Fajita Seasoning

This was awesome! I omitted the corn starch because I'm on a low-carb diet and it still was just absolutely phenomenal. I'll be making this one again and again!

Creamy Chicken Tortellini Soup

Here's the thing- as written, this recipe is a GREAT base, but it's pretty bland and I'd probably give it 3 stars. But with some VERY simple changes this is a solid 5 and I don't want to discourage others from making it by only giving it 3. Here's what I changed: Saute 1 small, diced onion in 2 Tbsp of butter with 2 tsp minced garlic. Add thyme (increased to 1 tsp), black pepper (increased to 2 tsp), 1/2 tsp salt, 1/2 tsp red pepper flakes, 1 Tbsp poultry seasoning. Add this mixture to the soup. I also decreased the spinach by about 1/2 a cup because there was just SO much spinach in the soup. After the changes (none of which really change the basic recipe) this soup is PHENOMENAL!!

Chicken Taco Filling

Good basic recipe for shredded chicken. Used boneless thighs. Just a tip: to save time when shredding chicken, just put it in your stand mixer and use the paddle attachment, it will be shredded in no time.

Perfect Cauliflower Fritters

These were quite good. Full disclosure, I didn't stick to the recipe exactly as far as the cooking method, but I did stick to the ingredients list other than subbing garlic salt for regular salt. Rather than adding milk (I left it out) and pan-frying, I upped the parmesan to 1/4 C and ran all of the ingredients through the food processor. I spooned the mixture onto a greased baking sheet and flattened into nugget-like shapes. I baked for 15 minutes at 350 and then flipped the nuggets and baked for an additional 15 minutes before serving with a dipping sauce made of sour cream (the bacon and green onion flavors reminded me of a baked potato!), sriracha, black pepper, and a tiny bit of lemon juice. Delicious!

Johnsonville Zesty Italian Sausage Pasta

I enjoyed this, but I did make some changes. I sauteed mushrooms with the garlic and onion. I used fresh tomato rather than canned. I added strips of red and yellow pepper. I added Italian seasoning, garlic powder, a little crushed red peppper, and rosemary. lol I guess I just used the recipe as a jumping off point, but it worked well!

Whipped Sweet Potato Casserole

My husband hates sweet potatoes and only tried these to make me happy....then went back for seconds! Added about a teaspoon of cinnamon and upped the nutmeg to a teaspoon as well. Topped with brown sugar, melted butter, and pecans and then baked for 30 minutes. Topped with marshmallows and baked till golden.

Stir-Fry Chicken and Broccoli

As written, 3 1/2 stars. With some simple changes, definitely a keeper! It was fairly bland before changes were made. Upped garlic to 2 tsp, sambal oelek to 2 tsp. Added 1/4 tsp black pepper, 2 tsp sriracha, 2 tsp fish sauce, 2 tsp lemon juice, 1 Tbsp rice wine vinegar, 1/2 tsp garlic powder, 1/2 tsp onion powder, and 2 packets of Splenda. PERFECT! Served over brown rice cooked in chicken broth. This recipe would lend itself well to pretty much any stir fry veggie or meat.

Grilled Vegetable Salad

This wasn't terrible, but we didn't really enjoy it. The tastes of grilled veggies are so wonderful on their own, the vinaigrette really masked and overwhelmed their flavors.

Oven Baked Omelet

Great recipe! Resulted in a rich, creamy egg dish. I was the only one eating so I scaled this down to one serving and baked it in a large ramekin. I did add a little garlic powder, paprika, and black pepper. Next time will also add some cheese to the egg mixture. This would also hold up to other mix-ins, like sausage pieces or veggies. Yum!

We enjoyed this one. I did add garlic powder and white balsamic vinegar. Rather than basting while cooking I tossed the veggies with the sauce mixture and allowed them to sit in the fridge for a couple of hours before grilling, worked perfectly.

Polish Link Sausage and Cabbage

Although this is ok, it's very bland. Easy to take to 4+ stars with a few adjustments. Added 1/2 of a sautéed onion, seasoned salt, red pepper flakes, garlic powder, and a little bit of caraway seed. Kept covered while simmering, stirring occasionally. This was a really great dish after adjustments were made.

Meatloaf Cupcakes

The meatloaf was EXCELLENT but the sauce was lacking. It was so overly sweet and lacking any balance. I added 1/2 tsp soy sauce, 1/2 tsp roasted garlic powder, 1/4 tsp black pepper, and 1/4 tsp seasoned salt. Next time I'll cut the sugar way back, at least in half if not more. I would recommend using thicker potatoes for this as I tried to be lazy with instant potatoes and they never really set up on top of the "cupcake."

Basil Chicken Ravioli Carbonara

This is the third dish I've tried with the Progresso Recipe Starters and definitely the most impressive without changing the recipe too much. I did add 1/2 tsp salt, 1/2 tsp black pepper, 1/2 tsp paprika, 1/4 tsp red pepper flakes, used freshly cooked crumbled bacon. I did sub lobster/ricotta ravioli for the 4 cheese.

Pad Thai Popcorn

I saw this recipe on the Allrecipes channel on Roku and knew I had to try it. WOW!! It's wonderful! The previous reviewer mentioned that it was too spicy, but I think the heat level is really just a matter of preference as I found it to be perfect. I didn't top with cilantro because I wasn't sure how well the fresh cilantro would store on the popcorn, but it was still just absolutely fantastic. My 6 year-old did complain that it made the house smell like wet dog while it was cooking, and she has a point, but I promise- it's well worth the fish sauce-y smell while it's in the oven!
