza by Johnsonville®

I used tofuyan pita breads for the crust. I also used Johnsonville's Hot ground Italian Sausage instead of mild and pre-cooked the sausage. Was a quick and easy meal, would make again.
