Grandma's Corn Chowder
Attention Vegetarians! I made this without the bacon, and it was great. I used a purple onion and vegetable broth in place of the water for more flavor. I used 1 cup 1/2 and 1/2, and one cup So Delicious Coconut Milk.

Harvest Rice Dish
Love this rice dish! Didn't cook it as long as the recipe called for, used vegetable broth, and just tossed whole almonds in at the end. loved this will make it again! I think I will use vegetable broth in the rice next time.

Chicken Pot Pie IX
ATTENTION VEGETARIANS! I am a vegetarian, but I miss chicken pot pie, so here is what I did. I substituted 3 small diced yukon gold potatoes, and two cups cauliflower for the chicken. I roasted all the vegetables in coconut oil with the onion. I added 1/4 cup more celery than called for. I used vegetable broth. I doubled the sauce like others:) I used coconut milk in place of regular dairy milk. I left out the peas because I hate peas SORRY MOM! I used a store bought pie crust, but will try to make my own next time. I gave it 5 stars because I know the original would be a 5 because the sauce and spice is what I really think makes this pot pie! Yum!!
