Sweet and Sour Chicken II

Reviewed: Jun. 16, 2012
Excellent s&s sauce -- thankfully, not as coyingly sweet as some. Good consistency and easy to make. Definitely a "keeper"

Blueberry Lemon Bread

Reviewed: Apr. 1, 2012
WOW. This is fantastic (although a bit more like cake than bread). The taste and texture are perfect, with the lemon helping to subdue the sweetness a bit. Rather than a breakfast item, I'll probably make as for a snack cake or dessert bread, but make it I will!

Tomato Leek Tarts

Reviewed: Mar. 28, 2011
Exceptional! Extremely simple yet elegant looking enough for guests. We loved it (although, since I didn't have pie crust I had to substitute refrigerated crescent rolls).

Salmon Cakes II

Excellent taste and texture. Easy to make substitutions as well. Really great if you're not a real fan of "straight" salmon but want the health benefits.

Company Cauliflower

Reviewed: Jun. 18, 2010
An excellent recipe for caulifower, although I think something was needed to give it more "pizazz." Very easy to make (you can microwave instead of steam the florets) Had a nice almost creamy texture.

Cranberry Mango Bread

Reviewed: Feb. 24, 2010
Absolutely fantastic. The texture is great, a solid loaf without being heavy or dense. The taste is superb, with no one element overpowering the others. The mango taste is subtle, but delicious. Fairly easy to make. At 259 cals per smallish slice, it's not a dieter's friend, but makes a perfect special treat. I followed the recipe to the letter except for substituting chopped cashews for the walnuts (you have to use what you got, right?)

Cafeteria Carrot Souffle

Reviewed: Feb. 21, 2010
I may be the only person here who never had this at a careteria, but I'm making up for by cooking it myself thanks to this recipe. I cut down a tad on the sugar since I don't care for it being quite that sweet, but otherwise, I follow the recipe to the letter and it's never failed to satisfy. Excellent taste and texture.

Breaded Brussels Sprouts

Reviewed: Feb. 21, 2010
I love Brussels Sprouts but it's actually quite easy to ruin them. This recipe manages to enhance the flavor without overpowering it. We've made this several times already and it has become a favorite.

Acorn Squash with Apple

Reviewed: Feb. 21, 2010
This rates 10 out of 5 stars. It was so good, the two of us ate the whole thing in one sitting (so much for 6 servings!). It is absolutely delicious, with a great texture and appearance. The fact that it's so easy to make.is an added bonus. NOTE: I had to substitute a butternut squash and chopped cashews, but I doubt if it really mattered. It will taste good with just about any winter squash.

Garlic Teriyaki Edamame

Reviewed: Apr. 11, 2009
I overdid the garlic -- my partner LOVED it and I only liked it a lot. Didn't have teriyaki sauce, so added little soy sauce instead. Great change of pace.

Roasted Garlic Cauliflower

Reviewed: Jan. 22, 2009
Personally, I thought this was a bit TOO garlicky but my partner -- the garlic lover -- took a bite, sighed, and said "I'm in heaven." So, I'm giving it 5 stars! Very easy to make.

Hawaiian Chicken II

Reviewed: Jan. 20, 2009
WOW! I was looking for a Hawaiian chicken recipe that didn't require pineapple (I was out!) and I'm so glad I found this one. Absolutely wonderful taste, easy to make, and so tender it melted in my mouth. Everyone loved it and begged me to make it again.

Chicken and Dumplings III

Reviewed: Jan. 10, 2009
Simple but absolutely delicious! Of course, I altered it slightly to make use of a few leftovers, but the basic recipe was the same and I followed the dumpling recipe to the letter. The only thing I did wrong was not leave enough room for the dumplings to rise when I covered the pan (they stuck to the cover!). But that was my fault, not the recipes. I made what I thought would be enough for two meals but had almost NOTHING left over.

Beaker's Vegetable Barley Soup

Reviewed: Apr. 20, 2008
We are soup lovers at my house and my partner's comment about this recipe was that it was "the near perfect soup." I followed the recipe farily closely, using only fresh organic ingredients and omitting the worcestershire sauce and curry powder. I even used white sugar (which is a rariety for me!). I simmered it slightly less than called for (about 1 hr, 10 min) because I prefer less tender veggies. It was absolutely wonderful! It goes directly into my "favorites" file.

Special Brussels Sprouts

Reviewed: Feb. 26, 2008
An exceptional recipe! Tasted great and was fast and easy to make. By necessity, I made some minor changes (fresh not frozen Brussels Sprouts, no almonds, capers instead of pimentos). I'm not normally a fan of the "add a can of soup" recipes, but this one is a winner. The sauce helped balance the sometimes too-strong taste of the sprouts. I'll definitely make this again.

Oregon Salmon Patties

Reviewed: Dec. 8, 2007
Excellent taste and texture. Patties held their shape well and the taste of the salmon wasn't overwhelmed by the other ingredients.
