Baked Italian Meatballs

Nice, easy recipe. I added 1/4 C grated parmesan cheese and one egg to the meat mixture. I formed meatballs with an 1/8 C measuring scoop and ended up with 20 meatballs. I skipped the blender step- really unnecessary.

Creamy Garden Cucumber Salad

The flavor was fairly good, unfortunately the recipe makes a good 10 times more sauce than needed. This was soup with cucumber floating in it. We used a slotted spoon to retrieve the cucumber, but it was just WAY WAY WAY too much dressing...

Loved the way this turned out, subbed ricotta for cottage cheese. Next time will probably sub ground Italian sausage for beef.

Light Oat Bread

Very happy with the results, yummy bread that holds together as a sandwich bread. Adapted due to lack of bread machine- mixed lukewarm water, yeast, and brown sugar. Allowed yeast to bloom, about 5 minutes. Added butter. Whisked together remaining ingredients and added a little at a time to wet ingredients. Allowed to rise until doubled in size. Placed in large loaf pan, allowed to rise another 20 minutes. Baked 30 minutes, topped with melted butter.

Harvest Pumpkin Cupcakes

So good!! Doubled the Pumpkin Pie Spice II recipe from this site for use in this recipe and it was wonderful- definitely a keeper! I ended up making 24 regular cupcakes and 12 mini cupcakes and all were perfectly sized.

Spicy Rapid Roast Chicken

Very good, though there were some issues. The chicken took almost an hour longer to cook than called for. I doubled the seasoning and allowed it to marinate for several hours in the fridge before cooking. I started the chicken out breasts up to crisp the skin, then flipped it to keep the breasts juicy for the rest of cook time. Flavor was great!

Toasty Sweet Coconutty Graham Chex Mix®

As written, this is just fine. As the previous reviewer mentioned, it makes a HUGE batch- I halved the recipe and it filled up 1 1/2 gallon freezer bags. I added 1 tsp of sea salt to the candy mixture before cooking at a little vanilla at the end. Despite bringing the candy to the correct temperature, this was very tacky and unpleasant to chew after it cooled. I decided to throw it back in the oven at 250 like you would with caramel corn, since the candy mixture was very similar. I left it in for 1 hour, stirring every 15 minutes and it turned out perfectly! I allowed it to cool in single layer on wax paper.

Zucchini Ranch Meatloaf

Wonderful recipe! Made minor adjustments- subbed chicken for turkey, sautéed veggies with a little S&P before adding to meat mixture, and just upped the ketchup and worcestershire rather than adding steak sauce. Browned beautifully on top, did not require any sort of glaze, Delicious!

Hot and Salty Spiced Pecans

I was really excited to try this but definitely underwhelmed by the results. I've tried making sweet/spicy nuts before with Splenda with poor results and was hoping this recipe would be different, but it's not. Splenda just doesn't get all syrupy like sugar does in order to coat the nuts and you wind up with a lightly flavored bunch of toasted nuts and a bunch of unmelted Splenda all over the pan that hasn't stuck to them. Won't be making again, but the results are edible this time.

Rainbow Pasta Salad I

Turned out very well, super easy. I wasn't thrilled with the flavor of my dressing so I added red wine vinegar, garlic powder, onion powder, Italian seasoning, and black pepper. Worked very well!

Thin Spaghetti with Garlic, Red Pepper and Olive Oil

Honestly, I felt this was fairly blah as written. I doubled the parmesan, upped the red pepper, added ground black pepper, a little salt, a little onion powder, and a whole diced tomato at the end- perfection with changes! The best part is that this is the PERFECT accompaniment to pretty much any protein out there. This would be great with chicken, fish, beef, etc. Easy and tasty with changes.
