Salmon Cakes by Melt(R) Buttery Spread
Even my wife loved it despite the fact that she's not a big fan of fish in general. I followed the recipe except I used panko bread crumbs and a few tablespoons of home made sofrito to spice it up a bit.

Buffalo Chicken Wing Sauce
It definitely is the foundation for superb Buffalo wings!. Just a few comments: I found that using Frank's Red Hot exclusively made the sauce too mild & predictable for my taste. I recommend mixing in a Habanero sauce or other of your preference (~20%). It was an improvement. I realize that this is a Buffalo wing SAUCE recipe but I found that if you boil & simmer the wings for ~10 minutes before putting them in the oven/grill that they are far more tender & blend even better w/this particular sauce. Just be sure to let them rest & dry them before marinating them with just a coating of this sauce. After they baked/grilled add the majority of this sauce & put out the rest for dipping. It will have better impact that way and the chicken will taste fresh!

Tomato Spinach and Bean Burrito
Extremely Delicious Extremely Healthy Extremely Easy to Make Extremely Inexpensive I originally was planning to make veggie lasagna but some how stumbled over this recipe - I'm so glad I did, it's much healthier and quicker to make! I used whole grain wraps to help keep the carbs down. Also, we make our own soffrito so I used some of that. This one is going in the lineup and I'm sure I'll be adding other ingredients to experiement in the future. I bet it'd be great with shrimp...
