Maple Basted Roast Turkey with Cranberry Pan Gravy

This was absolutely wonderful! Made for a family dinner and it went over so well. I'll admit, I skimped on ingredients- I didn't use pure maple syrup, just what I had in the pantry. I also didn't have fresh sage, so I used dried. I kept the flavors the same, but I made the sauce differently than called for in the recipe. I used fresh cranberries and cooked them in the cranberry juice with 1/2 C of OJ, brown sugar, and a little cinnamon. Brought to a boil and cooked the cranberries down. I simmered until the turkey was done, then added the drippings to the cranberry mixture before adding in corn starch slurry. Raves all around, people topped EVERYTHING on their plates with it and kept asking for the recipe.

Classic Smoked Sausage Mac and Cheese

This went over really well! Definitely not for the dieter, but sometimes you just need a rich dish like this one. I do love the idea of adding broccoli or other veggies! The turkey sausage adds a wonderful flavor.

Kale and Quinoa Salad

Really, really enjoyed this one. The flavors are addictive. Light and yummy. Even the leftovers were awesome the next day! I forgot to buy feta and subbed mozzarella because I didn't have anything even close to feta on hand at the last minute. Also used dried cranberries rather than currants.

Stovetop Green Beans

I made these for company, and they looked just lovely. I personally loved them, most people seemed to enjoy but not rave about them, and my husband didn't like them at all. :-) I loved them enough that I'll give them four stars, though!!

This is AWESOME! I followed the recipe except I used real bacon and I also subbed sour cream for plain yogurt. So wonderfully yummy! Will definitely be making this one again.

Oven Baked Omelet

Great recipe! Resulted in a rich, creamy egg dish. I was the only one eating so I scaled this down to one serving and baked it in a large ramekin. I did add a little garlic powder, paprika, and black pepper. Next time will also add some cheese to the egg mixture. This would also hold up to other mix-ins, like sausage pieces or veggies. Yum!

Barbeque Shredded Beef

This was enjoyable. I used a small amount of liquid smoke, and next time I would definitely add garlic. The recipe doesn't specify, but I used apple cider vinegar. A little molasses would really put this over the top for a crockpot recipe.

Easy Omelet in a Bag

Worked great! I've heard of these before but not tried them. I didn't follow recipe exactly, only the cooking method. I whisked the eggs before adding to bag. Used black pepper, garlic salt, tiny bit of paprika, sliced sausage links, and garden tomatoes. I'm sure it would be great as written, too, lol but I was trying to get this done during my son's nap time and didn't feel like prepping veggies. This would be great for camping, houseguests, or the morning after slumber parties. Worked perfectly, but also LOOKED nice, which is not something I was expecting out of something cooked in a sandwich bag! I used regular, generic sandwich bags and it was fine, no need for pricier freezer bags.

Beef Stir-Fry with Peanut Sauce

Turned out very well! Doubled sauce(cut vinegar in half) and served over basmati rice. I did change up veggies a little- left out bell peppers and mushrooms, julienned carrots. Added cauliflower and sliced anaheim pepper. Seasoned beef with garlic powder and ground black pepper while cooking.

I really expected more spice out of this recipe, it was surprising how mild it wound up being. I used chicken breast rather than a whole chicken. Wouldn't make again, but it wasn't bad.

Chinese Style Low Carb Meatballs

These are really a nice Asian meatball! Even my 7 year old loved them, and she's very picky. They were super liquify, I did add about 1/2 C of crushed pork rinds (lol sounds disgusting, but it's a pretty common bread crumb substitute in low carb recipes...) to bind things together. Cooked in chicken broth with ginger and green onion rather than water.
