Chef John's Remoulade Sauce

Unfortunately we didn't enjoy this at all. The flavor wasn't good. It wasn't like any remoulade I've tried before and was quite a disappointment.

Rainbow Pasta Salad I

Turned out very well, super easy. I wasn't thrilled with the flavor of my dressing so I added red wine vinegar, garlic powder, onion powder, Italian seasoning, and black pepper. Worked very well!

Thin Spaghetti with Garlic, Red Pepper and Olive Oil

Honestly, I felt this was fairly blah as written. I doubled the parmesan, upped the red pepper, added ground black pepper, a little salt, a little onion powder, and a whole diced tomato at the end- perfection with changes! The best part is that this is the PERFECT accompaniment to pretty much any protein out there. This would be great with chicken, fish, beef, etc. Easy and tasty with changes.

Mini Rotini with Carrots and Peas

I subbed Barilla orecchiette for the rotini because I had it on hand- and I really loved how it turned out! I stuck to the spirit of the recipe, but I'd have to say that as-is the recipe is only mediocre and pretty bland (though the pasta itself was great). I ended up adding garlic powder, onion powder, red pepper flakes, a citrus/black pepper blend, and about a cup of Italian cheese blend to make it a little more melty. I also upped the basil. After the changes were made it was great!

(I Can't Believe It's) Mashed Cauliflower

I know a lot of people love using mashed cauliflower as a substitute for potatoes- I am not one of those people. Although the consistency may be close, the flavor is sweeter than potatoes. I can't judge this recipe based on that fact, though- as far as mashed cauliflower recipes go, this one is pretty good. Just know that it won't pass as potatoes. The sautéed onion and garlic were a nice addition.

Herb Rubbed Sirloin Tip Roast

We definitely enjoyed this, though next time I would definitely cut the salt in half. Only change I made was in the cooking- I seared on all sides in cast iron pan with butter before moving to oven for about 20 minutes until medium rare, about 25 minutes.

Pollo Fajitas

Excellent! I was tempted to make more changes than I did, but I'm glad I left it alone for the most part. I used a fairly liberal "dash" of hot sauce and I used sriracha. I was out of lemon juice so I subbed lime. Really good!

Elbows Mac and Cheese with Tuscan Herb Sauce

This was less a mac and cheese and more a goulash. Parmigiano isn't exactly a super-melty cheese, and it is the only cheese that is actually mixed in with the pasta. That being said, it's a terrible mac and cheese but a pretty decent goulash after adding browned ground Johnsonville Italian Sausage! Are there better recipes for goulash out there? Yep, but this one is quick and easy and one that my kids loved! So glad I read the previous review, because the Johnsonville ground Italian sausage totally saved this dish!

Spaghetti with Broccoli Florets and Traditional Sauce

Awesome! I really liked the broccoli added in the last couple of minutes of cooking- and surprisingly, so did my picky daughter who gobbled it up! I added some cherry tomatoes to the sauce and honestly completely forgot to add the parmesan and it was still very good!

Slow Cooked Chipotle Chicken

Very tasty, doubled the chipotle peppers. Cooked on low for a couple of extra hours so that I could get a head start on dinner. To keep it low carb I served over salad- no dressing needed, the sauce does it all!

Broccoli and Ramen Noodle Salad

So good! Omitted peanuts and sunflower seeds, added 1 Tbsp sesame seeds, 1 tsp sriracha, 1/2 tsp ground black pepper, and 1/4 tsp ground ginger. Definitely a keeper!

German Cut-Out Cookies

Nice, soft cookie. I was skeptical about not requiring chill time, but it truly is fine straight from mixing bowl to being rolled out. The flavor was more mild than I was expecting with the brown sugar, which was great for my daughter, but I think personally I would prefer this made with dark brown sugar and the salt should be upped to 1/2 tsp.
