Paprika Chicken with Mushrooms

Kris' Lentil Sausage Soup

So good! I realized I only had half of the lentils I needed after I started cooking and subbed uncooked white rice for the other half. I did add a little seasoned salt, but other than that I left it alone.

Meaty 'Cuban Black Bean' Soup

This was fairly bland on it's own- I added chili powder, garlic, onion powder, and cayenne and it turned out fairly decent.

Best Spanish Rice

I really like the cooking method. As written mine was fairly bland, but I would assume if I'd used a more flavorful salsa that would not have been the case. I ended up adding cumin, chili powder, garlic powder, onion powder, and red pepper flakes and it was great!

Cindi's Egg Rolls

These were great! I just grated the cabbage, bell pepper, and onion in the food processor to simplify things. I found that the mix was a little watery to put in the wrappers so I transferred it to a colander to let the extra liquid run out. Great reviews! I used red bell pepper rather than green.

Meatloaf Cupcakes

The meatloaf was EXCELLENT but the sauce was lacking. It was so overly sweet and lacking any balance. I added 1/2 tsp soy sauce, 1/2 tsp roasted garlic powder, 1/4 tsp black pepper, and 1/4 tsp seasoned salt. Next time I'll cut the sugar way back, at least in half if not more. I would recommend using thicker potatoes for this as I tried to be lazy with instant potatoes and they never really set up on top of the "cupcake."

Three Cheese Tortellini with Traditional Sauce and Parmigiano Cheese

This is a nice, easy meal when you're pressed for time. My family really enjoyed it and it came together quickly with store-bought ingredients. I doctored the pasta sauce a little to suit my family's tastes and served with a green salad.

Chicken-Stuffed Mushrooms

These were very good- though I'm glad I followed my instincts and cut way back on the salt. I used 1 TEASPOON Diamond Crystal® Kosher Salt, the called for amount would have made this dish inedible. The recipe makes more than enough filling, even after piling the mushrooms high (and scooping out a sizable amount of the inside of the mushroom as the recipe called for) there was extra. I'm not complaining, though- I could (and did!) eat this stuff with a spoon. I ended up having to bake these for 10 minutes more than the recipe called for in order to get the mushroom to cook, and I probably could have left them in longer. In the future I think I would increase the baking temperature to 400. All of that being said, the filling is REALLY tasty, this is definitely a keeper!

Stir-Fry Chicken and Vegetable Delight

This was a really great recipe! I made some changes to the veggies just based on what I had on hand, adding broccoli and leaving out asparagus and snap peas. The sauce was great and it came together very nicely! This is definitely one that I will be making again!

Nuts for Apples Cookies

As written this is kind of bland cookie. I omitted the raisins and added 1/8 tsp each ground cloves, nutmeg, and ginger. The flavor is great with those additions and the toasted coconut is wonderful. The dough is more of a thick batter that gets dropped on the baking sheet, so I did chill the dough for 30 minutes prior to baking. These are a nice, cakey cookie. I took these to a small gathering and they got very good reviews, though my husband did suggest that they would be better with the addition of butterscotch chips. I lined the baking pan with non-stick pan lining paper and allowed to cool on a metal rack.

Big Soft Ginger Cookies

Outstanding! Perfect flavor, perfect texture. Definite keeper of a recipe. I would definitely chill the dough for at last 30 minutes, maybe an hour before forming into balls. I had one batch that I baked without chilling and they spread too much for my liking.
