Boneless Pork Chop with Shallot Mustard Sauce

I omitted the shallot since I didn't have any and added a little parmesan cheese and garlic to the sauce. Turned out great!

I used half brown sugar in the filling and added a little nutmeg and clove. I left the crust soft enough to press it into the pan rather than rolling it out. Turned out very nicely!

Italian Meatloaf

As written this is a decent recipe, but with a few simple changes it's great! I added 1/2 tsp salt, 1/2 tsp black pepper, 1/2 tsp rosemary, 1 tsp oregano, and 1/2 tsp red pepper flakes. I like my meatloaf with a bit of a glaze on top, so I brushed with ketchup mixed with Italian seasoning. Next time I will omit ketchup from meat mixture entirely and only use it in the topping. My only real complaint is with the texture- very crumbly. Next time, I will omit the bread crumbs and replace with bread and milk. Sounds like a lot of changes, but really the original recipe is pretty much intact. The provolone, fresh basil, and sun-dried tomatoes are right on the mark and I'll definitely be repeating this one!

Asian Bison Short Ribs

We enjoyed this, but I think it would have been better with a more flavorful seasoning mix in with the flour. That being said, very impressed with the bison itself! Lean, tender, and flavorful. I'll definitely be trying out more recipes with it in the future!

Maple Basted Roast Turkey with Cranberry Pan Gravy

This was absolutely wonderful! Made for a family dinner and it went over so well. I'll admit, I skimped on ingredients- I didn't use pure maple syrup, just what I had in the pantry. I also didn't have fresh sage, so I used dried. I kept the flavors the same, but I made the sauce differently than called for in the recipe. I used fresh cranberries and cooked them in the cranberry juice with 1/2 C of OJ, brown sugar, and a little cinnamon. Brought to a boil and cooked the cranberries down. I simmered until the turkey was done, then added the drippings to the cranberry mixture before adding in corn starch slurry. Raves all around, people topped EVERYTHING on their plates with it and kept asking for the recipe.

Classic Smoked Sausage Mac and Cheese

This went over really well! Definitely not for the dieter, but sometimes you just need a rich dish like this one. I do love the idea of adding broccoli or other veggies! The turkey sausage adds a wonderful flavor.

Kale and Quinoa Salad

Really, really enjoyed this one. The flavors are addictive. Light and yummy. Even the leftovers were awesome the next day! I forgot to buy feta and subbed mozzarella because I didn't have anything even close to feta on hand at the last minute. Also used dried cranberries rather than currants.

I made these for company, and they looked just lovely. I personally loved them, most people seemed to enjoy but not rave about them, and my husband didn't like them at all. :-) I loved them enough that I'll give them four stars, though!!

Oven Baked Omelet

Great recipe! Resulted in a rich, creamy egg dish. I was the only one eating so I scaled this down to one serving and baked it in a large ramekin. I did add a little garlic powder, paprika, and black pepper. Next time will also add some cheese to the egg mixture. This would also hold up to other mix-ins, like sausage pieces or veggies. Yum!

This was enjoyable. I used a small amount of liquid smoke, and next time I would definitely add garlic. The recipe doesn't specify, but I used apple cider vinegar. A little molasses would really put this over the top for a crockpot recipe.
