Thai Ground Chicken Basil

Good, but ours was very salty and rather bland. Rather than follow the recipe, I think I would 'wing it' if I tried it again.

Smashed Potatoes

These are so GOOD and SO easy! The first time I made them, I followed the recipe pretty closely, but when I have made them several times since, I have played around with the herbs togo with my main dish. Always excellent!

Just what I was looking for. We don't get the bulk breakfast sausage here in NZ, plus I was wanting a good pizza topping sausage. This works well.

Honey-Glazed Chinese Chicken

This was very, very good, and quite easy. The skin was nicely browned but not so crispy as to be burned, but it very effectively sealed in the moistue and juice of the chicken. I used the pan juices to make an excellent stir-fried rice.

Exchange Gang Pasta with Shrimp

This was quick and absolutely delicious. My husband commented on it again this morning! I made it with home-made fettucini which made it even better, and I also added some cubed fish, but the sauce was really the star.

Mushroom and Spinach Ravioli with Chive Butter Sauce

This is terrific! It is important t get the pasta very thin, and even, but done the way the author instructs, is no fail! The brown butter compliments this superbly -- I would not be tempted to make the sauce any 'fancier' or different -- it is perfect.

Absolutely delicious and very elegant. Fine dining at home! Next time, I will cook the onions a bit longer -- they were not quite soft enough. Note that I said, 'Next time,' and it will be soon!

This was downright fantastic! Even The Man loved it, and Bessie thought her pal Marley would scoff it down as well. It took me AGES to make, but that's okay because I thoroughly enjoyed the preparation. We enjoyed this outside on the picnic table with white wine!

Homesteader Cornbread

This is great. My husband has been bugging me for 'good' cornbread for ages, and know I've found it! I made it exactly as written the first and it was excellent. The second time I had no corn meal so I subbed polenta, plus I wanted it to be gluten free (earthquake victims asking for GF donations) so I subbed GF baking mix for the flour baking powder and salt -- it was perfect. Husband said it didn't taste any different!
