Cheesy Baked Cauliflower

The whole family really enjoyed this dish! Cut into smaller pieces and steamed for 15 minutes. Upped the mayo and mustard to a Tbsp, added about a tsp of garlic powder and 1/4 C shredded cheddar. Combined the mayo, mustard, butter, cheeses, and garlic powder and tossed with pieces of steamed cauliflower prior to baking.

Moist and Savory Stuffing

This was definitely better than simply following directions for a box of stuffing, but still pales in comparison to a real homemade stuffing. The family enjoyed it.

Boilermaker Tailgate Chili

This went over VERY well, my husband couldn't stop eating it. We love spicy foods in our house and this definitely qualifies. If making for people who prefer more mild chili I would cut the chili powder in half but perfect for us as written!

Oatmeal Peanut Butter Cookies III

These were very good- and VERY rich. I think many of the complaints about this recipe not making very many cookies are being made by people who are making the cookies too large. A rounded teaspoonful does not make a super-big cookie, they're on the small side (which is a good thing with the two cookies and super-rich filling!). The dough is very sticky and I found that it was easier just to flatten the cookies with my finger than to use a fork. The best batches that I made were the ones that I took out when they looked just barely done and then I allowed them to sit on the cookie sheet for a couple of minutes before transferring to wire racks. These cookies are definitely worth the extra time and effort!

Spooky Homemade Marshmallows

These were delicious! And so much more delicate than store-bought marshmallows. The key to not losing your mind when cutting these is powdered sugar- lots and lots of powdered sugar. Before cutting the marshmallows, coat the whole block with powdered sugar. Before cutting, coat the knife with powdered sugar and reapply any time the knife starts to stick. Any extra sugar can easily be shaken off of the finished product.

Broccoli Cheese New Potato Bake

As written, this isn't really a stellar recipe- but it would be easy to take it to 5 stars. Add 8 oz of chopped broccoli, 1/2 c shredded cheddar, 2 cloves minced garlic, 1 tsp dill, 1/2 tsp red pepper flakes to the potato and sauce mixture!

Avocado Salad with Orange-Wasabi Glazed Chicken

I, like others, had problems with the glaze. I like others' idea of using orange juice concentrate. I was in a huge hurry after wasting my original glaze attempt and ended up throwing together OJ, red wine, wasabi, and a little corn syrup and molasses. I'm sure it's not exactly the intended result but in a hurry it worked. I also subbed sliced portabella mushrooms for the chicken. The flavors were great!

Thai Buffalo Wings

Though enjoyable, as written this doesn't scream "Thai" or even "Asian" to me- it screams Frank's Red Hot. There just isn't enough Asian flavor to compete. I ended up adding 2 tsp soy sauce, 2 tsp lime juice, upping the Asian sweet chili sauce to 1/4 cup, and sprinkling with cilantro before serving. Yum! Did make with chicken legs rather than wings because I had a whole package to use up :-)

Basil Chicken Ravioli Carbonara

This is the third dish I've tried with the Progresso Recipe Starters and definitely the most impressive without changing the recipe too much. I did add 1/2 tsp salt, 1/2 tsp black pepper, 1/2 tsp paprika, 1/4 tsp red pepper flakes, used freshly cooked crumbled bacon. I did sub lobster/ricotta ravioli for the 4 cheese.

Linguini with Roasted Vegetables and Tomato Basil Chicken Meatballs

We definitely enjoyed this and those meatballs are yummy! I was out of fresh basil so I used dried, omitted asparagus because I'm the only one in the family that will eat it, and used whole wheat fettuccine rather than linguine. Even with those changes this was great!
