Basil Chicken Ravioli Carbonara

This is the third dish I've tried with the Progresso Recipe Starters and definitely the most impressive without changing the recipe too much. I did add 1/2 tsp salt, 1/2 tsp black pepper, 1/2 tsp paprika, 1/4 tsp red pepper flakes, used freshly cooked crumbled bacon. I did sub lobster/ricotta ravioli for the 4 cheese.

Linguini with Roasted Vegetables and Tomato Basil Chicken Meatballs

We definitely enjoyed this and those meatballs are yummy! I was out of fresh basil so I used dried, omitted asparagus because I'm the only one in the family that will eat it, and used whole wheat fettuccine rather than linguine. Even with those changes this was great!

Loaded Bacon Potato Pizza

Veggie Squares

I had a pretty great happy accident while making these- I was in a hurry and missed the part where it said to bake the dough before adding the toppings. Now, I'm sure this is excellent made the way it is supposed to be, but it is soooo good baked with the toppings on it! It took a little over half an hour in the oven in a jelly roll pan because of all of the toppings on the dough, but it was well worth a little extra baking time! I did halve both the cream cheese and mayo and add a little ranch to the cream cheese mixture. Next time I would DEFINITELY halve the cauliflower- I used a pretty average sized head and I still had a ton left over.

Mom's Mashed Potato Salad

This is a really nice potato salad. Used sweet pickle relish rather than pickles and juice and used russet potatoes because that's what I had on hand. Takes quite a bit of salt and pepper. ;-) After eating a bite with crumbled bacon and olive slices that I added for garnish when taking a picture, I will DEFINITELY be adding both of those to the whole batch next time I make this!

Easy Weeknight Beef Stroganoff

As written, this recipe was a 2 1/2- it took a lot of doctoring. I cut salt to 1/4 tsp and subbed garlic salt, upped garlic to 4 cloves, added 1/2 tsp red pepper flakes, upped black pepper to 1/2 tsp, added 1 tsp parsley, doubled worcestershire, added 1 1/2 tsp garlic powder, 1 1/2 tsp onion powder, 1 1/2 tsp mustard, and 1 crushed cube of beef bouillon. After changes this is a 5 star recipe- I made it for dinner last night and my husband has already polished off all of the leftovers!

Mediterranean Seafood Salad

Made as written before making any changes and I didn't like at all. After changes this is a 3+ star recipe, but still not outstanding. First of all, I thought the textural contrast between the rest of the salad and the cubes of cheddar was a little weird. The flavor wasn't bad, but if I were to make again I'd use shredded cheddar. Way too much mayo, would cut in half next time. I ended up adding 2 tsp Sriracha, 1 tsp Sambal Oelek, 1 tsp black pepper, an additioanal tsp worcestershire sauce, 1/2 tsp garlic salt, and 1/2 tsp parsley.

Stacked Fajita Vegetable Enchilada Casserole

This was so good! I ended up marinating the veggies for about 4 hours. Skipped the nutritional yeast "cheese" step and used a can of condensed cheddar cheese soup instead. EDIT: I just wanted to update this regarding leftovers- I wish I could give them six stars. This dish only gets better the next day, and topped with sour cream it is simply phenomenal!

Spicy Chicken Orecchiette

As written, I did not care for this recipe. I went back and doctored it the next day. Keep in mind that most of the flavor in this dish comes from the pasta sauce as the only seasonings added are garlic and red pepper flakes, so definitely use a quality, flavorful sauce. Also, the time listed in the recipe to cook the veggies is really not enough to combine flavors and cook down the veggies enough to work with the pasta. Reheating the leftovers and adding salt, pepper, oregano, rosemary, basil, and fresh parsley and cooking it down a little really helped.

Batter Buns

Toffee Bar Coffee Cake

The cake deserves 5 stars, as does the topping- the only reason I'm only giving this cake 4 stars is that the cake and the topping don't really go together as well as I'd like. While both are delicious in their own right, I wouldn't necessarily pair them. The cake is amazingly moist and flavorful and would lend itself well to any number of coffee cake toppings. The toffee/peanut topping is delicious but would probably be better mixed into a cookie or used as an ice cream topping. Either way, the flavors are great!

Broccoli Cheese Layer Bake

Our family enjoyed this, but with a few changes. I used only 1 can of each soup. Next time, will omit croutons entirely- we all felt that they were ok, but not something we would want again. The sauce (halved) was perfect with the broccoli.

I'm glad I scaled this recipe back when I tried it, because my son and I really didn't enjoy these. Even with a little vanilla in the batter and served with cinnamon these were pretty bland.

Swiss Steak Italian Style

Followed this basic recipe but had to make some changes. Omitted red wine because I didn't have any available, left out celery because my husband won't eat it, used one red bell pepper and one orange bell pepper because picky husband won't eat green. Served over rotini rather than egg noodles and used and entire onion. This was phenomenal!

Sugar Pretzels

I wish I could give these 4 1/2 stars! My first couple bites weren't anything special, but the subdued flavor builds and I found myself grabbing a second cookie. The lemon is great and although I wouldn't have picked out the black pepper flavor if I didn't know it was in there, it has a great aftertaste. While I was making these I was sure I needed to add something. I considered adding baking powder or vanilla or lemon flavoring- don't do it. They're great as is. The only changes I made were to accidentally add the egg yolk along with the whole egg in the dough (oops, used another egg yolk for the wash) and I didn't have any crystal sugar so I sprinkled with granulated sugar. Great cookie!

Oven Brown Rice with Carrots and Mushrooms

This was an ok side dish, though nothing exceptional unfortunately. I upped the carrots a little. Although not a keeper, it was a nice way to get brown rice and carrots into my daughter's dinner!
