Honey Oatmeal Bread II

Very enjoyable...it wasn't as light as I'd read in some reviews, however I did follow the suggestions of some other reviewers and use half whole wheat flour and half bread flour. Wonderful texture for sandwiches or toasting. EXCELLENT taste! The honey/oat topping was very good, and not sticky as some had described since I gave it enough time to cool before eating.

Jewish Apple Cake I

First of all, the flavor of this cake was great. Aside from that, after reading the reviews, I don't know what went wrong. Everyone said it was so moist...mine was EXTREMELY dry. I did substitute rum for OJ as many of the reviewers recommended. If I were to make again I think I would most definitely add a second layer of apples, at least, inside the cake...that would probably help some with the moisture issue as well. Glad I made two batches worth, because, as other reviewers have mentioned, one batch would have made an extremely small cake.

Fried Apple Pies

Maybe I'm missing something, but where's the ingredient list for the filling? I made my own with a little flour, brown sugar, cinnamon, nutmeg, and apple. So really, I suppose I'm just reviewing the crust...which was average, worked fine but nothing exceptional. Next time I'll do a donut glaze, powdered sugar didn't really seem like the best fit for a topping, but definitely needs sweetness on the crust...

Amish White Bread

Downeast Maine Pumpkin Bread

SOOOOO yummy!!! I increased all of the spices except for cloves...2 tsp cinnamon, 1 1/2 tsp nutmeg, 1/2 tsp ginger. Made in two 9x5 pans. Took slightly longer to cook, but still turned out great. Next time I think I'll try substituting 1/2 applesauce for some of the oil and mixing in nuts.

Pumpkin Turkey Chili

Sooo good! My husband, right before his second helping, told me this was the "most creative, most delicious" meal I'd ever made. I made more of a soup, added about a cup and a half of chicken broth, some diced jalapenos, ground red pepper, some salt, garlic and onion powders, and a dash of cumin. I didn't have diced tomatoes so I used about a 1/4 of a tomato I had left in the fridge, a little leftover tomato sauce, and an additional half cup of peppers. Also added about a half cup of cheddar cheese to the soup itself. WONDERFUL!

Pumpkin Apple Streusel Muffins

So yummy! Didn't have pumpkin pie spice, used cinnamon, nutmeg, ginger, and cloves...and in a higher quantity than called for, but turned out well. Used streusel topping on some and made a cream cheese icing with a hint of cinnamon for the others.

Clone of a Cinnabon

:-) turned out very well and pretty too. I don't have a bread machine, so I proofed the yeast in the milk, added all ingredients and enough flour to get it to the right consistency (it took a little more than recipe called for), kneaded, and went with the recipe as written from there.

Crab Quiche

My husband and I really enjoyed this. I made it using ingredients that I had around the house, so I substituted two cans of flaked crab meat and yellow onion for the imitation crab and green onion. Added ground red pepper for spice.

Thick Cut-Outs

Excellent cookies with perfect icing. Nice, soft, moist...good! I had to incorporate a little more flour to the dough when it came time to roll it out, it started out way too sticky to work with, but that's the only thing that I changed!

Grilled Fish Tacos with Chipotle-Lime Dressing

Very very good. I didn't have adobo sauce but I used some poblano salsa instead. Substituted cod for tilapia. Baked fish in their marinade in shallow baking dish for about 20 mins at 350 and they turned out perfectly. Will definitely make again!

Chocolate Teddy Bear Cookies

I have read, and reread, this recipe trying to figure out where I went wrong...and I followed it to a "T". It resulted in a crumbly mess that could not be used to make much of anything. I managed to shape the majority of it into small flattened ball-shaped cookies that did have a fudgy quality to them. I would not make again.

Kettle Corn
