Corned Beef Cheese Ball

We enjoyed this! I upped the nuts to a cup and made 8 personal-size cheese balls. They freeze well to put in lunches later with crackers. Next time I would up the horseradish a smidge and follow Pam's suggestion with the mustard.

Broccoli and Cheddar Nuggets

What a great side for dinner these were! I pulsed the broccoli in a food processor before mixing with other ingredients. They are a little bland by themselves but PERFECT with a dipping sauce. YUM!!

Salmon with Dill

We enjoyed this, though I did switch the recipe up a little while keeping the flavors pretty much the same. I cooked on stovetop rather than baking. I mixed all seasonings into butter and added 1/2 tsp of lemon butter. I smeared the seasoned butter over the flesh-side of the salmon while the skin side was down. After 4 minutes I flipped the salmon to flesh-side down. Flavor was outstanding.

Taco Bell® Seasoning Copycat

Simple seasoning mix that is a fairly accurate recreation of Taco Bell seasoning. Added olive oil and sriracha and made into a marinade for fajita veggies and beef.

Golden Sweet Cornbread

Creamy Taco Roll-Ups

The flavor in these was fine, not really spectacular but ok. My problem was with the consistency- even after chilling for much longer than the time specified it was too goopy. In my opinion the sour cream is unnecessary and waters down the filling too much. Cream cheese alone would have provided a better consistency for the filling.

Oven-Roasted Cauliflower

Zucchini Scallion Frittata Cups

Awesome! What a great way to use up the shredded zucchini in my freezer from the Summer's bounty! My family are not huge zucchini lovers in general, but this is one of those recipes where you get the nutrients from the zucchini without really even noticing it's in the dish- which is great. Flavorful and wonderful texture. I served as a side dish for dinner, but I can definitely see how it would be easy to make these work for breakfast too by playing with the mix-ins a little!

Grilled Lemon Pepper Catfish

Way, WAY over seasoned. The flavor was good (kind of an "everything but the kitchen sink" approach when it comes to seasoning...) but wow. Just way too seasoning for that amount of fish. The cooking method was great and the fish turned out well. Using about 1/3 of the amount of seasoning called for would greatly improve this recipe. Also, I left out the lemon peel and lemon slices and between the lemon pepper and lemon juice this was MORE than lemony enough- I'd recommend leaving them out as I did.

Roasted Eggplant Lasagna

Tasty recipe, sprinkled eggplant slices with Italian Seasoning before roasting. Make sure to watch the eggplant carefully in the oven, my first attempt led to to some charred eggplant slices :-)

Coffee Cake in a Mug

Wow! I've read so many bad reviews of mug cakes that I was skeptical- but I wanted to give it a try. So glad I did! Delicious! I did have to use a full 3 Tbsp of apple sauce to get a batter and it took 2 1/2 minutes to cook (I checked every 20 seconds after the first minute) but it was awesome!! Perfect for making dessert for one.

Carolina Style Low Carb Barbecue Sauce

Oh wow, I'm totally jumping on the 5 star bandwagon with this one. As has been mentioned by many reviewers, one of the most difficult parts of living on a low carb diet is the lack of decent sauces. This one is PERFECT! My husband can't stop raving about it! Only change I made was using black pepper rather than white.

Candied Sweet Potatoes

With a couple of small changes, this is a 5 star recipe. I sent this with my husband for a Thanksgiving meal at work and everyone raved about it and asked for the recipe! I did go with 1/2 C butter and 3/4 C brown sugar. Also, seasoning-wise I used 2 tsp cinnamon, 1/2 tsp nutmeg, 1/4 tsp ginger, and 1/8 tsp ground cloves. Turned out perfectly!
