Microwave Bread-and-Butter Pickles

This is a great recipe. The English cucumbers make nice slices that don't disintigrate so easily. Yummy for sure. I also like pickling spices so next time I am going to try adding 1 teaspoon of pickling spice in a loose tea holder during cooking so I get the flavour without the individual spices floating around in the finished product. Thanks for sharing.

Pasta and Cauliflower

I made this for dinner tonight for my husband and I. We both liked it but not enough to make it again. Changed the recipe a wee bit by adding 1/3 cup of the pasta water, 2 balls of frozen spinach instead of parsley, 3 cloves of fresh garlic in place of the combination. I too roasted the vegetables. It didn't taste bad at all but rather just a personal preference to not have it again. Thanks for the recipe and the experience!

Black Bean and Rice Enchiladas

I'd received some green tomatoes from a neighbor so I made the green tomato salsa on this website and used it in this recipe. Other than that, I followed the recipe to a T, making a most generous sized dinner for 4 of us. This was so good, there was only 1 enchilada left. This recipe is a real keeper. We all loved it! (no-one even missed the meat!) I've been trying to make a meatless meal every week and with this combination of beans and rice, everyone still gets their serving of complete protein! A winner for sure!

Banana Upside-Down Cake

Banana is my favourite cake and this was fantastic! We like a little denser banana cake so next time I will use a Banana Muffin Mix instead of the regular banana cake mix. Oh, so delicious! Thanks for the great recipe!

Homemade Hash Browns

This recipe is great! I used to own a recipe and this is how we made them - except without the peppers as too many people are not fond of fried peppers. The green ones tend to get bitter and the red ones are too sweet for savory potatoes. Also, if you parboil the potatoes the day before and then set them in the fridge to cool and dry off, it makes them oh, so, easy to grate without even peeling. (the peel just slips off while grating) Saves a lot of time and work. Personally, at home, I like to leave the peels on and process them on my largest grating disk of my Cuisinart. The peel is healthy and adds a lot of flavour. Also, I add a teaspoon or two of Old Bay instead of just the salt and pepper. It really knocks it up a notch!
