Refried Beans Without the Refry

amazing! never buying store bought again. I cut the recipe to 2 cups of beans/6 cups water because my slowcooker is a tad smaller than others, and also instead of cumin i used 2/3 tsp of a home made taco seasoning that has cumin in it. also used chicken bullion instead of salt. came out FANTASTIC!!!!

Mexican Stuffed Peppers - a variant of Vegetarian Stuffed Poblano Peppers

fantastic recipe, i changed it up a little bit, for the filling i used 1 lb of beef (can't do veggie meat because its gluten) and 2cups rice, mixed it with some home made taco seasoning and it was out of this world!!! will definitely make again and again!

Herb-Stuffed Red Peppers

changed the recipe slightly, used 8oz of a sauce like salsa instead, chopped up 2 scotch bonnets and mixed that instead of onion (had none) and onion powder instead of all spice and salt free mix instead of basil (again, had none). had to cook the peppers in the remaining rice so they wouldn't fall. it came out amazing, a definite make again, wonderful recipe.

Chicken Piccata II

This was fantastic - my not so picky yet extremely apathetic boyfriend enjoyed it, and asked if I'd make it again (of course with a touch of coaxing). only thing i did different was cut up the chicken pieces (they still came out really juicy) and i substituted chili powder for the paprika. A definite make again.
